This place is AMAZING! From the insanely good food to the phenomenal service, we truly had a 5 star experience. We ordered the South of the Border Skillet which was incredible and the Denver omelet with fruit was delicious. The cinnamon roll was AMAZING. Wonderful service and yummy food! I ordered to go at the restaurant and everyone was very attentive and helpful. The restaurant has a cute cozy vibe. I ordered the California omelette with hash browns, the kids chicken tenders with fries and an iced coffee. The hash browns were crispy and the omelette was cheesy with fresh avocado. The tenders and fries were solid. All the food was prepared well and packed up with care. The iced coffee was sweet but not too sweet. My wife and I had breakfast at Silverback on our first visit and left happy and impressed. The food was great, the service excellent, and we felt very welcomed. My wife (who is hard to please) had the veggie omelet and was pleased. The interior was stuffed with a large amount of vegetable filling and cheese. Her home fries were hot and had a nice flavor. Her latte was excellently prepared. I had pancakes, eggs, and a side of biscuits and gravy, all of which were great. If you are a fan of matcha, you are in luck, as they make a hand-crafted version that is wonderful. Service by the numerous employees was excellent. We were greeted warmly upon entering. There were a couple of roaming managers ensuring that all diners had their needs met. The downside of a popular restaurant is a long wait to be seated. On a late Friday morning, we were faced with a 30-minute wait but opted to sit at the counter which was immediately available. Allow extra time. From the minute we walked in, we felt the family owned atmosphere. Employees were all engaging and were happy to be there. Service was amazing! The most important part. The food was perfect. My boyfriend's step father heard about this place on the radio so we went on his birthday. I had taken a look at their menu prior to arriving and was already so excited. Upon arrival the outside doesn't look like much, however the atmosphere once you walk in is incredible. I had set my sights on it being a small diner, but I was gladly mistaken. The floor plan was wonderful and made the restaurant feel very roomy. The warm colors along with the coffee bar is what caught my attention the most. Similar to a sit down, fancy Starbucks. I had my heart set on the Silverback French toast but since we got there early it was still getting made and wouldn't be ready in time. Our server had addressed the situation and gave me other items I might like. The problem solving mentality brought the company I was with in a cheerful mood. Not many servers know their menus or what to offer customers on the fly when the kitchen is out of items, but our server did an amazing job at it! I ended up with the classic French toast with a side of eggs and sausage. I was absolutely full by the end. The food is so good and even better when the service is on point. Been wanting to try this place for a while after seeing it on here many times, but we don't usually go out to eat for breakfast, nor do we go to Vista that often, but it just so happened to work out that we were in Vista early in the morning and hungry, so we added our name to the list and waited in the car for @30 minutes. Husband was not really into waiting, but I negotiated a deal. He said if waited to eat here and it wasn't good that we would never come back. I felt like that was a good deal because I've read the Yelp reviews. Anyhow, I got the text that our table was ready and we went inside. It's a big open space inside, but only a dozen or so tables and an about 5-6 seats up at the counter, so that's the reason for the wait. My husband ordered the biscuits and gravy with eggs & hash-browns, and I ordered the fried chicken breakfast. Both were very good with large portions, enough for me to take home half of my chicken. Service was excellent and our waitress kept the coffee flowing. Our food came out pretty quickly and pipping hot too. Needless to say, I won the bet and we will be returning soon! Wish I'd taken a picture of my food, but I started devouring it immediately and forgot. Sorry, next time, I promise! Go check this place out for yourself. You won't be displeased! Recently, I was headed out for a work day on the road and wanted an egg white breakfast burrito. Found Silverback on Yelp and gave them a call. I apologize now, I failed to capture names, but I will when go for a sit-down meal. The gentleman on the phone was on point and got my order in quickly. Said it would be ready in about 15 minutes, and it was! When I walked in, the hostess greeted me warmly and asked how she could help me. She immediately walked back to bring my burrito out. The dining area is very nicely appointed with ample seating in a spacious room. While I am a basic black coffee guy, I was impressed by the very nice coffee bar. The coffee and the food are amazing. However the service leaves something to be desired. The time from the moment we sat down to the time we finally got our food was 53 minutes. During that time after our server took our order, not once did anybody check on us. We had finished our drinks. Nobody asked if we wanted some more. Nobody gave us an update on when our food was coming. I had to flag down the server and ask myself and was told it would be 5 minutes. 12 minutes later we finally got our food. We tried Silverback Breakfast & cafe for the first time today. We've lived in Vista for a long time and were never aware of this literal "whole in the wall" breakfast joint!!! It is a hidden gem - believe me! The location is interesting; located in a small/quiet shopping center next the VUSD and residential area. But, don't let this deter you or fool you, the ambiance in the restaurant is great! It's well kept, up to date and the servers are fast, friendly and very helpful. We waited approx., 34 minutes for a table and were notified via text when we were ready to be seated; which was nice since there's no waiting room inside - we sat in our car and just relaxed. Once we were inside we were greeted by our server promptly and were given an approval amount of time to look through the menu before he came back to take our order. I had the Silverback French Toast and fried chicken; the portion was large! It was 2 slices of French toast (cinnamon roll cut to slices - yum) three slices were larger than your average bread slice. I got 4 pieces of fried chicken (leg, thigh, wings and breast)! I only finished one slice of toast as it was very filling and the wing - it looked so crispy and delicious...it was! It was fried perfectly, cooked through had good flavor and a nice crispy skin. I only gave the restaurant a 4 because of the seating arrangement, it was 2 of us and we were seated right in the middle of the restaurant in very close proximity to another 2 couple's table - it was a little too close for comfort and that's the only thing I didn't like. Everything else 5/5!! Will definitely be going there for breakfast again. It's our new breakfast spot! read more

Tried this local breakfast place for the first time today, Sunday about 10:30AM. It's in a bit of a hidden location but plenty of parking. The servers were friendly and the ambience and clean and open. The food tasted fresh, portions were large, price was very reasonable, and service was fast as well. We ordered the following and shared between two adults and two kids (6 & 3 year old). This will probably be our new go-to breakfast place. Country fried steak with eggs & hash brown. WoW! If I had only two takeaways to complain about, it would be (1) not serving the tea water carafe at a temperature enough to properly steep only one bag of the potpourri of teas served to the table. Two of the servers had become knowledgeable about the water situation, yet both servers failed to ensure that wasn't the case on the second attempt . . . nope, still not hot enough, but we were too lazy to complain a second time. And (2), the men's bath still has a manual paper towel dispenser. I'm sorry that is, if you haven't quite got up to the protocols of hygiene since the world scare of COVID, then I really have an issue with this whole "CritDicks" thing. I've obviously become too uptight. The place is clean and decorated nicely inside with plenty of extra room for several more tables. I am yet to really understand the name Silverback and the continued use of the prominently displayed Gorilla logo. Really great flavors. The wife and I give their house potatoes the coveted, "best ever tasted". Crunchy texture of fresh herbs and spices delightfully coated on properly cooked potatoes. These potatoes were really standoutish this morning. The regular Eggs Benedict displayed two hot and perfectly poached eggs atop some very tasty hams slices and a stellar, flavorful and shimmery Hollandaise sauce. I could actually see (the light caught it just right) the clarified buttery molecules in the emulsion. Smooth, light and flavorful. The House Hash (house-made corned beef) was really tasty and of excellent texture that compares with the best served from all American cafes. This plate came with a choice of toast, and I selected the Sourdough . . . good stuff too. Silverback looks to be a great place to bring some visiting family or solid recommendation for friends in the area. Nice, clean, terrific flavors, portion sizes and very attentive staff. Silverback is at the far back end of a strip mall off the main drag of Vista Way in a not-so prime area of Vista . . . not much is . . . it is Vista after all.
