Considering the convention traffic, I'm guessing they wanted to have options for business dinners. ‍ If you're going for a date or with friends. I suggest Rojo - it's loud but it's a vibe. The food: Mostly the same menu as the old locale, but why mess with near perfection? A few adds - the brown butter cauliflower (very good; would love a pinch of flaky salt) and the basque cheesecake. The croquetas got a new sneaker! If this is your first time, you cannot miss the classic tartare, the cotton candy foie gras, or Neptune's pillow. For a bit of extra fun, try the bison carpaccio. The service: impeccable as always. We sat with a server named Sunday who not only knew the menu backwards and forwards, but gave the exact right amount of pomp and circumstance. (Order the bison and find out what I mean.) Shout out to Kirin (food runner) and George (Sommelier) for pride in their craft and adding to the experience. Parking: this is the only real drag. If you're going on a Sphere concert night, expect to pay $30 for event parking. Take an uber or suck it up - you cannot miss this meal.

That said, this review is really about my disappointment with some of the menu changes. First, they removed the oxtail consommé, and I'm not exaggerating when I say I still dream about that soup. Second, the caprese salad used to be my favorite bite in all of Vegas, and I eat at all kinds of restaurants around town, so that's saying something. But they no longer make it with dehydrated tomatoes. Now they just slice cherry tomatoes in half, and it's lost that perfectly blended flavor. The tomato taste is way too overpowering now. The A5 Philly cheesesteak has also changed. There's noticeably more cheese than before, which is a bit much for my taste. All that said, the service is still top notch and the food is still good overall. I'm just genuinely sad that, with these changes, it's no longer my favorite restaurant in town.

The quality was there, the flavors were good, and it's a strong BBQ option in a city where great barbecue can be hard to find.

From a killer cocktail recommendation to one of the best steaks I've had in my life and coming from Oklahoma City, where I work a mile away from the stockyards and can get great quality fresh beef six ways from Sunday, that's saying a lot. I usually despise most things truffle but if I was forced to eat that truffle mac and cheese every day for the rest of my life I would consider it a life well lived. While I would have never ordered it on my own, a customer next to me recommended the porn star cocktail and I have to say it was also one of the most delicious things I've ever had in my life.
