We were in town for the weekend and found this gem. We returned the night after to bring our friends. Very fresh, farm to table, creative food. Everything was so delicious. Our favorites were the panzanella salad with fresh peaches, tomatoes, goat cheese ect - so so good. Then the eggplant, steak with the pais butter (curry flare), lamb kabob (the kids fought over it) , chicken (we all fought over that) and the potatoes. Also the special dessert peach dish with corn bread and brown butter was incredible. Service was amazing and everyone was so kind. We sat outside on the patio, a rock wall around us, Edison bulb lights, and the jazz fest was going on so we had beautiful music in the background on this warm summer night. It truly was magical. This meal was absolutely incredible! My whole family is blown away. The quality and freshness is exquisite, and the flavors were unbelievable. Let me tell you, there was a not an ounce of food left on the plates! Multiple people at the table said that this was one of the best meals they have ever had and I have to agree. You just have to try it for yourself. I'm distraught that this meal is so far from home. Unbelievable. And that's just the food! Deserves a Michelin star. The ambiance is beautiful and moody, and the service is impeccable! Our waiter, Brenden, was amazing! He was genuinely so kind and knowledgeable about the menu, and you and truly tell that he loves what he does. Brenden added so much to the ambiance and dinner as well. Went here for a group of four for dinner and it was great! We went on a Sunday night, and they don't take reservations for groups less than 6 so we provided our name and were told to check back in 20 minutes (a little frustrating they don't take your phone number to contact you). Thirty minutes later, we came back and table still wasn't ready so we sat in their heated tent on the side yard and drank some Manhattans while we waited. Our table was worth the wait - got a great booth table near the front of the restaurant! The four of us split the mushroom risotto, eggplant caponata, grilled cabbage, lamb kabobs and half roasted chicken. I think we all agreed the grilled cabbage was our favorite dish with the delicious romesco sauce! My husband and I also really enjoyed the half roasted chicken - the others thought it was slightly salty, but the cook was perfect and had a nice and crispy skin. The eggplant was also very tasty and fresh and came with some grilled bread - our server suggested extra bread and it was a little annoying to be charged $2 for extra bread especially since he recommended it for a party of four. Colby went above and beyond to make my birthday dinner so special! She is a gem of a human being. The food was delightful. I have been looking forward to coming here for months for my birthday dinner since one of my chef friends in Denver told me the owner used to own one of my favorite spots in Austin. A beautiful small world! Now for the food: it was one of the best meals I've had in MONTHS. Everything was delish. The lamb kabob was out of the world. Simply a superb dining experience. Located in Salida, I believe this restaurant ranks among the best restaurants in Colorado. Lovely old building and shaded outdoor dining. I couldn't help but post a second review about our breakfast experience at Shavano! We kicked off the new year with a family breakfast at Shavano. I enjoyed a delicious latte with the frittata. My eleven year old got the frittata too and ate every bite! My daughter is a picky eater but loooovvved the breakfast sandwich (aioli on the side, which I dipped into with my frittata). My husband got the power bowl of goodness - oats, quinoa, seeds, macerated fruit! He said it was delish...didn't even offer me a bite. I also grabbed a cappuccino to go which was perfect to carry with my to the park where my kiddos ran off their energy! We will most def be back! read more

We have eaten at Shavano multiple times over the past couple of years, and we love it. Exceptional food, that is well crafted and super fresh/local, plus some surprising flavors and spices. Great wine list (though limited cocktails). Service is always friendly and attentive. They focus on doing a few things, exceptionally well. That said, it would be nice for them to change and/or expand the menu a bit. By our experience, it looks like they've had the same small menu for well over a year, and maybe since they opened a couple of years ago? Nonetheless, I'm sure we'll be back. What a lovely experience A-Z. Shavano is located in a historic building across from the beautiful Riverside Park with a lovely outdoor patio. While we waited for a table we ordered drinks and enjoyed the ambiance. All of the staff were attentive (in the best way) and efficient. Our server Nick was familiar with the dishes and answered all our questions. It's a small menu of varied options intended to be shared. We had a Spring Salad, Farro Rissoto, Lamb Kebob, Rainbow Trout and Roasted Potatoes. Everything was superbly prepared and delicious. You can tell that the kitchen takes great care in providing beautiful, well prepared meals. We came away fed and more importantly, nourished in body and spirit. I dined at Shavano on Friday night during the Art Walk in mid-October. The inside tables were all full, and it was noisy, so I opted to sit outside -- which was fine, as it's a covered space and there are heaters. My server was great, attentive but not pesky. I liked the wine that he recommended (a Spanish white). The food is American with a Middle Eastern bent, and the flavors are interesting and complex. The roasted eggplant is the best version of baba ghanouj that I've ever had, and it came with substantial slices of toast. The grilled carrots were also unusual and delicious. The beef kofta kebab had a nice flavor and came with a tasty yogurt sauce, but I found it rather dry -- more sauce, or a shorter cooking time, might have helped. For dessert, I had their daily special, pear crisp -- just what the name says, cut-up pears with a crunchy topping -- which was perfect, as they didn't over-bake it, so the pears weren't mushy. All in all, it was a wonderful meal and I enjoyed it thoroughly. My only criticism is that everything is "family style," big servings meant to be shared, and, if you're a single diner, you'll either end up with lots of leftovers, or never get past your first appetizer.
