If I could I would leave a 6-star rating!! Just had dinner with my husband at Firebrand at the Tava House Restaurant in Woodland Park, Colorado. First great impression was the wait staff who were so professional, welcoming and everyone looked like they enjoyed their jobs. I ordered the Chef's Table because I had heard it was a special culinary experience. I sure was not disappointed... the amuse-bouche of curried deliciousness was just a tiny glimpse of what was to come. First course was a Mushroom Cappuccino served in a cappuchino glass with a dense whipped cream turban cap. It was absolutely savory with the cream creating a wonderful umami flavor and delightful texture. The second course was an organic rainbow chard and melon salad with balsamic and honey dressing. It was beautifully plated accented with prosciutto/speck, roasted pinion nuts and my favorite...a pecorino crisp. When eaten together with the chard , the flavors were more amplified. It was also very refreshing! Third course was Mediterranean Striped Bass with olive and feta rice topped with the most delicious small tomatoes and microgreens with beautiful summer flower accents. I felt like a new set of tastebuds were stimulated with those delectable flavors and textures. I loved that the feta was subtle not to overpower the delicate bass and other flavors...wonderful balance. The fourth course was what I had heard so much excitement over...the prime filet... which made its appearance delicately plated listing against a creamy mound of mashed potatoes with a mouthwatering demi glace Bordelaise which I learned took 5 days to make. The filet was cooked to medium rare perfection and almost melted in my mouth. I resisted the temptation to lick my plate when I finished the last mouthful. What I thought was the climax to the culinary journey was actually a false peak (mountain talk for another peak behind the first one) because then the dessert sampler arrived....artistically plated were the Strawberry Pavlova, Crème Brulee, Carrot Cake with garnishes, and the Chocolate Caramel Tart. Each sample was an experience in itself. The Pavlova had a crispy exterior and creamy filling together with the sweet strawberries for a perfect taste of summer. The Carrot Cake was moist, flavorful and fanciful with the creative garnishes (edible moss, carrot and mushrooms). The Crème Brulee was perfectly creamy with that wonderful burnt sugar layer that is so fun to crack...and eat! Of course then there was the Chocolate Caramel Tart.... oozing with a rich, flowing caramel with a chocolate filling and a perfect cookie crust. What a happy ending!!! Throughout the evening, the service was consistently smooth, professional, and excellent. I was impressed with the respect the staff showed the patrons and for each other and the positive vibe they radiated. What an incredible culinary experience! I recommend it highly. An unforgettable 5-star dining experience! We recently visited Tava House in Woodland Park and sat at the chef's table. The ambiance is nothing short of spectacular--overlooking the stunning Pikes Peak, it delivers a sophisticated, elegant, and romantic atmosphere. We opted for the chef's 5-course special, which featured an absolutely phenomenal Wagyu steak. Each course was cooked to perfection and unfolded in a delightful, unscripted way, bringing a completely new culinary experience to the table. Honestly, the quality of the food far exceeded any expectations you might have for such a remote location; it is truly a culinary hidden gem. The service was equally incredible. The staff was attentive and welcoming, but what really set the evening apart was having the head chef visit our table multiple times. We've been watching and waiting to come here. It looks great and the reviews have been good. We finally went for lunch today at Tava. The service was friendly and knowledgeable. That was the highlight. We both ordered a cocktail and we both ordered the sliders with a side of fries. My wife's tava spritz was overpowering with mint. Could not taste anything but mint. I had the summit spritz and it was ok 3/5. The sliders were hugely disappointing. 2 out of 3 were extremely well done, and somehow my bison slider was well done in one half and raw on the other. When you think of the size of a slider, that is a pretty incredible feat! The over done burger really brings out the gamey flavor of Yak and Bison. There was a seasoning used on all three that I really did not like. Not restaurants fault, not sure what it was but to me personally, it was awful. We were really excited to try the new place but we won't be back. Maybe someday in the future we will try the restaurant up stairs but not likely. This was a top 3 worst meals of my life. I hate to say that but it is what it is. Ambiance was decent, they need to put up a privacy fence and some trees to hide the trailer park right behind the restaurant. Let me start by saying we had been itching to try here for a while. Finally got to stop in at lunch. The good; staff was friendly, service was fairly quick and interior was clean and neat. The not so good; the food, which should be damn good considering the limited menu, was one of our most disappointing experiences in a long time. I'm not sure how one manages to over cook sliders on one half of the slider and undercooked on the other...but that's what we were served, we had been told the burgers should have pink, we love a medium to medium rare but were informed it would be medium well, totally understand that, but again that's not what was served, the fries were ok. I really liked the house pickles, but they weren't good enough to save the meal as a whole. read more

We were a group of 8 for an early lunch and this was my first experience at Tava. Very cool setup with an amazing view. Service was slow, but not a huge issue. Beer options on draft were great and our food, sliders and fries, were really good. So why the 3 star rating? One couple didn't get their food when the rest of us did, and after several minutes we were able to notify our server. Food finally comes out and the meat on the sliders is raw/cold. Plate returned. Next order arrives and the slider has a hair on it. 2 completely different experiences at the same table. The only thing I would recommend to a manager is Tava House should have comped our friends drinks and appetizers. read more

I have not tried any of the food except for the crème brûlée, which was very very tasty but was small. I also ordered a cocktail for my 21st birthday, the cripple creek cream, which was AMAZING! It was pretty small for the price but the taste made up for it. The inside is super nice and I am sure it will get even better once they are able to open up the tap room where you can pour your own beer. The two times I have been there I have noticed they were a little understaffed and service was probably slower than it needed to be, if they just add a few more waiters in midday and night shifts everything will be dandy! read more

This review is about Tava Firebrand, the new high-end chophouse at Tava House. I've previously reviewed the excellent Tava House Taproom twice. Firebrand has been open for 6 weeks, but we wanted to try it based on our experience with the Taproom. It was a mixed bag, ranging from superb to subpar, but overall, there is much to love at Firebrand. My wife and I made reservations for 5 PM on a Friday. The only available seating was at the Community Table, which we were happy to accept as we hoped to meet new people. We arrived and were seated at a table for two. We left at nearly 7:30 (yes, this is a leisurely affair), and the community table was still empty. Odd. There are multiple menus. There is a chalkboard with multiple meat offerings, a secondary à la carte menu that includes seafood and pasta, side dishes, the chef's tasting menu, and, lastly, a drink menu. That's a lot of different menus to shuffle through. Since we wanted to try as many different items as possible, I decided on the five-course chef's table menu for July. I will fully review my wife's meal after. *Course One was Roasted Poblano Cream of Soup with green chile powder. The soup was tasty with good heat and roasted poblano, but it wasn't creamy, which seemed to be the intent. It was a decent start but not remarkable. *Course Two was Octopus & Watercress Salad with Yuzu Plum Dressing. I'm not a big fan of octopus, but I'll eat it and have an open mind in finding a chef who could change my mind. The octopus was tough, as is often the case, and it also lacked flavor. The dressing was nice, but overall, I wouldn't reorder this dish if I had the option. *Course three was Crispy Duck with Hoisin Miso Sauce. The duck wasn't crispy, and worse, it was fatty and tough. After two bites, I did something I rarely do: I sent the dish back, since the kitchen should know this dish had massively failed. The duck was almost inedible. The restaurant comped a portion off of the $85 meal. *Course four was USDA Prime Filet. Since my wife ordered a dinner that also included this offering, it gave me the excuse to upgrade to the Snake River Wagyu Filet (+$45 fee; ouch). The Wagyu was simply outstanding! Tender, cooked perfectly as requested to Med Rare, the flavor was amazing. My wife's USDA Prime Filet was also superb. Was upgrading to Wagyu worth it? If money is no object, yes indeed. But money is often an object. The USDA Prime Filet was excellent, so you don't have to upgrade unless you're uber wealthy. Use the $45 savings for lunch or dinner the next day at the taproom. I should note that my wife's request for a medium-rare Filet came out rare, but we were OK with that. We are fine eating steak tartare, so this wasn't an issue, but I wanted to mention that the kitchen is still working out how to serve the meat cooked as requested. The Wagyu filet and lamb chops were cooked perfectly. *Course five was an Artisan Selection of desserts that was amazing. Key Lime Pie had a citrus-filled white chocolate bomba, as best as I can describe this delicious little nugget. There was also a chocolate-hazelnut tart and a strawberry shortcake. Each dessert was absolutely delicious. Don't go to either the Taproom or Firebrand without having dessert. The desserts are always superb. My wife started her meal with The Steakhouse Experience ($15), a classic wedge salad with Ranch dressing and a small shrimp cocktail. The salad and dressing were good, but the three small shrimp lacked flavor and were served with what can best be described as Thousand Island dressing. The restaurant should focus on the excellent salad and 86 the shrimp and dipping sauce. For the main course, she ordered the Filet and Lamb Duet. As mentioned, the filet was excellent. The dish came with two large Colorado lamb chops that were out of this world delicious and perfectly cooked. If you're a lamb lover, order the lamb chops. I believe there is an option for additional lamb chops without the Filet, and both options are $75. The service was outstanding, with a team of well-versed fine dining servers. The Firebrand has a few oddities like a chalkboard menu that's hard for nearly half the diners to see. If you are seated to view the amazing large glass wall overlooking Pike's Peak, you will be straining your neck to see the chalkboard menu or just get a view of other diners instead. The chalkboard isn't a well-thought-out feature. There are too many separate menus, and none indicate that the steaks come with mashed potatoes (which are very good), while the à la carte menu offers, among other sides, potatoes! Many little details like this haven't been well thought out from the diner's perspective. We hope that, in time, the owners will consider the full dining experience. The ambiance is lovely, and the noise level is on the low side. The views are spectacular, and some of the food is best in class. This new, beautiful and comfortable restaurant was a great after-hike refueling stop. The food was so good. We just had appetizers, but still, yum! We had some of the best French fries I've had in ages and pretzel bites. So good! The wall of beer taps was good. We did have some problems with a couple taps being tapped out. Service was very friendly and professional! I'll be back on a warmer day to sit outside. read more

I decided to swing by with my daughter today and check this newly opened establishment. Food was pretty good . We didn't order main courses so there is room for improvement and we will be back to try more. Menu is pretty limited as of now and I'm hoping that it will either expand a bit or be changing periodically. Mocktails were average, a bit too sweet for my taste . For the price I expected them to be a bit better. Service was interesting today, not in a bad way. I think we got encountered by 7 employees in one visit. Nice to meet you all It's a modern , spacious place with plenty of indoor and outdoor seating. Parking is free and available all around the restaurant. One thing that I was not fond of is their payment system . I found it bizarre. I've dined in so many places and was never asked for a card upfront, before ordering. We then mentioned that our payment will be in cash and waitress still wanted payment card . It was explained to us that it's the system they set up towards taproom since it's a self serve tap room. I don't think that should apply to customers that want to dine without option to use their beer on tap nor ones that chose to pay with cash. With so much fraud going around and personal information possibly leaking by using cards some customers might want to use cash. I especially chose to use cash since it's a newly opened establishment in stages of training stuff etc. Also, what about let's say, teenagers that only have cash and want to grab a bite? I just don't think that's a good system . Other than that, I would give this place another try. read more

It's a pretty nice restaurant. Modern casual I guess, it'll be nice in summer. Nice views here too. The burgers had nice flavor they were just all dry (excluding meat). The key lime pie was pretty good, I enjoyed it. The mocktails were just okay. Really nice service here too. The only thing about this place is they have a policy of taking of card on tab first, even if you're planning on paying cash or not drinking. That's just something to know! I'll definitely be back though. read more

The food, ambiance and service was very good. I thought the prices were lower than expected compared to what others charge these days. I was surprised that for such a large building there wasn't more seating space. I guess it was due to the event space. We were given a tour of the fine dining area upstairs. It looked good, but for me it seemed too crowded. I prefer more intimate spaces when fine dining. I assume it's set up that way because they expect a lot of customers in the beginning. Then once the newness wears off less tables will be set up. With that said I look forward to having dinner there soon. read more

We had a wonderful experience dining at Tava House. From the attentive staff and fantastic food to the amazing ambiance and thoughtfully selected wine pairings, everything was exceptional. Mediocre at best. The acoustics are terrible; every conversation from every table bounces off the walls and ceiling. Every chair or stool scratches the floor like finger nails on a chalk board. The menu is limited to one page of about four sandwiches and six appetizers. The alcohol menu is four pages long. I ordered a Bacon-Lettuce-Tomato (BLT) sandwich which used ketchup for the tomatoes; not good. I brought it home to add real tomatoes. I was not impressed with our first visit to TAVA. read more

Nothing but great things to say about our visit to Tava. Enjoyed the Chef's Tasting menu with wine pairing and other a la cart items. The drinks were fantastic as well.Staff was fantastic and at no point did we feel rushed. They really enhanced the experience. Watching the Peak change colors as the sun went down was cherry on top. First time visitor last Saturday night. Our experience was excellent! Two of us had the Colorado lamb chops which were the BEST we've ever had, grilled to perfection and very flavorful. The other two had filets, Prime Beef from a Kansas farm. Tender and flavorful. The wait staff was very friendly and courteous. Being new, some of the menu items were not available, but folks, this is a great place to eat! It rivals anything in the Springs or Denver, with out the hassels of driving. The food and drink are very good, but the service isn't rising to the occasion. I've been three times, twice to the tap room and once to the chop house. The food downstairs is reasonably priced. Everything we ordered was very good. Upstairs, there are no prices on the menus. We figured the ribeye would be expensive, but $150 for that one steak was sticker shock. Do yourself a favor, ask how much before you order. Downstairs, expect $25-$40 per person. Upstairs, $150-$300 per person...unless you like good wine. That can add hundreds to the bill. Both the upstairs and downstairs need serious front of house work. Service is slow, inattentive and sloppy. Waited over 20 minutes for our server to return to take food orders after dropping water, and our food arrived before our cocktails did. Upstairs, our server delivered the wrong plates to two of us. Clearly the service staff need better training. Yes, the food is good enough that I will go back, but if the service does not improve, return visits will become less likely. read more

Be prepared to have your ID and credit card swiped into their system just to get a beer; BIG BROTHER IS WATCHING! They track exactly how many ounces you drink and when, not to mention you have just given them your information which they can turn around and sell for marketing purposes. The beer comes out in foam, but you are paying for it; they suggest you just wait for the foam to settle into liquid. The selection of beer is sub-par. NO vegan/vegetarian options except the chemical Impossible burger! I guess the chef has no real imagination to create his/her own dishes as I noticed the menu mirrors another local establishment. There is only one way to turn into or out of the place so you will have to drive around a lot. The staff and atmosphere are very uppity, does not really fit into the mountain town. The food is overpriced for the portions. We will not be going here again or recommending it to friends! Just say NO! read more

So disappointing! We had such high hopes! The first time we came here earlier this week, my mom was served a frozen bun on her chicken sandwich. She asked if the bun could be warmed up, and they brought her another just as cold bun. My mom said the chicken in her sandwich was so tough she could barely eat it. I really loved my ahi tuna tartare, but the service is truly what is lacking. My mom and I were the only people in the restaurant besides one other table of 2, and we had no refills of water or other beverages, and I had to go up to the bar after 20ish minutes of waiting for someone to bring us a check- or even come check in on us and give us refills. Today, we came in again with a few more family members, wanting to give this new restaurant another shot! After being seated, we waited for 20 minutes and no one came to take our order. It's really disappointing to see such a beautiful new restaurant falling short due to service. I want this restaurant to be successful and continue to grow, but I think service needs to be addressed. read more

First, I'd like to say we ate downstairs in The Tap Room of Tava House. Apparently, the upstairs restaurant won't be open for another couple of weeks. The trio of sliders (elk, beef, bison) were very good. I loved the pairing of different sauces(?) for each. My sister-in-law, who isn't a big fan of meat, said the Tava burger was the best hamburger she'd ever had. High praise, indeed! The ahi tuna appetizer was also very good. Beer was cold. My critique would be the wait staff. While they were very friendly and wanting to please, they definitely require some training. It seemed like none of them had prior restaurant experience. I think if they can acquire an experienced floor manager to keep an eye on staff and guests alike, offer guidance and tips, the Tap Room will be well on its way to success. We will definitely be returning. If they can up their table service, I'll raise my rating to 5*. read more
