Niman holds itself in high regard for its humane treatment of its livestock and for the quality of the feed they use. We were doubtful, and pleasantly surprised at the high quality of this pork. It was exceptional. Until it wasn't. We put their loin on the menu as a Pork Chop. A great hit! A few weeks in we placed our third order. Unfortunately, it was not the same as the previous orders. The meat was damaged. In the industry what we got is called PSE pork; the letters stand for Pale, Soft, Exudative Pork--the meat is mushy, liquid runs out of the muscle cells and if it's really bad one can put a finger through it like mayonaisse. There are only two known ways this can happen, and it should never happen in a top quality, expensive "heritage" product. Either the animal was abused (scared, beaten, attacked) before slaughter, or the carcass was improperly handled after slaughter (cooled down inapproriately). I tried to make use of the product but was sorry I had purchased it; (we usually do not buy meat products from large concerns like Niman as this is the kind of thing one gets from a "name"). When I could not get a good result with this meat I wrote to them via their website, hoping they would rectify the problem and assure us it was an anomaly, but like all large companies they ignored us. I grew up in the meat industry and have over 55 years experience handling and cutting meats both in our family market in Carroll Gardens, Brooklyn, and in my restaurant in Norwalk CT. I know what PSE pork looks like and I know what proper customer service looks like too. By the way, PSE pork will not hurt people who eat it, and a lot of it is eaten in product meat (sausage, baloney, etc) but it is tough and dry when cooked and not something one finds on the menu of a New York Times 3 Star restaurant. Good bye Niman Ranch. You have been found unworthy by Pasta Nostra in Norwalk.

The owner, Dustin, is incredibly rude and irresponsible. We rented a roaster from him that failed, leaving our fundraiser event without enough food. They don't answer their "Emergency" numbers that they give you as a safeguard. The roaster was a safety hazard and the gas leak could have caused a huge accident at an event with 200 people in attendance. Regardless of what you want to use Arapahoe Hog Roasters for, you need to know that if any issues come up, they will not take responsibility for them. I called them and wanted to have a calm discussion about the day's events to see if we could come to a conclusion that would make both sides happy. Dustin began yelling at me and told me to "go call my f'n lawyer if I wanted to do something about it." Shortly after this, he hung up on me. Now that's great service. Not to mention, this event that we were putting on was to benefit children and adults with mental and physical disabilities. This company couldn't care less about anything like this in their own community. People like this should not be allowed to run businesses where they deal with the public. He looks like Superman flying over the dirt! Trying to make sense of the wall menu was difficult. Almost too many as to be confusing because several sandwiches are similar in content. The huge menu on the wall doesn't give prices for all the items and it's very deceptive in my opinion. Our bill for a Chicago dog, a pastrami sandwich and a Cuban sandwich with one order of fries and 3 drinks came to over $50 which is stupid pricey IMHO. There were at least 5 people working behind the counter and our order came out fairly fast. I felt the sandwiches were very skimpy on the meat and nothing came with a side included. The Cuban sandwich was underwhelming and not much flavor. If you want a wonderful deli sandwich go to The Bagel Deli off Hampden and I-25. The absolute best in my opinion.
