This brewery is located right on Rt 7 in Wilton just north of the Norwalk city line. Parking lot is free with access off a side road. The brewery is downstairs and the tasting/restaurant/gathering place is upstairs. A father (Dave) and son team created the brewery. I found both the beer (CT Beer Passport) and food to be quite nice. It's a friendly place with a great menu for both beer and food. I don't know what other drinks are available because with my passport its bogo so my focus was beer. read more

My wife and I kept sampling it trying to figure out its flavor characteristics, and before you knew it, it was gone. SERVICE: Our server (CR) was friendly and attentive. Sly Bandit Brewing Company is a craft brewpub that opened in Wilton, Connecticut in July 2024. It was founded by husband and wife Dave & Wendy Guda and their son Mike. Dave is a retired IT employee while Wendy is a retired high school math teacher. Mike left his job as a market research executive to brew beer full-time. He first began homebrewing while still a college student. Eventually Mike started brewing out of his parents' New Canaan home for friends, family, and special occasions. A number of years later, the Guda family decided to open their own brick & mortar brewery, but first they needed to find a location. After a search, they secured a circa 1976 building that had originally functioned as a bank; most recently as a Wells Fargo. During the planning phase, the Guda family decided to open a brewery and restaurant simultaneously. The food menu is curated by chef Michelle Christides. I recently visited Sly Bandit for dinner while I was in the area to see a concert. The brew system is on the ground floor, while the restaurant and taproom is on the second floor. After walking up the stairs, I grabbed a seat at the bar. I was served by co-owner Wendy Guda herself. I really liked the brewery's logo which features a mysterious spy figure. When I asked about the brewery's name and logo, Wendy explained that they came up with a bank robber/espionage theme as an homage to the building's bank history. She also explained that the 'sly bandit' was partially inspired by the MAD Magazine comic strip "Spy vs. Spy". After looking over the beer list, I ordered a full pour of their "Vienna Lager". It was a little malty with nice hints of caramel and toffee. For food, I ordered the "Fish Tacos" (three flour tortillas filled with tempura battered cod topped with pickled slaw and smoky dill sauce) with a side of "Citrus Slaw". I can't say no to good fish tacos, and these were delicious! They paired well with a sampler flight that featured "Junior Juice" (New England IPA), "Delivery Day" (New England IPA), "Black IPA", and "The Heat Is On" (Imperial Chipotle Stout). I think that the Black IPA was my favorite; it's a style not seen too often. Overall, I had an excellent experience at Sly Bandit and I give them my seal of approval! read more

The tap room is bright and offers a mix of seating options. The tap room was relatively quiet on a Sunday afternoon, but they were ready and had multiple football games playing. We sat at a high boy table near the bar. The beertender was covering the bar and tables. We enjoyed the snacks. The spicy Italian flatbread was delicious. So good I didn't even get a picture. After hiking we decided to give this one year old brewery (celebrated yesterday) a try. When you walk in, you see the actual brewery at work along with a few tables. We were greeted by a man who didn't identify himself, but most likely an owner as was working on his laptop. He explained how everything worked and was friendly and professional. Downstairs you can only order beer and food, but upstairs you can also order wine which is great since I dislike beer. According to the hubby, they have a nice choice of beers. So we get upstairs and an older gentleman was also on his computer lol. There was only one other two top in the whole brewery at 12:45. The tables included both high tops and regular tables and spaced nicely to give guest room. We decided to order an appetizer and chose the Wurst Undercover. I had to approach the man on his laptop to place my order. Well, it comes out and it was sadly one of the "wurst" apps ever. It was supposed to be burnt end brisket but tasted like a not so tasty hot dog aka bad pig in blanket. The server didn't notice we didn't eat but one piece or that our drinks were empty including water lol for a few minutes as glue to the computer. When he did approach to inquire how things were, he defended the food. We are both from the south, we smoke our own usually because the NE isn't known for bbq. Dad has Stumps 6' tall smoker lol. So, while our server was friendly, the service we received was just soso. He did remove the app from our bill as we didn't eat it. I want to try them again for a better sense of the place and will definitely return and do recommend the brewery just had to be honest about our experience. read more

It's a new place far from me, but it's close to Norwalk and the train lines. Still, I was driving by and decided to check it out. It's a tiny parking lot next to a sizable shopping plaza, but once you find a spot, make your way upstairs. First off -- it is so danged loud in here! You can't hear the music. You can't hear the sports on TV. You can't hear your friends. You can barely hear the waiter. You can hear everyone's conversations except for the ones you care about. I had to resort to texting the person across the table. My partner said it used to be a bank, and it sounds like it. I can never bring a group here, and neither should you, even though they want to be a group space. Seriously, tape some blankets to the ceiling or something. I left and my ears were ringing for half the ride home. The acoustics are awful, and that ruined it for me. Fortunately, everything else made up for it. The beers largely lack the interesting names other breweries give their beers. Black IPA, Citra IPA, Vienna Lager... at least they're honest. That being said, I got to order or get a taste of five beers, and even the "average" ones were great. Shout out to their brewer. The waitstaff never kept us hanging, even when the entire floor was screaming with the awful acoustics. We had some appetizers on our way to further adventures. The pretzel logs were perfectly made, and while the beer cheese was a mild letdown, the beer mustard made up for it. The frickles (fried pickles) are legendary -- the crispiest I have ever had, and dare I say, the crispiest I think I will ever have with forty more years ahead of me! Finally, we wanted their Black IPA chili, but sharing a bowl would have been weird, so we got the chili cheese fries. The fries were saltier than New Brunswickian poutine, but the cheese and beer chili balanced it out perfectly! Let's just say that Tim going to mix beer into my next chili. All in all, Sly Bandit is a great place to visit. I'll be back. I'll just come alone to tolerate the discord. read more

Great new brewery has opened up off Rt. 7 in Wilton, Sly Bandit! My wife and I went here on a Saturday afternoon to check it out. Let's start off with the beer, AMAZING. For a new brewery starting out they definitely have found their footing. I had 2 IPAs, Juicy Delivery and the Azacca beer, both outstanding, could compete with any IPA in CT. Also had the Pumpkin Ale which also was on point. They have about six chairs around a very small bar, I feel they will outgrow this quickly. About 12-15 tables in the place, few high top tables, couple TVs scattered around the room to watch games on. We started out with the Pretzel Logs. While they were good they left a little to be desired, they were slightly hard and we thought the beer cheese could've been better. For my meal I opted for the chicken sandwich and spicy fries, loved them both. Enjoyed the sourdough bread and the bacon was a nice touch. My wife got the fancy Grilled Cheese which she liked but said it could have been better, still not a terrible option. We were driving through town and staying at a hotel near by so we've only been here once. Pros: New building and decor. Elevator to the upstairs. Friendly staff. Clean bathrooms. In addition to beer they also had a couple wine options. Lots of food options. Plenty of parking. Cons: My husband had one of their IPAs and gave it an "OK" rating. We ordered the Mac 'n Cheese - it was an odd brownish color and not much flavor. We also ordered one of the specials: Shaved Steak Tacos with seasoned fries. The tacos were really salty (an I typically like a lot of salt) and the fries were barely warm. read more

This looked like a great new place in Wilton. We visited here last Saturday and it was a little busy which is to be expected. Unfortunately, they didn't really have a system for people to wait for a table when they arrived so we stood against the wall for about 10 minutes. We then went up went up to the bar to ask for a table and the waitress told us to wait and she would be with us soon. We then waited another 10 minutes and then decided to leave. The food looked good and there seemed to be an expansive selection of beers but I think it might be better to go during a less busy time. I went there two weeks ago for a work Happy Hour. It was so good, I took my family back this weekend. The brewer is really passionate about the beer. I am personally not a beer person, but I really enjoyed the Christmas Ale I had. My colleagues were raving about all the beer they sampled; I was there for the food and it was delicious. Salad, peaches roasted to perfection, creamiest goat cheese I ever tasted, chicken wonderfully lime marinated, with a little more arugula would be perfect. We went here this past Saturday night with another couple. The beer is really good! Between the 4 of us, we tried about 6 or 7 different beers and loved each one. The food was really good too. This is one of the few breweries (that I know of) that actually has a full menu rather than just a food truck. Service was great too. The ambiance is simple/sterile and could use a little "warming up" with maybe some more decorations or something to make it more cozy, but I would still recommend this place. read more

Tonight we went to the Sky Bandit and it was quite disappointing. First the elevator was out of service. The restaurant was quite cold, it was extremely loud, the service was lacking and the food was sad. The TVs which were all over the room were off due to lack of internet. Generally there wasn't much decor, it was a cold feeling and looking room.Our waiter Christian brought the food and disappeared. He never brought water and I had to go to the bar to get water. The bartender insisted on bringing it to our table. We ordered the pretzel logs, they were fresh but they were served with the worst beer cheese dip and mustard I've ever had. I ordered a peach salad with balsamic vinegarette, it was lacking the balsamic vinegar and the goat cheese in the salad was very salty. The salad came with two pieces of toasted bred that was cold, very hardy, very salty and otherwise tasteless....This was the salad Christian recommended. My husband had the brisket wurst sandwich, it wasn't what he expected but it was good, the french fries were on. My son had a hamburger it was ok and his girl friend had the mac n cheese and it was ok. The best food we had was the piece of apple pie we shared. They had just run out of Cold Brew Stout to my husband's disappointment. The beer drinkers had Midnight Oil, and a couple of others and they were fine. Probably will not return. read more

We liked the extensive beer selection with plenty of IPAs, stout and other choices. The staff is well informed and efficient. Nicely designed dining area could use a litttle noise mitigation. The menu offers appetizers you wouldn't normally see in WIlton, such as pierogies with excellent caramelized onions. Portions are generous and reasonably priced, too. read more
