Based on the prices, we expected to be able to share a meal, but the portions were pretty small, so I'd recommend each diner order their own dish, as well as an appetizer. Egg rolls were also fairly small, especially for $7, although they were really good. You might be able to share the Pho though, it looked bigger in the pictures, although we didn't order it or see it this time around. This place doesn't welcome Vietnamese clients even though the owner is Vietnamese herself. This is our second visit and also the last, we would never suggest this restaurant to anyone because both of their service and food quality was awful. First visit was ok, despite that all of their soup noodles were bad at taste, they were nothing close to authentic Vietnamese noodle soup (we had Pho, Bun Bo Hue, Hu Tieu). Service was ok, not very friendly and attentive but they got the jobs done. Second visit was unacceptable. What surprised me that it came from the owner, yes you hear me right, from the person that own this business. Usually it's the staff who messed up and then the owner or manager who had to come to weather the situation but this time it's the other way around. We came in, we said hi and asked for a table of 6 (in English), owner and staff looked at us, no answer. Maybe they didn't hear what we said, we repeated one more time in Vietnamese. The owner stayed quiet and just began grabbing some menus. She came to us and the first thing she said was "bring your dink outside, we don't allow outside drink". Wow, where is the "hello"? Where is the "hi welcome in!"? Where is the "oh I'm sorry but outside food and drinks are not allowed"??? Do you need me to teach you how to put that together? Mind you we only have one cup of Starbucks in hands, not like we tried to do any harm to her business or bringing like 5 or 10 drinks in. We totally respect that rules from a restaurant because we own a restaurant in California ourselves too. But what did we do to deserve that attitude? If you don't value your customers then you deserve to have 0 customers. And your foods are not even good. I don't think this restaurant will get any better in the future and I feel sorry for the staff that works here because it's really rotten from the head. The quality of this place has degraded significantly on the recent years. It used to be one of the best pho places in Madison. But now they are quite bland. The quantity has nearly halved. Vegan bahn mi - great! Thick cuts of everything to match the bread. Soy sauce marinade is uneventful, but gets the flavor job done. I'm coming back for more! The spring rolls are about as big as the sandwich (big) so that's a pretty good price point too. And, the peanut sauce is VERY good! We stopped here for an early lunch with some friends and were so impressed! It has its own parking lot with plenty of spots. The restaurant is in very clean and has a great vibe to it. The waitress was friendly and very quick. They forgot about our teas but once we mentioned them, they were brought out quite quickly. I ordered the brown sugar boba tea and my friend ordered Taro Match tea. They were both delicious, flavorful, and full of boba! My husband and I split egg rolls and beef stir fry. The egg roll was crispy and flavorful. The sauce was a homemade sweet and sour sauce with shredded carrots inside. It really added a great flavor to the egg rolls! The beef stir fry was perfectly salty and I loved the ''special sauce'' they put on it. The beef was thinly sliced and very tender. I first heard about Saigon Noodles from coworkers after regularly grabbing lunch at Saigon Sandwich food cart. Thinking they were owned by the same people, I decided to dine at Saigon Noodles. Apparently, they're owned by separate people, but I'm glad that mistake introduced me to this restaurant! I've been here a few times, with my most recent visit being this past Friday. I called in an order at 6pm and was surprised to hear it would take 50 minutes to an hour for the order to be ready. It made more sense when I picked up my food; the restaurant's business seems to be doing alright, with a sizable number of customers dining in (distanced, of course) and a line of takeout orders awaiting pick up - good for them! We ordered the spicy beef noodle soup, pho with steak (#13), shredded pork & pork skin spring rolls, and a Thai iced tea. I really appreciated the packaging for their noodle soups - broth, noodles, and herbs/sauces were each in their own separate bowl or baggie to avoid bloated noodles and soggy veggies. That also made it easy to heat up just the broth at home and assemble our own bowls. Their spicy beef noodle soup is a personal favorite and the reason we decided to visit Saigon on Friday. The broth is just so rich and flavorful and perfect for a cold winter day. The portion is huge too and enough for 2-3 large meals. And to those who think the meal should be tossed once you're out of noodles, I say to you to SAVE THE BROTH. I like to add rice to the soup in my leftovers, and the dish honestly tastes just as good as the first day, sans noodles. I can't say much on the pho because I've never been a huge fan of pho (blasphemy, I know). My partner thought the broth was flavorful and overall was pretty delicious, especially with some mint and lime added in. Again, I think the portion sizes are pretty big, and we had plenty of pho leftover for the next day, minus the meat) The Thai iced tea is also really good. It's definitely on the milder side of sweetness, but I prefer it that way. I'm also a fan of their regular spring rolls with peanut sauce but didn't particularly care for their shredded pork & pork skin spring rolls. The rolls on their own were good but required a sauce; unfortunately for me, I don't like the combination of fish sauce and vinegar in their house sauce. I'd definitely get these rolls again if I could ask for a peanut sauce replacement though! Overall, Saigon Noodles is a beloved establishment in the Madison community, even during a pandemic, with some pretty amazing broths and noodle soups. read more

This my favorite restaurant for Pho. We have been coming here for YEARS! It was to the point that we would come always every week . However we did start to slow down when COVID started. This still continues to be my favorite Pho restaurant. I love their Saigon Deluxe and the Shrimp and Egg roll Vermicelli . Also don't forget the Coffee with Condensed Milk. Although the service and staff are very nice and quick most days, there are times when it does get a little slow. But overall for a calm dinner or date this is a hit! read more

The bun bo hue definitely had the traditional shrimp paste in it but for some reasons, all the flavors were not harmonized together. The broth was a bit salty as well. However, kudos to them for including banana blossom leaves. The com suon was okay. It didn't have the mind blowing factor to it. It was good but not mind blowing amazing. For all the Vietnamese places I have tried so far, this would be the most authentic one in Madison. read more

My favorite dish is the vermicelli bowl (bun) with shrimp and egg roll. The shrimp has a nice grill flavor, the egg roll adds crispiness. Love all the different veggies, peanuts, fish sauce - scrumptious combination of flavors and textures for a delicious yet light meal. The spring rolls have a good proportion of ingredients, again very fresh and light; the highlight is the peanut sauce that accompanies the spring rolls. Some of the other dishes I've ordered previously are a bit light on the protein portions (ie. the lemongrass beef curry was heavy on the rice, light on the beef). I've been coming here for years and it has always been a staple for me and my family in Madison when we need some Vietnamese food (and are too lazy to cook ourselves!) The pho broth here has depth and you can tell it's been simmers with the bones and has all the spices in it. They give ample amount of herbs (and you can ask for more)! I like the Pho Dac Biet the most (love all the meat varieties). On weekends, they serve my favorite Vietnamese dish -- Banh Cuon which are like thin noodle rolls filled with meat and other things. Serves with bean sprouts and other fresh herbs and then you dip it in fish sauce (or in my case, you pour it all over the noodles). This the noodles are so delicate and light, yet the filling is packed with flavor, mixed in with the sweet and tangy fish sauce, and then topped with the freshness/crunch of the beansprouts and herbs -- just absolutely delicious! read more

The place to be on a cold weekend! Love the pho, and everything else we've had! This time got the steak and flank pho and was delighted as usual. The broth is delicious and delicate, both noodle options are yummy, and the plate of toppings is overflowing and delish! Tried the spicey beef noodle soup (S5) and it was the perfect amount of spicy, delish broth, and fun noodles. The special sandwich was also sooo good- the veggies on it were in a delicious almost pickled vinegarette and the meat on it was so good. Stopped by for dinner this week. Not too crowded and plenty of social distancing available. We went for entrees instead of PHO selections, which most customers appeared to have ordered. Not the best move. We ordered a chicken and shrimp dish that was very disappointing. Felt like the quality of a TV dinner. Very small portion. We also tried a stir fry chicken noodle dish. Lots of tofu but again frozen dinner quality. And a hot Thai coffee. All this for 50 dollars plus tip. Service impersonal and inattentive. My bill was wrong to the restaurant detriment. I pointed out that they failed to charge for coffee. Server said restaurant would have taken it out of her pay after reconciling receipts at the end of the night. Yet, no thanks for my catching the error and pointing it out. That's enough to have Pho elsewhere and not give them another try. read more

For all my pho cravings, I go to Saigon Noodles, since it is close to where I live. I've honestly never ordered anything different for my entree besides the Pho Dac Biet, so that is all I can tell you about. It's pretty standard and the broth is very good. I ordered their chicken noodle pho, and this was my first time trying Vietnamese food so I was a little apprehensive about ordering it. Family favorite that never gets old. I've been a loyal costumer of Saigon Noodles since day one! My all-time favorite is the #7 Saigon Platter (~$8) and the #63 Bun with beef and egg roll (~$9). The Saigon platter comes with an egg roll, spring roll, grilled beef skewer, grilled chicken skewer, and a fried chicken drum (or flat). I love the #7 because of the variety and everything single thing that comes with the platter is simple delicious. #63 is a classic. Bun is a Vietnamese vermicelli noodle dish with grilled beef and egg roll chunks, cucumber, lettuce, nuoc mam (a Vietnamese "sauce" that acquires a unique flavor with hints of salty and sweet-- a bit hard to describe so I recommend trying it yourself!). I've also tried a few of their desserts, such as their Che Ba Mau (Tri-Color Dessert), and strawberry smoothie with tapioca pearls. The Che Ba mau (~$4.25) is traditional Vietnamese dessert with three different colored layers, hence the name "Tri-Color Dessert": mung beans (yellow), red beans (red), a green jelly (green), all in a sweet coconut drink. The strawberry smoothie (~$4.25) is not too sweet which i greatly appreciate. It comes with real fruit pieces and tapioca pearls (+75 cents). As a Vietnamese-American living in Madison, it's pretty difficult to find an authentic and amazing Vietnamese restaurant, but thankfully there's Saigon Noodles! I've come here most weekends. I've tried some things throughout the menu, and they are good. The three menu items we keep falling back on are the spring rolls, pho, and the sizzling crepe. Service has always been spotty, but I think it is due to the adjustment to limited staff availability, It is hard in Madison to get good staff. If you can be patient, it is worth the wait. We have the sizzling crepe at other places, but Saigon Noodles has the title of best Sizzling crepe. The crepe is delicate and crisp, but it isn't dried out. The filling is subtle, not overwhelming. I recently came here for lunch and I was pleasantly surprised by the experience. The restaurant is tidy and fairly spacious with pretty typical decor for an Asian food spot. The staff was quite friendly and my food came out promptly. I had their spring rolls served with their house sauce. The rolls were huge, as well as delicious. They could almost be a meal by themselves. For my entree I ordered the grilled chicken and shrimp vermicelli bowl. The shrimp and chicken were tender and delightfully flavorful. The rice noodles were also lovely along with the assortment of vegetables within the bowl. I would definitely order this again.
