    Apple hand pie and chocolate chip pecan groundbreaker

    I love The Bakingtist and I'm so glad that Heidi (the owner) was finally able to open her own brick and mortar. Located in part of the old Straight to Ale on Holmes, her new space is in a great location and has been revamped to look like part science lab, part classroom, and part bakery! I love the concept. The Bakingtist is not just a bakery; it aims to spread a love and appreciation for science. The interior of the new shop is full of fun scientific references: little beakers as flower vases, famous faces in science, a periodic table of the elements but with common ingredients in baking. There's also a big window where you can look in at the kitchen and see Heidi and all the staff hard at work making delicious goodies! So cool! For now, they are still settling into the groove. They offer coffee and fresh-squeezed OJ for drinks and a variety of pastries, some of them rotating based on availability. They're popular - they'd regularly sell out at markets and such - and that can still be the case here. They're obviously working hard to bring staff and product up to scale. Personally, I think it's worth it to be patient. When I visited at around 10:30 on Tuesday, they still had a pretty good selection of items available. The young woman working the cash register and making coffee was lovely and eager to help everyone in line learn all about what they had to offer. I wound up with an apple hand pie and a chocolate chip pecan groundbreaker cookie, which is a special, super large (1/3 pound!!) cookie that, when heated up, turns as ooey gooey and perfect as if you'd just pulled it from the oven. I really wanted a blueberry muffin instead of a hand pie, but I think there was a miscommunication that I was mostly at fault for -- the staff member had just gotten done explaining the apple hand pie and I said, "Sounds good. (pause). I think I'll have one of those." I'd pointed to the blueberry muffins, directly next to the hand pie, but I think she thought I meant the hand pie. Whoops! Mistakes happen and that one was more on me than her. Just gives me a reason to come back again. ;) At any rate, wound up not being mad about the apple hand pie at all because, like everything The Bakingtist makes, it was AMAZING. Butter in every bite of a perfect flaky crust, partly tart, partly sweet apples, great ratio of filling to crust. It was sooooo good, and a very ample size. The groundbreaker was just as delicious as the last flavor I tried back on a market day, and absolutely loaded with chocolate and pecans. I shared with my husband and he said he wished I'd gotten one for each of us bc neither of us actually wanted to share! Extra bonus: the box my pastries were packaged in to go had a cute science themed joke written on it. Adorable touch! Product is impeccable, staff are lovely, and for anyone who wonders at the price...just remember that Heidi is committed to paying ALL her staff at least $15/hr, which can be a pretty big lift for a new small business. Please let them take care of you by you taking care of them! You won't regret it. :)

    Finally opening the b&m store!! I was lucky to go to the pre-opening party as a +1, and gotta say the place looks amazing! The science theme is just precious and sleek. The furniture is reminiscent of school, but still looks modern. Lots of light inside and beautiful displays. Now, most of Huntsville should know by now the Bakingtist from the local farmers markets, but if you don't you're missing out! Their signature groundbreaker cookies are huge and decadent, and their breads and croissants are delish. Today I also tried a mocha and a bread roll with conecuh sausage that was so perfect. They should be opening 12/17/22, and they'll be open Wednesday through Sunday afterwards, which is fantastic as the Sunday pastry options have been limited in this town. Being she makes delicious pastries, the space is beautiful, and on top of it she pays her workers a living wage, this is one local business I will support and recommend to everyone!

    I had a ham and cheese croissant and split a cream filled something I can't remember the name of. ‍ Everything was absolutely wonderful. The pastry is flaky and perfect and even more so when you know how much care and time goes into the layers. I took a loaf of the sourdough home and it was wonderful as well. Sour enough without puckering your mouth too much to enjoy it. Great crust, soft inside, perfection. The shop is pretty and interesting, the "periodic table" was created by hand by the owner herself! It's amazing and definitely with a close look. We got to speak with the owner and it's easy to see she has a real passion for what she's a doing and is excited to be part of the Huntsville community. The staff is so welcoming and are clearly bought into the process and products. Vested staff is always a good sign in my book. Please check them out and support this small, locally owned business! They're worth it!

    UPDATE: The Bakingtist now has a "brick and mortar" store. Thanks to an alert from a fellow Yelper, I found out that, mine and obviously many others favorite pastry chef now has a dedicated building. As buildings go, this is an upscale location. The decor is modern and interesting. Noteworthy is the Periodic Table of Baking Elements! I'm told the genius behind this was created ie hand painted by the owner/proprietor herself. That alone is impressive. The baked goods are also a reflection of this genius at work. From the Website: Beautifully fermented sourdoughs and focaccias. Buttery brioches swirled with cinnamon and chocolate. Delectable pastries with scratch-made fillings. Melt-in-your-mouth cookie. I can personally attest that ALL of these claims are true.     I've actually been following The Bakingtist for about 2 years on social media and was really excited that she was finally in a brick and mortar location, as I always seemed to go to the markets on the weeks she wasn't there. :D Decided to pop in quickly yesterday and grabbed one of the apple hand pies and a sausage pastry for my husband. I haven't got his review yet, but the pie was delicious and flaky with a nice crumble and amazing filling. I'm not going to lie I really wanted to try everything, but the prices are a bit steep for me (understandable with the price of goods + labor), so I'll just have to slowly work my way through the menu. Totally worth it for quality baked goods. Also the flowers in the little beakers are adorable.

    I found a new decadent dream cookie. After reading the recent press about her and her cookies I had to try. I visited her at the Mid-City Farmer's market today. She had 4 varieties of cookies on the table so I bought one of each. They are not marked so I was a little confused when I got them home, except for the obvious chocolate cookie. The cookies are thick, dense, and filled with nuts. Given they were sitting in the extreme heat, I think they were a little harder than normal. I liked the taste, although the denseness of the cookie may not appeal to everyone. I will definitely visit again and can't wait for her store in downtown Huntsville to open in August or September.

    Most over priced and underwhelming sandwich I have had in a long time. The pastries looked good but a $17 + 2 up charge for fruit for a sandwich with 3 undercooked pieces of bacon and a "sunny side" egg and was over cooked and rubbery. The coffee was ok. But no plans to return any time.

    Stopped by and had a ham and cheese croissant (bought 2), a blackberry basil tea, a peach latte, and bought a chocolate croissant - price was $37 (way too much). I should have asked for a receipt to see why it was so expensive. While I enjoyed the tea, the ham and cheese croissant was very disappointing. The croissant was flakey and delightful, but there was maybe one slice of ham and one measly piece of cheese. While I liked the tea, I likely won't make the drive downtown to try anything else.

    Amazing bakery! The staff is the kindest and genuinely cares about providing the best service and the best products. We've been following the team since the owner was working at farmers markets to the brick and mortar shop, and even attended their first baking classes. We continued to be amazed by every great experience! We even had the Groundbreaker cookies as wedding favors when we got married in September, the staff was nothing but fantastic with all of our questions and requests. So happy to be a part of their journey here in Huntsville!

    We love the Bakingtist and have made this our regular weekend morning hangout spot. Their pastries are fantastic but are also in short supply at the moment so get there early (also they're hiring more bakers - so please help produce more lovely doughs for our benefit). Check them out when you can but save some pastries for us please.

    All I can say at this point is, frustration. When this business was run out of the local farmers markets, it was a hit. The baked goods were superb, and often there was a line to get them. However, very often, the owner would run out of product for her customers. Often the most popular products would run out in less than an hour. This led to a lot of frustration on my part, as every time I would go down to the farmers market looking for her products, they would often be gone. A reasonable person would think that she would adjust the amounts of what she needed to accommodate for what customers wanted, but that didn't seem to occur at all. I put all my frustration aside, and went down to the new store front for the first (and last) time this morning, almost an hour after they opened around 8:00 AM (they open at 7:00 AM.) When I arrived there, there was only one employee working, who was making coffee, the kitchen was completely empty, and there was no product available for sale, I intended on walking out with enough cookies and pastries to feed everyone in my office, but instead walked out frustrated just like I used to at the farmers market. I'm not sure what business sense this makes, but my prediction is that this business will not last long. This truly is a shame, as her products are very high-quality, but unless you're prepared to be disappointed each time you show up there looking for something, I would suggest you look elsewhere. NOTE TO OWNER/OPERATOR: You need to stop running your business like it's a hobby and start taking it seriously. You have customers that will abandon you, and employees who are depending on you to survive. Best of luck.

    Wonderful staff. Our big training group popped in one morning. Bakery items were marvelous and they staff did a great job getting our big group served. I got regular coffee, I prefer a darker roast but still drinkable. Thanks ladies!!!

    I'm not vegan, but I do like trying vegan food, and have been looking forward to trying The Veggie…read moresince I first heard about them. Located in the old home of Happy Tummy at Lowe Mill, The Veggie retains the open, airy feel and has added some bright and beautiful colors to the walls, menu, and food. I opted to order online for pickup. Online ordering was fairly easy, though I was never able to find my way to where I could order any kind of drink. I really wanted to try their lemonade (heard great things!) but couldn't find an option for that. Maybe it's meant to be that way, maybe it's because I was ordering on my phone as opposed to a computer, or maybe I'm just a dunce. But I was able to order a lemonade at the counter when I got there to pick up my food, so at least it worked out in the end. I was told my food would be ready at 2:30. I was working in the Mill so I showed up right on time. I had to wait a couple extra minutes but not more than 5, so I consider that pretty good. They were decently busy. Masking is encouraged at this restaurant still, and as far as I could tell all staff were masked. I appreciate that, personally. The staff member I interacted with was pleasant and prompt. I do agree with other reviewers that the dining space itself catches a decent bit of the smoke/scents from the kitchen. I didn't find it overwhelming and it's a product of the space they're in, but just something to be aware of if you're super sensitive to that. I ordered the chickun basket -- fried oyster mushroom "chicken" strips with French fries and a dipping sauce of my choice (ranch, obviously). The only lemonade available was charcoal lemonade, so that's what I had to drink. If you want vegan food that resembles "real" meat, this should scratch that itch. The bigger pieces of mushroom still had a slightly spongy mushroom texture, but I'd say about 80% of my mushroom pieces were similar enough to chicken that I didn't really miss it. The batter went a really long way -- almost exactly like really solid chicken tender batter. It was crispy and crunchy. I will note the size/shape is closer to a nugget than a strip, at least in my order. That was fine for me! The ranch, being vegan, was (for me) missing a little thickness from the loss of buttermilk, and also a little herby for my personal preference....BUT, for vegan ranch, I liked it! I've had much worse NON-vegan ranch in my time, lol. I liked the fries well enough, too. The lemonade didn't have any weird flavor from the charcoal (idk what charcoal lemonade is supposed to taste like normally so...yeah); it just tasted like regular, albeit quite good, lemonade! It was pretty acidic (the roof of my mouth complained later that evening, lol) and not crazy sweet, but I personally like that in lemonade. I had two coworkers that later ordered their lunch here as well and they both seemed to enjoy their choices (another chickun basket and something that looked like a salad/greens bowl). All in all, I'd be happy to return to try brunch or perhaps their take on a Philly -- that looks good. I'd also order my same meal again. Good job to The Veggie for providing tasty vegan food that anyone can enjoy!
