The market had a of variety of products to choose from including spices, ready to eat meat, raw meat, dog bones, and dog scraps. On Saturdays they have a "live hoof" gathering in the parking lot. People bring in sheep, goats, cattle, etc and then the customers pick out which animal they want to buy/slaughter. They start this at 5AM, but I was told the line starts before 4AM because that they get the first pick of the animals for sale. Place was decorated with previous animals. When you go looking for lamb chops and they ask if you want fresh or frozen, you know you're in the right place. Not only do they have a fantastic selection of butchered meats, they also have plenty of smoked meat options, deli items, fresh eggs, butter, seasonings, pet treats, and local honey and produce. Their bacon and smoked pork chops, are amazing and are smoked in house. You can see the smoker going in the parking lot and know it might be a day to get smoked rib rack. The staff is so helpful and ready to cut anything the way you request or answer your questions. The facility is clean and smells of hickory. Always have a pound or two of bacon in the freezer and only go to this butcher for my meat and poultry needs. Please note, they only have land items, no fish or seafood. read more

We bought a cow a few years ago and it was literally the worst we have ever purchased...no flavor and just extremely disappointing after spending all that money. We have also purchased different cuts, outside of this, over the years and have had several turn green and purple/grey within 2-3 days. Nothing was done about it and they claimed it was because their meat is "more fresh" than others. Then why is it turning green? We have been purchasing from local butchers for over 10 years and have never experienced this. We have since heard some rumors of business practices which are not ideal and would make sense. My boyfriend took a drive down to De Soto to get some steaks. He returned with ribeye's and bacon. The ribeyes were really good quality and they tasted great. They were huge cuts so we ended up making a few meals. The bacon is some of the best I've had from a butcher shop. It's nicely smoked, the perfect cut and thickness and cooks beautifully. And the flavor speaks for itself! Also, Steve's takes orders via its website and offers up frequent specials in 'bundle' style selections. Checkout their FaceBook group to see what Steve's is featuring. I myself have picked up their 25-lb. 'grab bag', a mix of cuts and options, at prices as low as $49.99. The prices are super competitive and it's hard to buy grocery packaged meats once you've been to Steve's. We've tried everything from their TBones to the summer sausage, Ground round to butterfly chicken breasts, pork cutlets to wings, sausages to ribeyes, flank steak to bacon, dog bones to soup bones... I'm telling you, great cuts of meat. We witnessed the butchering of an entire pig (in the background) so I'm assuming you can butcher and order most anything you like. Been purchasing sides of beef for years. Thought I'd give Steve's a shot. Unfortunately, it was the worst beef I've ever ordered. EVERY cut is very tough, even after slow cooking the roast for 8 hours. Steaks are even more disappointing and fall very short on flavor. Now I suspect they can't guarantee every cow, however, other details that now push me away from purchase from them again are... 1 They poorly packaged the steaks, even rolling them up making it difficult to defrost. 2 No extra fat trimming, but I didn't pay for that, so they get a pass, but others have done far more for me. 3 I emailed my concern to them asking what I can do better next time to ensure quality. I didn't complain, just asked if I could have done something more to ensure a better cow, and they have not responded. This store has deep freezers filled with delicious meats such as lamb and bison. They also have the butcher with fresh meat out and ready to be sliced according to your specific request. The cornbeef was basking in a vat of special juices! Hotdogs, sausages, ribs, chops.. it was all there! Wowzers! They have a fridge full of farm fresh eggs, pickled sausage and other delights. They also have ready to eat meat.. which was tempting, but we were on our way to lunch. I bought some bacon (medium sliced) a couple of steaks AND a frozen bison steak. I wanted so much more. I love meat and therefore I love Steve's. PS: When I checked out I used my credit card and the guy says "Thank you, Marie" when he hands me my receipt. Meat, lots of it, served up by burly men in bloody aprons. Don't try talking me out of this 5-star rating for Steve's Meat Market because I've been coming here for over 20 years. It's the best thing going in De Soto. Come here on a Saturday and expect a line backed up to the front door, hungry adults anticipating a protein fix that's sure to come later in the day. One regular offering here sets them apart for me: buffalo. Love the steaks, roasts and short ribs, and yes, you can get the "parts" (OK, testicles... I know how to prepare them) if you want. Bison burgers are as close as you can get to a healthy burger in case we pretend that's why we're buying it, and no one will resist a pot of buffalo chili. Their grass fed beef steaks, ribs and burgers are outstanding. Last night we tried their bacon wrapped filets for dinner. Priced quite a bit less than the Community Merc in Lawrence. Another recommendation: their chicken. Not the pathetic little things slaughtered six per second at the Tyson plant in Arkansas by opioid laced employees operating computer driven machinery, but real locally grown hens that actually saw the sunlight, scratched and were allowed to deposit real chicken poop onto the ground. Imagine that. Doesn't happen at Tyson. Here's a tip: when you're blazing down 10 Highway from Lawrence to Kansas City, make it a point to stop here. If you're coming from KC, exit just over the top of the big hill on 10, head right and then left and the stop sign. From Lawrence, take first main De Soto exit (high school visible on the left), head left for about two miles to Steve's. They also offers pre-cooked ribs. Have never tried them but see people carrying them out all the time. You want to eat at a place preparing and smoking their own meats. Large selection of frozen lamb as well as the already mentioned bison and beef, and plenty of fresh cuts. Getting your hamburger meat actually ground in front of you, that's a good thing. read more

We took them back to have cut and the so called butcher that cut them did an awful job. They ruined the dinner. After 12 hours of slow cooking, they still were not tender. The animal had to of been very old. I shared all my pics and experience with all the chefs and restaurant owners I know just so they do not encounter such a tragedy. They charged me 40.00 for shanks that my dogs could not even get the meat off the bone. If they did not know what osso buco was or how to do the cut, they should of been honest with me. So for my wife's birthday I decided to head out to DeSoto and grab some ribeye steaks for grilling. There were a couple in the case, but I asked for something a little thicker and he instantly cut a 2 1/2" thick steak, asked me if that worked, and gave me another. Price was very reasonable so all was good. Then I grilled up the steaks. A high heat sear to keep juices in this thick hunk of meat but not have it too rare (wife likes it rare/medium rare, but not mooing). We cut into the steaks and...OH MY! I'm sure I have had steak this good before, but I'm not sure when that was. My wife declared with NO reservation, "This is the best tasting steak I have EVER had!" I was amazed at how much better the chicken, steaks, hamburger, etc. tasted from Steve's as opposed to the grocery store cuts I've been eating all my life. Told my beef provider if he used them again I would Stop buying from him. I understand he is between a rock and hard place as finding processing is getting difficult. Steve's failed to cut my beef according to my cut sheet. We aren't big eaters and I'm stuck with massive T-bones instead of filets and strips. We always talk the talk about buying local, likely humanely raised meat and supporting local business while eating much healthier and more identifiable food. I had forgotten all about Steve's in my years away from the KC area until a friend pointed me at one of their bulk specials. After a little hemming and hawing about whether we should stock up, which one of us was responsible for defrosting the deep freezer first, and when we would squeeze a run out to DeSoto, we just impulsively bought a beef & pork bundle online. We'll figure out the details later. Well, freezer got cleaned out but not defrosted, and we actually stuck the run out of town on the calendar so we would make sure to plan around it. And, yeah.... it is *everything* you hope for from a local butcher. A half dozen guys running around behind the counter with sharp implements. A couple nice ladies on the phone taking orders trying not to get their phone cords sliced up or clothesline anyone. Fantastic down-home customer service with pros who can tell you about everything they have. And the smell of the smoker that has you salivating before you even get in the door. The per-pound price on the big bundle broke down to something ridiculously low that could only be compared to what you pay for tubes of mystery meat from Wally World. And the flavor of everything we have tasted has been Ah-mazing. My only problem is that I have to re-learn how to cook *good* meat... you know, meat that is actually really, really lean (as grass fed beef is), meat that is the color of meat and not of additives (the breakfast sausage is the color of pork chops, not hot links), and meat that stands completely on its own for flavor (step away from the salt shaker). And, once again, I received about 80% of the weight in meat that was expected, and NO TENDERLOINs! This is the select cut of meat off of any animal, for those who are not familiar with cuts of meat. I'm sure for the general population who purchase meat there, it may be just fine. But for processing, they are just thieves. I have also read many reviews by others who will tell you the same thing, you expect a certain amount of meat and get much less after processing. Please go elsewhere if you can. Steve's Meat market is a small little butcher shop/meat processor on Lexington drive in DeSoto. They have a wide variety of fresh meats behind the old style butcher shop display counters. Prices seem to vary with the season. They may be a little more expensive than your grocery counter on some items, but you can really tell the difference! And quite frankly they are not that much higher than the chain stores. Steaks, numerous cuts of beef, pork, chicken all available.Today, i purchased bacon that my server cut from the slab especially for me, asking how thick or thin I liked it. One of the other items that caught my eye was fresh ground pork sausage was $1.69..this will be perfect for Sunday morning breakfast. Fresh ground hamburger, pork chops, stew meat, chilli meat that is a rough cut all looked very appetizing. I picked up a brochure for purchasing a side of beef. They offer several different packages of meat cuts in a bundle price. I use this store strictly as a meat counter, but they also do animal dressing for you. I have seen people bring in wild game for processing. Some venison, bison and poultry were available in the freezers on the storefront. They also carry some grocery items like sauces and meal trimmings. Don't forget Fido...they also offer scraps and bones for your dog. If you happen in at the right time, the smokers are churning outside, you might get a sandwich for the road. Store is clean and surprisingly does not have the odor, like some meat purveyors seem to have. People behind the counter are always willing to help. Grab some of the jerky that is by the cash register. marvelously flavored & peppered. Very flavorful. Fantastic meat, funky workers...this place is not for the faint of heart. If you are cool patronizing a place where a guy blows his cigarette smoke behind a door (while talking to you) 5-6 other people are bustling about serving other customers, and another guys brings in a trough of meat and is crushing it in the background making fresh ground beef... this is the place for you. Most of the workers here are real characters, and they remember you like norm when you come in. The meat is literally some of the freshest we've had. The only complaint - if you can call it that - is that the meat is so fresh be sure to freeze what you don't cook immediately, or it spoils quickly. Either it's "fully cooked" and totally safe to slice on the same slicer you slice the deli cheeses on, OR it's an item that requires heat to be safe to eat and can be sliced on the same slicer as the raw meat.
