My daughter and I were back in Cortez after a bit more than a year later. We wanted to make sure to eat at Shiloh Steakhouse again. The place probably need a bit of a facelift, but the food was still delicious. I wanted their bison burger as last time, but they were out of bisons, so the server recommended an elk burger. I was hesitant because I don't like anything gamey. She said their elks don't have the gamey flavour. She was right, it tasted really good! Their pear cactus mule was so good. We decided to get carrot cake and when the server brought it out I almost spit out my drink. It was humongous! The other customers were all looking at the cake and joking they can help us eat it The cake was really good, but be forewarned it was $14. A 40th birthday was taking place on the patio which was fine but took away staff at various times- long wait to get seated. I had the Potato Soup for starter before meal. It was more of a creamy soup as opposed to potato chunks in my soup. The ribeye and veggies were cooked perfectly for me. Very quaint interior for indoor seating. So Okay. Today is 12/31/25. We are a small town and good food is not easy here in Cortez. But, I thought that Shilo would be our gift tonight. So I called to make dinner reservations at 11:30 for 2. The wife and I. Casey said for how many. I said 2. Oh no reservations needed, not a problem, come on down. Okay. So we show up at 5:36pm. The hostess asks do you have reservations. Well no. Well there is a hour wait. I explained my conversation with Casey. And her snippy response was well it is New Years. So yea, I'm a little miffed from this. I see Casey and I confront him. Well of course there are 2 MF-Casey's that work here. But we are out of this pos-establishment. And we'll never come back. I have had other not so great experiences in Shilo's. But never again. We tried the Shiloh Steakhouse for dinner last night and generally loved it. It's not a huge space and it filled up quickly. Our server was friendly. For drinks we both ordered a whisky smash and I was pleasantly surprised by how boozy these were. For an appetizer we had the fried clam strips which were crispy, crunchy and a decent portion. They also served a small fresh loaf of bread with butter and raspberry jam. Both were a great beginning. We each had a salad to start. The caesar had more croutons than I'm used to, but that's not a problem. For entrees we had the sirloin tips and country fried elk. Loved the tips served with onions and mushrooms. The baked potato side was also good. I did find the vegetable side of zucchini and squash to be pretty salty. The garlic mashed potatoes were good with the country gravy. The elk was fine, but I wouldn't have known it was elk. I thought this was a very good meal and would love to go back and try some of their other dishes. read more

I met a colleague for lunch at this restaurant. Our servers were friendly. They bring bread, with butter and jam right off the bat. I ordered a Philly cheesesteak which was tasty. Instead of fries, I ordered a house salad which I enjoyed. My colleague also ordered the Philly cheesesteak, and enjoyed her sandwich. The indoor section of the restaurant is small-ish, but we didn't have any issues with seating at lunch. The menu looks tasty and I would go back for dinner if I were in the area. read more

I was pleasantly surprised. Very nice place to have a quality steak dinner! The decor is charming and unique. The filet I had was excellent! Thick and juicy, no fat or sinew (some filets are a little stringy). I ate every bit of my steak. I also had the coconut shrimp. They were good but a little oily and slightly overcooked. Not bad though. The salad was one to remember. I can't put my finger on why it was so good. It might have been the dressing or the fresh cucumbers, idk. The food was excellent! Second time I've been here, last time was back in December. I think I gave it 5 stars last time but this time I feel the service and the experience have declined. I tried to eat here on Wednesday night and it was a complete fiasco. It was 6:30 in the evening and they had at least 6 tables open but told the 8 people waiting, including me that it would be a 15-30 minute wait. The manager just kind of explained to us that he was late and had to get the house in order before he could seat us. I was by myself and there were 2 tables perfect for me and he couldn't seat me? I ended up walking out. I decided to eat here Saturday for lunch. I was the only person there at 11:30 am. The place has a musty smell when you walk in, like old oil? Idk, it just smells like it needs a deep cleaning. The waitress was friendly but very inattentive and scatter brained. I could understand if she had 10 tables. I blame it all on the manager. Very inviting and had a beautiful outdoor seating area. We happily sat inside. The interior was inviting and welcoming. Our hostesses and server were AWESOME! They were attentive and always had a smile with their "You're welcome." The country fried elk was delicious, and the gravy was some of the best we've had in a long time. It was a simple gravy that didn't need any "extras" because it was perfect the way it was. Although the steak strips were cooked well done, several were a bit too well done. I should have went with medium well. Salads, bread with jam and butter were both good. As we were a large party, we made reservations in advance. Upon arrival, we found a lobby full of people and no sign of a host or hostess. We stood in the lobby for 15 minutes before anyone acknowledged oeus. The employee said it would be "Just a minute" and was gone another 10. No one greeted the other individuals waiting in the lobby and eventually a party of four gave up and walked out. We were finally seated 45 minutes after our reserved time. The waitress was extremely apologetic about the delay and truly went out of her way to take care of us. The food was enjoyable. Everyone in our party was pleased with his/her dinner. I would eat here again, but not on a weekend night. This establishment seemed very short-staffed. The wait staff absolutely hustled, but were right out straight. An additional waiter/waitress would be very beneficial for a weekend night. And for heaven's sake, get a host/hostess who remains at the front desk to greet customers. This scene we witnessed this evening was not what one would expect from a high-end restaurant. Leaving your patrons standing around for 20 minutes without anyone even greeting them is tacky and unprofessional. Also, a curtain or something to hide all the boxes and off-season decorations crammed into a loft space would be a great addition. All the junk up there doesn't add a thing to the place. Shiloh has good food, but the devil is in the details. Somebody needs to do a reset. read more

Stopped here for lunch. Our order was taken within a reasonable timeframe. We ordered a Philly cheesesteak sandwich and a burger, both with side salads. The waiter brought us our drinks and bread. Then we waited. And waited. And waited. No side salads, no food. After 35 minutes, a couple came in and were seated. The waiter took their order (which included side salads). 45 minutes pass now and the waiter brought out salads for the people who just sat down, still nothing for us. We got up, left money for the drinks and walked out. The entire time we waited for our food & salads the waiter offered No explanation as to why our simple food order took so long. Will never stop here again. All it takes is for wait staff to maybe apologize to people if the order is taking excessively long. Check in on customers. Most of us are flexible and understanding. Of all the places we ate in Colorado while vacationing with our nieces, this was our favorite place. It was a beautiful night, and we were seated on the patio. Live music enhanced the atmosphere, and the tiny lights under the umbrella illuminated our meal. Tyler greeted us, and lead us to the patio. He brought us delicious homemade bread, with equally delicious fresh raspberry jam. We didn't need the butter. He also brought us water and utensils and napkins. He was a very pleasant young man. Katie was our waitress, and she, too, was wonderful. She took our orders, after answering our questions about several menu items. Young niece had an Arnold Palmer to drink, husband got iced tea, snd older niece got the margarita with a grilled pineapple. Hers was the only drink that was just okay - no more grilled pineapples in alcoholic drinks. Didn't add to the drink. Young niece got the children's sirloin tips, with apple sauce & garlic mashed potatoes. She let us taste a little of each, and we agreed with her - excellent dinner! Her mom got the potato soup before her entree, and shared it with her daughter. They liked it so much that they almost ordered another - but then they would not have been able to eat their entrees! Mom got the avocado salad and loved every bite. I got a smaller version, and loved it, too. Husband got the barbecue ribs - St. Louis ribs which were tender and sweet. Since the shoe string fries & house salad with home made dressing (which came with the ribs) were SO GOOD, all were devoured, too. He got asparagus and I'm glad he gave them to me. Soooo good! He's not a fan of asparagus. But I am! We did not have room for dessert, and we saw the huge cheesecake when we walked in. It looked like the real NY cheesecake we love! Since we're from out of town, I checked Yelp for a good steakhouse for my birthday dinner and chose Shiloh's. I don't think I could've made a better choice! Everything was great from beginning to end. They bring you a small homemade loaf of bread, baked fresh every morning! It came with butter and homemade jam consisting of raspberries, rhubarb and strawberries. Such a unique flavor and not too sweet. I had to buy a couple of jars to take home! I had the filet mignon, baked potato, and veggies which were yellow and green steamed zucchini. Very delicious dinner and my bf had the New York steak. The outside patio area was beautiful and peaceful! The service was decent. The food.... My Ribeye did not have a good sear and the fat was grisly. There were several pieces I couldn't chew and had to spit out. Not at all something that should take place in a higher end steakhouse! Sure, we knew what we might be getting into as far as wait was concerned and being from out of town. I personally think it's slightly overrated but... the atmosphere is decent and has a rustic vibe. It's likely popular because it's the best steak that Cortez has to offer, and to me, it was alright, but nothing to brag about personally.
