I spread that rich, nutty, buttery goodness over the crispy toast points, and every bite was better than the last. Next came the prawns. The chefs did an outstanding job highlighting the natural umami from the shrimp head before the sweetness of the corn and shallots blended perfectly with the tender, succulent shrimp. It was a dish that kept evolving with every bite. The smoked short rib was the star of the meal. I asked for the sauce on the side, but it was clear the meat had already been cooked sous vide with the sauce, allowing those deep, savory flavors to fully penetrate every bite. The result was an incredibly tender short rib that practically melted in my mouth. Absolutely delicious.
