He has a table set up in front of him, but we saw him cutting up several larger fruits on the actual bed of his truck. We did end up waiting double our estimated wait time, but they were super busy, so it was to be expected. They gave us an extra soda when our food was ready, which was really nice.

The seasoning mix was perfect, the flavor wonderful, and the serving size was definitely right on for a $4.50 quesadilla. Yes, I could have eaten another one. Easily. The best part for me here? The service was perfect. The woman who took the order was helpful and super friendly. While I'm sure they'd have loved a bigger order, they were marvelously hospitable. The person who handed me the order, presented in a styrofoam container, recognized the difficulty of carrying in a wheelchair and offered me a bag - I didn't take it, but I loved the thoughtfulness. This experience was definitely one of the highlights of Statehouse Market for me this year. The people were friendly, the food was delicious, the prices were fair, and the truck is attractively decorated and fits with the personality of the people and the cuisine. It was flavorFUL and the birria was tender and abundant. The fresh onions and cilantro were the perfect final touch. I usually have to add salt and pepper to dishes when I eat out, but everything here was just right. A squeeze of lime did me just fine! The empanadas were also a bit oily. Obviously, they are deep fried, but once you have the addition of the generally oily birria, then you have leakage-level oil.
