My cousin and I were excited to attend Roux. We had walked past the restaurant on several occasions and last night we finally found the right occasion to walk in. Upon entering, the evening seemed promising. [[HIGHLIGHT]]The ambiance was moody and intimate, the host was astute and welcoming, and the tile work was beautiful.[[ENDHIGHLIGHT]] As the night wore on, however, things slowly stopped adding up to a delicious dining experience. The first thing was the waitress. Apparently the host was also the waitress... and the bartender... and the busser - not that you would know it because of how attentive she was, but shortly after getting our small plates I mentioned to my cousin that I hadn't seen any other person working in the restaurant. While I knew that couldn't be true, I was facing into the restaurant and I only ever saw two other men casually saunter out from the kitchen, look around, and saunter back. No one looked excited to be working there, but the two men who appeared from the kitchen gave me no sense of urgency or purpose, only just that they were extremely bored. The second thing that didn't add up was the Farm to Table narrative. As our Swiss Army Server (thanks for that one, Dimitri) was opening up our wine and recommending dishes, I asked where the farm was located. Apparently, the farm is located in California, and this "farm" owns several other "Farm to Table" restaurants... hmmm... When it came to ordering, we were instructed to order all of our dishes upfront, but that they would come out in courses... While things rolled out like that, the way we were required to order and the way our food came out gave the distinct impression that they weren't dishes being made to order - only delivered to the table in such a way as to give the illusion that they were. Dishes you would expect to come out hot came out room temperature. Dishes you would expect to come out chilled came out room temperature. When each course came out they came out one dish at a time, but one immediately after another... almost like they had been sitting on a table in the kitchen just waiting for anyone to order them. The final, and perhaps most telling thing that didn't add up, was the distinct lack of any smell coming from the kitchen - let alone the restaurant. Only after we left the establishment did we realize how fresh and clean the air smelled. As a home chef, I understand that not every dish calls for garlic and onion, but what about salt? What about pepper? What about any kind of butter or seasoning or even a maillard reaction? In this day and age of salted dark chocolate caramels and umami, attempting any dish completely void of salt is a brave choice, but it's certainly not a heroic one. I mean, we're talking about a restaurant that cooks and serves a filleted trout with its head still attached, eyes buggin' out, bones in, the works! How are we not smelling the fish when it hits the table‽ Have you ever plugged your nose while you tasted something?... Exactly... To finally wrap this review up - the reason why I'm giving this experience 1 star is because the service was attentive, the beet salad was good, and the rest made us laugh uncontrollably at how bad it was. The potato pave was a fun gimmick, and the brussel sprouts were crispy but the pork tenderloin and the fish had no smell, no recordable temperature, and the only flavor I could identify was... dusty dirty mop water? I just don't know... we even tried to load up bites of pork and fish with the polenta, the sautéd and pickled greens, and the "sauces", but nothing helped... if anything, it made things taste worse... truly, I've never been closer to becoming a vegan. People will say we should've just sent back the food, but I've worked in food and bar service. How does requiring that level of service from your waitress for your patrons even begin to make up for a business model whose only job is to make food taste good? After all, I can get that level of service from McDonalds, even though I've never had an experience that required it from them... If you do decide to go to Roux for your next meal, maybe make it breakfast... from my experience, breakfast is a hard meal to mess up. read more

I was so pleasantly surprised with Roux, it's been a very long time since I've found a well done brunch spot in SLC and this is exactly what I've been hoping to find more of. Very well done food, potatoes and classic Benedict were good, gnocchi was great, though I feel like there could be more dynamic in the flavors -the sage really made the dish beautiful and we really enjoyed it. [[HIGHLIGHT]]Ambiance is perfect, lots of thought put into it and had one of our favorite waitresses in awhile so service was above and beyond.[[ENDHIGHLIGHT]] I'm looking forward to coming back and trying dinner. Mostly great food, but heavy-handed on the salt. We enjoyed our dinner at Roux last night. Our waitress, Alex, was an absolute treat from the moment we arrived-- seriously a gem of a human being. Our group of 6 attempted to order everything on the small menu and almost succeeded. Standout dishes were the potato pavé, trout ceviche, apple pecan salad, and hanger steak. I tried everything except for the chicken and pappardelle pasta. My trout entree was nice, but the farro that came on top of it was extremely salty. I also wasn't super impressed with the presentation. While we're on the topic of salt, my wife had the mushroom agnolotti, which may have been the saltiest dish I've tried in years. It was nearly inedible. I told Alex how salty these dishes were and she was apologetic and said she would relay the message to the kitchen. I hope they were receptive to the feedback. We all thought the cocktails were good, along with the bread & butter. The menu is delightfully as the space and the service is attentive but not annoying. We tried the funeral potato pave, a unique take on a classic Utah dish. Brussels sprouts were delicious and a must. For the mains we had, roasted chicken, duck gnocchi and the pappardelle. All tasty and different enough from what you think, that you should try it. Dessert was a cheesecake and butterscotch pudding. Definitely want to try their brunch menu, so I will be back. Moist chicken, slightly crispy exterior, and the accompanying veggies were perfect. Hanger steak, was great, and the Demi glaze I could drink. This was hands down the best dinner I've ever had in Salt Lake. If I could give Roux more than 5 stars, I would! We came on a Friday night and we couldn't believe this place wasn't packed with people with a line out the door. Get your butts to Roux people! The bread and butter came out quickly and was absolutely delicious. We started with the funeral potato pave with a crispy potato on a bed of the most delicious sauce I've ever had. So delicious we begged for the recipe and ordered a second one. My partner got the burger and said it was the best burger he's ever had in his life. I got the mushroom agnolotti and it was incredible. We ordered extra bread to dip in our leftover cheese sauce. Let me tell you... This food was some of the best food I've had in a very long time. I am a picky eater and when I sat down and saw this menu, I was super worried that I was not going to find anything to eat. There were spices that I didn't know, Sauces that I didn't know. But oh my goodness the food was so tasty. There were so many layers of seasoning. I had the chicken dish and the chicken was cooked to perfection. We came to enjoy my wife's birthday. She loves Roux because of its fresh ingredients and farm-to-fork nature. This trip didn't disappoint. The focaccia is always incredible. Made in house, you'll want to keep eating more and more of it. But save room for appetizers! I despise beats, but my wife made me try hers and I can honestly say I'm a beet-liever of their version which also had goat cheese. I enjoyed the pork belly that had a perfect crust to it and some Italian green sauce that was out of this world. For the entree I tried the Gnocchi. It was like a Time Machine of nostalgia that brought me back to my days in Uruguay. The sauce was reminiscent and the potato based dough of the pasta was nice. Reservations are recommended, especially on the weekends, since it's a very small place. They've turned a darling old house into a restaurant and the intimate feeling adds to its charm. Service is welcoming and friendly, but not over the top or intrusive. The food was delicious and flavorful. I appreciate that they could make a modification for me and make a dish without cheese-often chefs take offense to that, and I apologize. But I didn't feel bad making this request here. My favorite part of the meal may have been the bread, surprisingly. I'm not certain what it was, but it was delectable. Bread is complementary, and I was stoked because I love bread. We really loved our appetizers--the braised pork belly with maple poached pear ($16) and the funeral potato pave ($9). For our main courses, I enjoyed my pasta dish--the local mushroom agnolotti ($24). It was super pricey for the small portion. My husband was not a fan of the hanger steak ($38). I tried a bite and it was overly salty and tasted burnt. Being the trooper he is, he finished it anyway and we didn't complain. All the cocktails were good, but nothing to write home about. I'm not sure if I would come back. The place felt super cramped, the lighting was bright, the music was odd, and the dining room was super loud as it filled up. The treacherous parking lot has four spaces (we snagged one, being the second table to arrive at 5 p.m.), but plenty of street parking. I wouldn't recommend it for a romantic date night. This has gotta be one of the most underrated brunch spots in Utah. We had the roux breakfast which had home fries, eggs, sausage, and a biscuit. It's extremely rich and wonderful. Highly recommend. My entree was a fresh mushroom pasta dish with a garlic cream sauce and the first bite was fantastic. Knocked my socks off. It also was so rich I only had about 5 bites before I had to stop to save room for dessert. My partner got the sausage pasta dish which was excellent but I liked mine more. Everything was super fresh. We ordered a custard like dessert with a string chai flavor that was very smooth and also very rich. It was also fantastic but one of the best parts of the night was getting the bill. Let me tell you this great food was incredibly reasonably priced. Excited to try Roux but left disappointed. I miss Farm to Table restaurants from my home city, so was excited to try Roux. As we walked in, several people saw us but no one moved to welcome us or seat us. It was as awkward that no one acknowledged our arrival in such a small space. The beer offerings could also use some improvement. If Beer Advocate rates an offering less than 85, any folks who like a good beer aren't biting. Started with the Brussels Sprouts, but found them incredibly oily and too spicy. The water could t be refilled fast enough. If you don't like vegetables and want a vegetable then you'd like these. As a vegetable lover, I wanted some taste of sprout and green left! We also had the trout and agnolotti. The mushroom agnolotti was warm and comforting, rich and good depth - would order again. The trout , not so much. So salty it was hard to eat though I enjoyed the slaw. It is a whole fish but so many bones near the head, I would have preferred just the body. Overall meh. This is my second time coming to Roux and I loved my first time but this second go was even better. The Harissa Brussels Sprouts were cooked perfectly. Crisped but not charred. Insane flavor depth with more umami than I expected and the perfect spice and saltiness. The Hanger Steak was perfectly flavored and cooked. Not too spicy. Not too saucey. The sauce almost had a japanese fusion with chimichurri vibe. The tahini broccolini had a buttery and almost cheesy like crust coating that gave it the perfect bite every time. The risotto was well cooked, the sage had a lovely crisped texture and bite and the balsamic reduction gave it just the right amount of acid. It had a zesty refreshing flavor and paired great with our white wine. Also bonus points as someone who is gluten free and celiac they took the care to change their gloves when cooking and were accommodating with menu options and changes they could offer! It was beautiful inside and the wait staff was extremely polite and sweet. I didn't like that I was cold inside (for me...) and I wasn't offered any refills on my soft drink. Stopped in for brunch. My partner enjoyed the Eggs Benedict and found it tasty and hot. I had the Roux Breakfast with a "flaky" biscuit and gravy. The gravy was quite good, flavorful and nice bits of sausage. The biscuit was small, square, and not flaky, it was crunchy and hard and tasted burned. The bacon was also over cooked, and was leathery rather than crispy. The eggs were cooked well. The hostess was friendly, but the server was disinterested, giving me an empty salt shaker when I asked for salt. Visted Roux for the first time last night for my boyfriend's birthday with high expectations as the menu looked great online (they had a different menu upon getting there, website hadn't been updated but no big deal) but I felt a little underwhelmed. (Busy Friday night so also not a huge deal) We got a drink while we waited, I got the Caramel Apple-tini and my boyfriend ordered the Maple & Sage Elixir. Mine definitely tasted like a caramel apple! Personally not my favorite but good for anyone who likes really sweet drinks and my date loved his. We started with the Funeral Potato Pave and really enjoyed it. Our entrees is where we started to feel disappointed. After almost a 45 minute wait, we got the Hanger Steak & The Tonkatsu Pork Loin. My steak was cold and the flavor wasn't good enough for me to ask for it to be reheated. My boyfriend's pork loin had a better flavor profile but was incredibly dry. I'd say both of them are skippable. We finished with the brownie and ice cream, which my bf liked, and our server was sweet enough to add a candle for his birthday. Would love to give this place the 5 stars its food and decor/ambiance clearly deserves. Went for Sunday brunch, and of the 15 tables, 2 were taken. There was one person acting as host, server, busser, bartender etc. everything but cooking. It took over 20+ min to be seated in the almost empty restaurant. As you can imagine, every part of ordering took similar lengths of time, despite the effort of our Swiss army Server. Would love to visit again, but honestly doesn't feel like this place will be around much longer. We are very active in the restaurant/bar scene here and can't think of worse cocktails we have ever had, anywhere. The food honestly kicks @ss - the focaccia was phenomenal, the pappardelle pasta (very rich), the katsu pork loin, and the funeral potatoes were all awesome. Original review: Putting this review nere to get managements attention because I think this place has a lot of potential. The food was actually great, aside from the fact that it came out a bit cold and on a cold plate, which makes a steak subpar very quickly, among the other dishes. We ordered old fashioneds and they were the worst cocktails either of us had ever had, so we got a bottle of wine to share afterward. The cocktails were vaguely distinct from water - non exaggeration. Our server also didn't know we were in their section so nobody came to our table for 25 minutes after we were seated. I had to proactively flag down another server walking past to place our drink order. If they can get a bit more organized, hire an actual bar tender, and figure out how to get hot food out on hot plates, this place can fill a unique void in the Utah food read more
