There are no pictures because we ate it all. It's that good. The beef flank (I usually call it brisket) was very tender and flavorful. The offal came with book tripe, tendon, and sliced beef. It was good, but I think I'd get the beef flank only next time (extra meat for $3 is worth it). Noodles and meat were packed separately from the broth as it should be. The broth was nicely seasoned and full bodied. Definitely ask for the chili oil. The beef appetizer met my expectations as well. Not searingly spicy, nicely seasoned. I felt everything was pretty on par with noodles you'd find in Chinatown. Yes, it's priced a little higher and the portions may be a little smaller than what'd you find in the city. A great little place to get some authentic hand pulled noodles! The beef offal was a good choice of mine and my friend got the seafood with noodles. Both noodles came within 15 minutes and both were quite delicious. For the beef offal, it comes with beef and different tendons. As for the seafood noodles, it had clams, shrimp, squid, etc. The squid could've been a bit more soft but the broth for both noodles is packed with flavor. Overall, a pleasant experience here! This was the perfect meal for the rainy day I wandered in and I will absolutely be back throughout the winter. My duck noodle bowl was what my soul needed that day. I have eaten at Splendid multiple times. DO NOT drink their water. Every single time I went, Splendid Noodle's water was not good at all. It tastes like detergent and someone needs to wash their cups again. I do like and recommend the beef flank. The noodles were ok and the broth is ok. The meat was tender, but not too big of a portion. The portion is usually just right for me, but most of my friends are usually still hungry afterwards. I am between scoring them a 2 or 3, but have decided to give a 3 because the food is not bad. As a Californian native who grew up eating noodle soup in Socal and Taiwan, I have some pretty high standards for beef noodle soup let alone noodles. Then came Splendid Noodle. Took my first slurp and I was hooked. I've eaten here almost 3-4 times a week for the past month. The noodles are excellent. They're fresh, soft, and have the right amount of chewiness. No soggyness. Not convinced? Well you can be creepy and watch the guy making noodles who does so in plain sight of the dining area. You can watch him as he kneads the dough and cuts it into strips of noodles. You know your noodles are hand-made when each noodle is a different width from another. The broth is superb! Right amount of Chinese spices and savoriness with minimal saltiness and minimal oil/grease. The strips of meat/beef are thin, tender, and from prime cuts (not just random chunks of fat/cartilage). The bok choy and cilantro are fresh and crunchy. Add a boiled or fried egg and make sure to add their complimentary smoky chili sauce - it's hot, smoky and so damn good. I'm in between 3-4 stars. I've been coming here for a while now...when I first came the quality was way better but recently it seems rather poor. The broth is not as tasty anymore, it just seems like it's missing something. Back in the day it tasted like it was slow cooked out of bones but now it tastes like they spend a lot less time on the soup and use soy sauce to bring the flavor back in. The noodles are still alright. Chewy and fresh. The quantity of meats in one order also went down. There's fewer pieces of meat even when I do a combo (I believe it's $3 to add an extra protein). The one thing that remains satisfactory is that hot oil! It's not extremely spicy but instead it's mild and very fragrant from the charred chili peppers. It adds so much aroma to any dish! Chinese hand-pulled noodles don't have that punch of flavor Japanese ramen often touts but it emphasizes the flavor of beef more subtly. You place your trust in chef to hand-pull you fresh noods of the perfect thickness and consistency. Food: I've tried a majority of the items on the menu by now but my favorite is the Noodles with Minced Pork. It is one of the two non-soup noodle dishes. Make sure you mix well! The minced meat sauce is extremely flavorful and the cucumbers help cut the saltiness and give you a refreshing crunch. The noods are the perfect consistency of chewy. It's fantastic every time I order it. The beef noodle soups are also quite good but because the hot soups cook the noodles a little more in the bowl while you are eating, the noodle consistency isn't as good as with the minced pork dish. Beef flank is the way to go, the meat's super tender and flavorful. The soup is a beef/chicken broth mixture and complements the noodles very well. However, I will note that there was perhaps one time that I had a soup that just didn't taste as flavorful as any of my other experiences. Perhaps they ran out of an ingredient just on that day. Regardless, my experiences with the soup noodles have been really good here as well. Vegetarian options are also available now! They offer a vegetarian based both that quite frankly tastes... nothing like the beef soup. But your vegetarian friends will never know right?! While it seems like it would be a good place the food here is actually pretty much awful. When you first walk in the smell is of nothing but the offal that they cook with(this is the part of the animal that most people throw away as it's the digestive system and nasty organs) The so called broth is tasteless, mostly because it's not broth but stock (difference being that you season stock and add to it to make broth), the beef that they add to it isn't fit to be dog food, and they overload it with smelly greens that seem to be rotting rather then cooked. To top it off the boiled egg seems to have been cooked for days it's so hard. The only redeeming thing is the noodles themselves. This place should just roll in the mat and call it quits read more
