I really wanted some charred beef on this day, so I ran over the river to Rustic Cuts. It is a very clean and well stocked butcher shop. I got some short ribs and some fajita meat. Both were outstanding. The 2 young men working behind the counter were attentive and answered all my questions about the meat I was buying. read more

Went here for the first time this past weekend to pick up a steak and it was a great experience. I've been hearing about this place for a while and I've wanted to check it out. You walk into a row of coolers that contain a lot of various meats and to the left is the counter. A great view and setup. All of the staff is extremely nice and the manager?/co-owner?/employee told me the story of the place and its pretty cool. There's a farm between Underwood and Crescent.....ask them and they'll tell you. Cool, little story. The Ribeye's are dry-aged for 40 days(?) and the rest of their steaks are dry-aged for at least 14 days. The meat looked great and it tasted even better. I got a NY Strip, Heavy D Steak, some wieners, brats, and hot dog buns. The total was about $25. You pay somewhat of a premium but it's local, they butcher it at the shop, and the meat is a step above the rest IMO. All in all this was a great experience and I will definitely be going back. read more

I stopped in on a Saturday afternoon and was glad to see the place was busy. I like the fact they are run by local farmers, I like the fact they use "rotational grazing" techniques, I like the fact they use an AWA approved processor, I really enjoyed my ribeyes. I will be back. I'm giving them a 4 star review because I had hoped to be offered the choice of grass finished beef. It's the next right step, I think it matters. We stopped here for the first time today. The place was very clean and employees very friendly and helpful. We got some ribeye steaks and a pork steak. Got home and couldn't wait to get the steaks ready for the table. The meat looked so good! When we started eating we looked at each other to see if we were both getting the same experience. The meat looked good and perfectly cooked..but it had no taste and was tough. I didn't notice if they had it posted that it was grass fed but it had to have been. This darn sure wasn't prime or choice. If I butchered this animal I would have ground it all into burger. It was priced like it was prime. I would not recommend this to anyone. This should be well advertised if it is grass fed and not try to pass as prime. read more

The world is truly a better place today. I found a wonderful butcher shop in Council Bluffs! Now for most this isn't much of a deal. But for a number of years we haven't had one to speak of. Granted we've got the local supermarket meat departments, but nothing like Rustic Cuts. Once you open the door this place is a carnivores' dream. The main counter with all the prime beauties are at the end next to the check out. And the cuts are absolutely amazing! The meat is raised locally and the website lets you meet the people that are responsible. And what a wonderful display. Also lunch meats, brats homemade sausages and the list goes on and on. For me a tomahawk ribeye for the grill and I made sure to get a photo of this. The place is very easy to find and well marked. And on a Sunday, it was pretty busy. The service is prompt and the staff very knowledgeable about the cuts and origin of the beef. I really recommend going in and just look for a few. They don't mind and are willing to help with your request. Finally we have a butcher shop back in town and it's gonna please a lot of people for sure. Good on you guys! Oh yeah the ribeye was fantastic! And now they have a super loyalty points program for gear and stuff! read more
