    The CPR was last week's food truck at my office and they did a great job feeding 120+ hungry employees. I had the Miss Piggy and it was probably one of THE BEST pork sandwiches I've ever had. The crispy, buttery bun. The tender pork. The crunchy and slightly sweet coleslaw. All of it. Tots were solid too. Just awesome.

    The Miss Piggy sandwich is beyond amazing! My Tennessee fiancé says it was legit barbecue - even if they do have green chile on their menu. I got the loaded tots with bbq blackened chicken, and my tots got over salted the first time. The reason I still give 5 stars is because when I took them back, they not only gave me no hassle in redoing them, but the second round was perfect! I would definitely eat here again, the gentleman running the truck was super friendly and helpful. Although I liked the chicken, the pulled pork was my favorite in the end. Highly recommend!!!

    One of the highlights from the Taco, Tequila and Cerveza Festival was getting to discover the sheer awesomeness that is the Colorado Pig Rig. This happened to be the first food truck Briyouncé and I stopped at that day; it was basically the universe guiding us to the perfect selection of tortilla wrapped goodness. My personal favorite was their Korean Bulgogi Taco: Skirt steak marinated in a sesame soy adobo, chopped kimchi, sriracha sour cream, cilantro and fresh raquelitas tortillas. I never thought I could love steak more than I already do until I took a bite of that taco. Every mouthful was more delicious than the last as Cecilia And The Satellite played in my head, "For all the things my hands have held, the best by far is you". We were so in love with their food we decided to ask them to chat and they were kind enough to feed us another round. Brennan or Brendan Birch, (I'm sorry dude you were a bit of a mumbler) worldly good guy of the Colorado Pig Rig team, brought over three of his recommendations: Cuban Mojo Taco - Cuban Citrus Braised Pork Shoulder with White Onion, Cilantro, Avocado-Lime Crema & Queso Fresco on Fresh Raquelitas White Corn Tortilla Korean Bulgogi Taco - Skirt Steak Marinated in a Sesame Soy Adobo. Chopped Kimchi. Sriracha Sour Cream. Cilantro. Fresh Raquelitas Tortillas (My personal favorite) Takos De Alambrè -Hickory Smoked Bacon. Guajillo Chile & Citrus Marinated Skirt Steak. Bell Peppers. Melted Oaxaca Cheese. Jack Cheese. White Onion. Cilantro. (Brennan/Brendans personal favorite) In my mind the Korean Bulgogi still reigns supreme regardless, all the tacos we had from the CPR were happy dance worthy. It was also great to learn a little more about life on the Pig Rig according to Mr. Birch (Once again super sorry I swear you mumbled!) the 3 to 4 people who work on the Rig, "Love each other just as much as we ever could or ever have". You could definitely see the love the crew had for each other as they posed for arguably the cutest picture I've ever taken of a food truck vendor. A big thanks to you guys you're all to top 20 worldly good guys!

    This is probably my favorite spot in town. If your going to splurge do it here. I love the great customer service I just love the flavors

    A toast before tacos

    I used Trevor and his team to cater my wedding on May 27. Communication leading up to the event was very good and they accommodated a 50% increase in my guest count with no issues. The price was reasonable and it was nice to have high quality food provided without having to give access to my tiny kitchen. Trevor was super easy to work with on site, even turning off his generator for our ceremony upon request. And he also calmed me down as I got nervous when I was about to walk up the aisle. I had five different appetizers served before the wedding and all were amazing. My selections were Mexican BLTs, pulled pork sliders, beet/goat cheese crostini, caprese skewers, and Mexican bruschetta. Trevor and team set everything up in my dining room using table decorations provided by them. It looked very good and I was so pleased that was one less thing I had to deal with. After the ceremony the food truck was open for the taco dinner. Four different options were available for my guests. Guests ordered and were provided a buzzer that went off when food was ready - much better than just hanging around the truck waiting for everything to be done. Everyone raved about the food - tacos, appetizers and the CPR hot sauce bar. All in all, I was very pleased with my experience with the Colorado Pig Rig and would highly recommend them for special event catering.

    We had The Colorado Pig Rig cater our wedding. They are prompt and professional and the food is amazing. Everyone at our wedding raved about the food and we could not be happier with the experience. We love Trevor, his team and this food truck so much my mom ended up also using them to cater her retirement party! Highly recommend trying this food truck if you see them around or book them to cater your party!

    The Miss Piggy is a to die for bbq sandwich! Try it and I promise you won't be disappointed!

    The smoked beef sandwich was pretty good and the fried Mac and cheese tots were fantastic. I was a fan of their bbq sauce as well

This long skinny establishment - not necessarily super spacious - can offer you a decent food that you can count on. You don't need anybody to go with - you can be a solo diner because this place is not intimidating in any way. It's that casual. I think this establishment was born in the old Stoney's Cantina space. Whether the place was huge enough to create two businesses (and thus La Loteria occupied half of it), I sort of saw some "remnant" of Stoney's was the impression that I got. Whatever I am correct on this or not, this casual Mex place is all about vivid pastel colored interior where red is mostly dominant. Intriguing murals on walls 360 degrees are quite impressive. Once you are inside, a huge arrow to direct the people to order to their left at the ordering counter. That ordering counter extends all the way where you'll see some bar seatings. The right side of it mostly has tables for small to large groups of people. Like I said, this place is not huge but at the same time, people don't stay long to dine; the turnover is quite quick in a way. The restaurant also gets many walk-in to-go order placers as well. I got me the Aztec Bowl for to-go. This dish is only $11 (as of early May of 2025) and is a vegetarian item. I consume a lot of vegetarian diet and yet my instinct loudly spoke to me to add some protein to it. Whether or not you can keep it non-meat to stay in the vegetarian zone, adding some protein to this dish is a must as if it was by itself, it would be a bit boring because it only has some greens and some slices of avocado. As the add-on, I got me the carne asada ($5.00) that comes with rice. Not bad.. I didn't eat it right after I got home; I meant to get it to eat it the next day which I did (this AM.) It was still fresh where nothing tasted stale. The carne asada was well-cooked with seasonings. In other words, it wasn't salty at all but held good flavors. Now on the receipt, I saw a charge of what's called "takeout service fee" which is 18%. I kind of assumed that this was mostly the mandatory gratuity. At the end of the card transaction, I remember that the different gratuity percentages were listed on the machine and they were quite small because of this fee. It'll be up to you to add more if you wish. Some people might complaint about this mandated system and yet I kind of understand that businesses nowadays must survive by navigating through the rising cost of living. As we have seen our favorite businesses disappear in the recent years, I am here to support them by whatever I could within my power. Whereas the parking on Broadway is a pain in the neck at any time of the day, if I think of a casual Mexican dining in the Baker neighborhood next time, I may stop by here. It's a good establishment to know.
