    I have not tried any of the food except for the crème brûlée, which was very very tasty but was small. I also ordered a cocktail for my 21st birthday, the cripple creek cream, which was AMAZING! It was pretty small for the price but the taste made up for it. The inside is super nice and I am sure it will get even better once they are able to open up the tap room where you can pour your own beer. The two times I have been there I have noticed they were a little understaffed and service was probably slower than it needed to be, if they just add a few more waiters in midday and night shifts everything will be dandy!

    This review is about Tava Firebrand, the new high-end chophouse at Tava House. I've previously reviewed the excellent Tava House Taproom twice. Firebrand has been open for 6 weeks, but we wanted to try it based on our experience with the Taproom. It was a mixed bag, ranging from superb to subpar, but overall, there is much to love at Firebrand. My wife and I made reservations for 5 PM on a Friday. The only available seating was at the Community Table, which we were happy to accept as we hoped to meet new people. We arrived and were seated at a table for two. We left at nearly 7:30 (yes, this is a leisurely affair), and the community table was still empty. Odd. There are multiple menus. There is a chalkboard with multiple meat offerings, a secondary à la carte menu that includes seafood and pasta, side dishes, the chef's tasting menu, and, lastly, a drink menu. That's a lot of different menus to shuffle through. Since we wanted to try as many different items as possible, I decided on the five-course chef's table menu for July. I will fully review my wife's meal after. *Course One was Roasted Poblano Cream of Soup with green chile powder. The soup was tasty with good heat and roasted poblano, but it wasn't creamy, which seemed to be the intent. It was a decent start but not remarkable. *Course Two was Octopus & Watercress Salad with Yuzu Plum Dressing. I'm not a big fan of octopus, but I'll eat it and have an open mind in finding a chef who could change my mind. The octopus was tough, as is often the case, and it also lacked flavor. The dressing was nice, but overall, I wouldn't reorder this dish if I had the option. *Course three was Crispy Duck with Hoisin Miso Sauce. The duck wasn't crispy, and worse, it was fatty and tough. After two bites, I did something I rarely do: I sent the dish back, since the kitchen should know this dish had massively failed. The duck was almost inedible. The restaurant comped a portion off of the $85 meal. *Course four was USDA Prime Filet. Since my wife ordered a dinner that also included this offering, it gave me the excuse to upgrade to the Snake River Wagyu Filet (+$45 fee; ouch). The Wagyu was simply outstanding! Tender, cooked perfectly as requested to Med Rare, the flavor was amazing. My wife's USDA Prime Filet was also superb. Was upgrading to Wagyu worth it? If money is no object, yes indeed. But money is often an object. The USDA Prime Filet was excellent, so you don't have to upgrade unless you're uber wealthy. Use the $45 savings for lunch or dinner the next day at the taproom. I should note that my wife's request for a medium-rare Filet came out rare, but we were OK with that. We are fine eating steak tartare, so this wasn't an issue, but I wanted to mention that the kitchen is still working out how to serve the meat cooked as requested. The Wagyu filet and lamb chops were cooked perfectly. *Course five was an Artisan Selection of desserts that was amazing. Key Lime Pie had a citrus-filled white chocolate bomba, as best as I can describe this delicious little nugget. There was also a chocolate-hazelnut tart and a strawberry shortcake. Each dessert was absolutely delicious. Don't go to either the Taproom or Firebrand without having dessert. The desserts are always superb. My wife started her meal with The Steakhouse Experience ($15), a classic wedge salad with Ranch dressing and a small shrimp cocktail. The salad and dressing were good, but the three small shrimp lacked flavor and were served with what can best be described as Thousand Island dressing. The restaurant should focus on the excellent salad and 86 the shrimp and dipping sauce. For the main course, she ordered the Filet and Lamb Duet. As mentioned, the filet was excellent. The dish came with two large Colorado lamb chops that were out of this world delicious and perfectly cooked. If you're a lamb lover, order the lamb chops. I believe there is an option for additional lamb chops without the Filet, and both options are $75. The service was outstanding, with a team of well-versed fine dining servers. The Firebrand has a few oddities like a chalkboard menu that's hard for nearly half the diners to see. If you are seated to view the amazing large glass wall overlooking Pike's Peak, you will be straining your neck to see the chalkboard menu or just get a view of other diners instead. The chalkboard isn't a well-thought-out feature. There are too many separate menus, and none indicate that the steaks come with mashed potatoes (which are very good), while the à la carte menu offers, among other sides, potatoes! Many little details like this haven't been well thought out from the diner's perspective. We hope that, in time, the owners will consider the full dining experience. The ambiance is lovely, and the noise level is on the low side. The views are spectacular, and some of the food is best in class. We recommend sticking with what the restaurant wants us to believe they do very well: Steak and meat-

    From the moment I walked in to Tava Firebrand and was greater with a glass of champagne (it was nonalcoholic and so delicious) to the service, I enjoyed the chefs table 5 course dinner and every bite was sublime. Thank you!!!!

    I decided to swing by with my daughter today and check this newly opened establishment. Food was pretty good . We didn't order main courses so there is room for improvement and we will be back to try more. Menu is pretty limited as of now and I'm hoping that it will either expand a bit or be changing periodically. Mocktails were average, a bit too sweet for my taste . For the price I expected them to be a bit better. Service was interesting today, not in a bad way. I think we got encountered by 7 employees in one visit. Nice to meet you all It's a modern , spacious place with plenty of indoor and outdoor seating. Parking is free and available all around the restaurant. One thing that I was not fond of is their payment system . I found it bizarre. I've dined in so many places and was never asked for a card upfront, before ordering. We then mentioned that our payment will be in cash and waitress still wanted payment card . It was explained to us that it's the system they set up towards taproom since it's a self serve tap room. I don't think that should apply to customers that want to dine without option to use their beer on tap nor ones that chose to pay with cash. With so much fraud going around and personal information possibly leaking by using cards some customers might want to use cash. I especially chose to use cash since it's a newly opened establishment in stages of training stuff etc. Also, what about let's say, teenagers that only have cash and want to grab a bite? I just don't think that's a good system . Other than that, I would give this place another try.

    It's a pretty nice restaurant. Modern casual I guess, it'll be nice in summer. Nice views here too. The burgers had nice flavor they were just all dry (excluding meat). The key lime pie was pretty good, I enjoyed it. The mocktails were just okay. Really nice service here too. The only thing about this place is they have a policy of taking of card on tab first, even if you're planning on paying cash or not drinking. That's just something to know! I'll definitely be back though.

    Food was great! I've been here a few times but waited to leave this review. They have a weird system of not having a single waiter but rather anyone working. This was kind of a mess early on but after going a few more times they have definitely figured things out. Service was quick and food came out relatively quick too, very tasty food. I got this sandwich and I would definitely recommend (I've had it twice already because of how good it is). Will definitely be coming back!

    I really hesitate to give this review because it may just add to other people's dissatisfaction…read morebecause they will have to wait to be seated. My wife and I have been coming here for years. However today was the first time we decided to come during the summer. It's just too busy with tourists in the summer. The seating is all outside which I didn't think would be good. We like to come during the offseason when there are less tourists. All the seats are indoors and quite cramped but cozy. So today we decided to see if there was a wait. Yes there was but only about 20 minutes. Turns out the outdoor seating is great, almost like one of those rainforest restaurants except this is all natural. The food was great as always. The staff was comprised of the normal folks who are here in the winter plus a few people that I have never seen before. They all busted their butts to make sure it was a good experience. Keep in mind this is a very small town with limited resources. I'm extremely impressed with the level of service we received. To top it all off there was a guy there with his guitar named Phil Volan. Phil added another level of ambiance that I didn't expect. If you are planning on a visit be prepared for a wait but you should have a memorable time.

We WILL be back!!
