Their "house" margarita is up to par of some of the best frozen margaritas we've had. They also have excellent salsa with just enough "bite" to keep it interesting. My wife decided on a 1/2 order of chicken quesadillas, and I opted for a combo platter consisting of a chicken enchilada, cheese enchilada and a crispy taco. The platter was accompanied with refried beans and Spanish rice. While waiting on all of our group's entrees, our group had a great time chatting and moving around the private room to catch up with folks we hadn't seen in quite a while. It was good to see everyone in person. The door opens and a parade of servers and staff started delivering our entrees to the group with military precision. It was great they had a lot of help to get the entrees to us while the plates were hot. Everyone loved the food at the restaurant. My wife's quesadillas were exactly what she wanted. I noticed that there were compliments on the birria, so I might try that if I go back, but I've tried the barbacoa twice, once not long after they opened and today. It's one of my favorite foods, but both times the Olivo's barbacoa was dry and bland.
