There is a terrific surprise in the back of The Niwot Market, a tremendous suchi bar that takes it up another level on Sundays when they feature Chef Tsukasa's amazing ramen dishes. BTW, he is an Osaka native. I've visited many times, topped off by a Boulder neighbor years ago, and my most recent visit held serve and then some with fantastic food! Decor works, as Tsukasa-san has decorated his area with Japanese items, and the menu is prominently displayed. There are numerous tables, and beverages are obtained within the great market. You can also eat outside on picnic tables! Plenty of parking in their big lot. Their suchi is fabulous, but the ramen is elite, and it Isn't replicated in this region. A true hidden gem. The fish is always fresh. The rice is always perfect. It's made fresh from the chef who clearly loves what he's does. The sushi bar is inside the Niwot Market. Firstly, I've been coming here for years. I first learned of it from my father who has been married to a Japanese woman for over 25 years. It is good sushi/ sashimi; great donburi bowls, potstickers and the miso soup is good too. The ramen is good -but the eggs can be a bit off and the meat tastes old and cheap. However, today my wife and I went here to eat, my wife asked for no green onions on her salmon role and the owner/ sushi chef (who is usually fairly pleasant but a bit curt and reticent) got bent out of shape and went into a rant about how he was the chef and that's how he made it and that she would/ should like it. We politely told him that she just doesn't like raw onions and wouldn't eat it and he basically refused to make it the way she wanted (which he has done in the past) and gave us a nasty attitude. I basically said "never mind" just cancel the order and we walked away. He lost an over $40 order and we walked away feeling weird and confused as to why somebody would want to dictate to customers what they liked? I'm not sure I'll ever go here again. It is a weird ambiance anyway (tucked into the back of a little market) but not unlike places in Japan or Little Tokyo in LA. However the arrogant attitude of the chef (who makes good food) and the increase in prices post-pandemic, leaves a lot to be desired. read more

DELICIOUS!!!! Found a treasure in Niwot!! I almost decided not writing this review so I can keep this place my treasure and not many people will know about it lol j/k. First off, this place is perfect if u have time to wait, not in a super rush and expect food will come out so quickly. They have only two people doing everything...taking orders on phone for takeouts and dine in. We were there and were patient about the wait no problems...it was so worth it. The food we ordered were soooo good and delicious. The people were so friendly and really welcoming. I m coming back for sure. Originally I didn't think this place will be a destination where we have to make plans to go there but I changed my mind. I will make a trip just for this place. Couldn't believe it s a hidden spot in a small town. We sat at the bar and really enjoyed watching them making sushi and we had great conversations. Moving from NY after living there for 30 years, I crave for good real Japanese food that I grew up with in Tokyo in Boulder. So many fusion or what-so-ever japanese food with blinding color combinations and idiotic sauce on sushi. Fusion is a euphemism for "we have no education or experience to cook any food." Some try hard to be authentic. But when you ask for condiments that have to be accompanied for a certain dish, they have no idea what I am talking about. IMy colleague told me about it and asked how a Japanese would think about this place. I am so happy to find Sachi Sushi. They have a maki on the menu! It is a staple in sushi and most Japanese children start sushi experience with it. You do not see it most places. You can ask for it, and if sushi chef has a bit of education in sushi instead of some odd education how to teach sushi to swim in two different sauces, s/he can make it for you. If they say "what is it," I run away. Also we love broiled fish especially sanma (pike). It is hard to cook inside house as it has so much good healthy oil that it produces so much smoke. I know it's time to invest in an electric smokeless roaster. So we really appreciate Sachi Sushi to serve broiled fish in the very authentic way. So far I only found 3 Japanese restaurants in the Boulder area to serve bristled fish. So thank you, Sachi Sushi! Since I left Japan, I have. It had hako sushi. There was one place in New York that served one until it was bought and went down into the drain. So it was great to have it. Great sushi and Japanese curry at a very affordable price. Customer beware. This concerns the Saturday/Sunday Ramen. If you noticed a rotting smell coming from your "freshly made" bowl of ramen you are not wrong. They constantly serve spoiled pork belly and rotten "marinated eggs". They will try telling you it's the smell of the pork bone broth. that poor excuse doesn't get the rotten flavor out of my mouth. Conveniently located inside Niwot's farmer market, serving great Japanese food, not only sushi, they have few lunch special options, homemade ramen on Sundays only, baked salmon, some other kinds of fish, beef, chicken, you name it! The décor is very simple yet super clean! Imagine a farmers market selling local produce, freezers loaded with organic goods, teas, and a sushi bar on the right side, next to the deli; few sushi bar seats, and few tables next to the sushi bar, and close enough the another grocery section. Sushi man takes pride in everything served; he is the sushi man, cashier, waiter, all in one person; he does had a helper though, but he is the man that runs the show. I had the house chirashi, it was super good! I would compare it to Sushi Den here in Denver; rice was super good with subtle flavors, pieces of sweet gourd and few sesame seeds, good flavor. Had to update on 4.13.2013 ...We've been back many, MANY times since the original review was written. Unfortunately, this time, the size of the sashimi on the Chirashi had noticeably SHRUNK. It was a bit insulting. (See photo!) The Tuna was so thin (and less than 1" square!) that you could literally see through it. The salmon was so tiny that THREE pieces were the same size of what used to be ONE piece. The Eel was dried up and shriveled and not even hot, it had the texture of Salmon Skin but none of the flavor. Just a very disappointing visit, one which will most likely result in us just NOT making the hour drive again any time soon. On the plus side (and hence just docking one star from a previously 5-star review): Tsukasa-San is still so friendly and accommodating. Just a really nice man. The Philly Roll was still awesome, and Hubby's Kamameshi-Fu (Baked Salmon bowl with Smelt Roe and Teriyaki Sauce) still hit the spot for him. But for me... I'm so sad that my beloved Chirashi has fallen. Previous Review: Went. Had the Chirashi. It was awesome. As promised... I've come to expect nothing less from my Yelpers! The shredded omelette and seaweed on the rice were great textural accompaniment, the fishies were all fresh and succulent. I love me some raw squid. The rice was perfectly seasoned and cooked. The box is deceptively small-looking, but I left full! The friend had: The (now) infamous Philly Roll with the deeeeeeelishous whipped cream cheese (Nom. Nom.) and the Korean Beef Rice Bowl. Both were polished off. Other friend had Teriyaki Chicken Rice Bowl, a true steal at $6-ish, and flavored with sweet, sticky teriyaki. It's a heck of a drive, but Niwot is a picturesque little town, and if you take the back roads to get there, it's a pretty drive, too. Also, the Niwot Farmers Market, where this Sushi Bar is nestled, is a cute "General-Store" feeling place where I could drop a few bucks on goodies, too! We heard good things about their ramen. So, we drove there today and ordered Shoyu Ramen and Spicy Miso Ramen. I really didn't mind that we were served our food 15 minutes after we ordered. Or that we were not offered any water. Sadly, when we finally tasted our ramen, we were very disappointed. The hard boiled eggs had greenish yolks and whites that were a sickly gray. The pork slices were dry and tasted old. The broth tasted old too. We usually take our leftovers to go, as we don't like wasting food. But we left our bowls half-eaten. Wow! My second ramen experience was a doozy. Thank goodness for knowledgeable Asian friends and their chef buddies. The anticipation was so high we arrived 45 minutes early. Regardless, the ramen was well worth the wait. I got the spicy miso version. The colors of the accompanying vegetables, meat, and egg looked so good and tasted better. The layers of flavor left me wanting more. I believe I drained every last bit of the broth too. I heartily recommend this place. I have had heard many good things about this little hole-in-the-wall sushi place tucked inside a local market. Not recently though, so I thought it time to go check it out. It really is a horrible looking place, that just can't be denied. It has the feel of a decrepit 1960s diner. This is NOT the place for a first date. The service is crummy. I sat down and no one waited on me. I went to the counter and was served by a grumpy Asian woman. I ordered a miso and Chirashi. The other reviews are correct, they take a very long time to get your food. The miso took 4 min, but I'm still waiting in the sashimi 20 min later. The miso is ok. Full-bodied, but lacking a freshness to it. It's been boiling a long time. My sashimi finally arrived, 28 min in an empty restaurant. First impression, unimpressed. Just look at the photos. The fish is paper thin, dry, as decrepit as the decor. I ate the shrimp, then I backed up. There's no way I'm eating this. I travel a lot, I can't get sick, and I can't take the very clear risk in this bowl. This is without doubt the most pathetic excuse for Japanese cuisine I have ever encountered. The packaged sushi at Trader Joes looks fresher than this. So I just did something I've never done. I left it all there, got up, told them they should be ashamed for serving this, and walked out. Now I see why I'm not hearing about this place anymore. I should have tried it years ago when everyone was raving about it. It's a common trick amongst sushi joints though, put on a big grand display for a while after opening, and then cut every corner and take in the $$$ until your reputation collapses. Then went to the vegetarian roll and lemme tell you: the house made sun dried tomatoes in it are really something! I've had a bunch of seafood rolls; nothing disappoints! There's some kind of worm-hole in Niwot Colorado... You drive to this small town. Go into a grocery store. Walk through the aisles of chips and peanut butter and whatever to the back corner, where there are some tables and a sushi counter. Ask the man for Ramen (choose between Soy, Salt, and Miso flavors). And a couple of minutes later a steaming bowl of surprisingly good, authentic Tonkotsu Ramen shows up!! This is so bizarre! It's like something out of Time Bandits or Being John Malkovich or something! I would love to say that I discovered this myself, but a friend tipped me off to it: On Sunday afternoons, and ONLY on Sunday afternoons, you can get Ramen at Sachi Sushi in Niwot Co!! I foresee many rides on the BOLT bus in the near future... Hidden in the corner of a market in Niwot is a sushi place I would never have found, let alone heard of, if it weren't for Yelp and a few non-Yelping foodie friends. From the raves, I decided it was worth the bus trip and walk to check it out. And right they were, and right I was to make the trek. Fantastic, fresh sushi handmade and served by the nicest man imaginable, in a comfy corner of a good-smelling (weird, but that's the first thing I noticed) grocery. We ordered a Philadelphia roll, the chirashi bowl, and one of the special entrees of the day, which was Osaka style mackerel sushi with kombu. Dan tried to order a BBQ pork bun as well, but this was gently recommended against by the sushi chef, who predicted that we would be too full to eat any more. His prediction was correct. The chirashi bowl was simply stuffed with generous slices of fish. From what I remember, there was shake, maguro, tako, ebi, saba, unagi, hamachi, hirame, and seared shiromaguro. They were all fresh-tasting, but the standouts were the unagi and the hamachi. I love when hamachi is both buttery-feeling and citrusy-tasting! The guy knew what he was doing when he placed the hamachi near the lemon garnish. As for the unagi, I'm not really a big unagi fan, but if everyone made it like this, I would constantly be scarfing caterpillar rolls. Underneath the fish lay mildly seasoned rice covered with thinly sliced tamago, seaweed, and something that we identified (no guarantees on the accuracy, though!) as gourd. Yum. The Philadelphia roll was more impressive than I thought one was capable of being, with right-at-the-right-ripeness avocado, fresh salmon, and a light whipped cream cheese that didn't overwhelm the dish. As for the special, it was by far the most alien to our boring American taste buds (I loved it, Dan didn't... but then, I am crazy for mackerel). It was like a square pat of rice bisected by spicy seaweed and topped by tiny slices of mackerel formed into a square shape and finished off with a slice of sweet-sauced kombu. It was a pretty crazy taste. Mackerel is aggressively fishy, then you have two different spices, and honeyed thick seaweed on top of that. It took me a few chews before I decided that I was a fan. When we returned to the counter to pay, the sushi chef was extremely interested to know how we liked our meal. He asked about everything. He wanted to know which our favorite was. And asked specifically after how we liked the mackerel. (Apparently he was doubtful!) Wanna know how much all this sushi which filled us both to the brim cost? $28. Oh yes, $28. As we were leaving I jokingly begged the sushi chef to move his bar to Boulder. At least, I tried to make it seem jokingly. It wasn't. If his bar were in Boulder, I'd be helpless to its pull. I'd be wandering in at all times of the day and week. A true 5-star-er. read more

I have finally found my holy grail... authentic Japanese ramen in Colorado. That's right. A hole in the wall sushi bar in the middle of nowhere-Niwot, ramen is served... on Sundays only. You can't find it on google. Two months ago, you couldn't even type 'ramen' into the yelp search to find it. The place doesn't have a website or a phone number. As most authentic holy grails are, I had to travel the long road of meeting someone who introduced me to a chef who in an off comment one day, tell me his 'friend' chefs in Niwot and makes honest-to-goodness ramen on Sundays only. So we followed our leads and ventured into the Niwot market today hoping against all odds. Damn, it was a good bowl of ramen. I got the Shoyu (soy sauce) flavor in a Tonkatsu (pork) base broth. Oh my god. My search has ended. Noodles, perfect. Soup, creamy and full of flavor. Three pieces of chasu, two pieces of seaweed. The egg was slightly overcooked, not soft in the center. But who's distracted by the egg? Not me. Did I mention the soup??? But. It seems like the secret's gotten out. All the Asians in a 20 mile radius of Niwot were there, packed into the corner sushi bar like rats clamoring for cheese. I don't think I've seen so many Asians in one spot at once since jostling around the street in Hong Kong. Asian myself, it felt like I just found the mothership. So it took forever to get our food. The chef became completely overwhelmed as people flocked in groups of 5 and 10. The bowls came 2 at a time in 10 minute intervals and chef would go around shouting the name of the bowl and whoever raised their hand fastest got it. An hour and half later, we were still waiting for our food as we watched people who came later than us (but were sitting closer to the kitchen) got our food. Guess that's all part of the experience, right? Nobody expects the holy grail to come without some hardships. So there it is. It's true. Niwot, Colorado has real ramen. Served on Sundays only. Bring a book, or really good company. Because it's worth the wait. Big smiles all around. EDIT: We have been back several times and it's never been as busy/ chaotic as the first time. Wow, searching Yelp for hidden gems does work! I've lived on the outskirts of Niwot for three years. I share a love of sushi with several co-workers. None of us had ever heard of Sachi Sushi. Never in my wildest dreams did I expect to find decent sushi in a small grocer in Niwot. But, it's true! Sachi Sushi comes darn close to rivaling Sushi Den and is way cheaper. Of course, you trade hanging out with the trendy people in a cool urban brick loft for the humble view of soda coolers and grocery store muzak. So, I recommend you cozy up to the tiny sushi bar. I watched and attempted to memorize how to fillet and de-bone a whole salmon while sampling tuna, spicy yellowtail and, of course, salmon. Get there early, though. They close at 7pm. My thanks to fellow Yelpers for all the great reviews; my wife and I took your recommendations and stopped into the Niwot Market on Sunday for some unbelievable Ramen. I won't re-hash what has been so adequately described elsewhere. It is definitely an unexpected location for such extraordinary food. Luckily, it is a mere 10 minutes from our house (cue maniacal laughter)! On to the Ramen. I would recommend the spicy Miso with Pork. We only had to wait about 15 minutes for our food (we got there early) and it was piping hot. We probably should have waited a few minutes for the flavors to mingle, but the expectation was too great. I dove right in. At first taste, the broth seemed a bit bland; the noodles so-so. Huh? Before disappointment crept in, I tasted a thin slice of pork...oh...it melted in my mouth. After that, something magical happened that I still can't explain. With every spoonful, the Ramen got better, and better, and better. By the time I could see the bottom of the bowl, I was under some kind of spell. Was that a tear in my eye? Now I understand. I can't really explain it. But I understand. Before writing this review, I thought I should try the sushi as well, so we stopped in last night for dinner. We started with miso soup, which was pretty good. Then we had a sampling of 5 different rolls, all pretty basic, most costing $5.00 each. I must say, they were good, but not stellar. The owner/sushi chef is very friendly, patient, and attentive, to the extent that he can be when the place gets busy. When all this is submitted to my Rating Calculator, I come up with 5 stars. The Ramen is incredible; the sushi good, but not great; the staff friendly, but overworked; the ambiance a sushi bar & a couple of tables in the back of a grocery store. It's a long drive to Niwot from where we live but it is SO worth it. The Miso soup and Kamameshi-fu salmon bowl with teriyaki was just amazing. I DEVOURED it and not a single grain of rice remained. Tsukasa-san is an amazing cook and he is also very nice and humble. Sachi Sushi is hidden in the back corner of the Niwot Market. Truly a hidden gem for fresh Asian food. Seating is limited and there's a high school nearby so keep that in mind during weekday lunch but there's usually only a few people eating here at a given time. I guarantee you will never want to eat at Tokyo Joes ever again after eating here. If you decide to make the trek to Niwot you will not be disappointed! read more

Fresh ramen is something pretty amazing when you can find it done right. I had the spicy miso here and it was fantastic. However, it was overpriced. It felt very weird because it was in the back of a grocery store, however they did have tables and were very kind. I understand the reasoning for the high price however when you have sushi and you only serve ramen on Sundays I feel as though you shouldn't have to be paying 2x more here then any other ramen houses (not that there's many in the area) Personal opinion, the ramen is very tasty. Yes its in the Niwot market and its not fancy but it is some of the most authentic Japanese food in America and the bonus is you won't leave broke. The Chirashi is excellent: fluffy and well-seasoned rice with finely shredded egg and sashimi. If you are an expert sashimi eater, you will instantly notice how the salmon is more flavorful and the mackerel is insanely sweet but not fishy. Also, try the Grilled Chicken Wings (dry wings with sea salt) if you appreciate juicy and moist chicken with crispy skin (if you like your wings drowned in sauce so that it doesn't taste like chicken, then this is not for you.)
