We spoke at length with the manager after our dinner and tried to guess the ingredients in the outstanding sauces. The sassy sauce had in addition to the honey and Dijon, some cayenne pepper, smoked paprika, and cumin. Not too spicy, just enough zip to make it interesting. The pork chop was also amazing.
