    Went here on a Saturday evening and we were promptly seated. We had ordered a couple appetizers including a gnocchi salad and truffle fries. The gnocchi in the salad had a good crisp and the flavor of the dressing with the parmesan shaving balanced the salad well. Truffle fries were good too. For my main, I went with their salad. A bed of potato and sauce with the steak sliced on top. I'm not going to pretend like I remember what everything was as there was a lot of flavors happening, but somehow it just all worked out well together. For dessert, we went with the pistachio tiramisu and that was a delicious way to end our meal...soft mouse, nice crunch of the pistachios. Overall, I would come back and recommend this to folks.

    This was a wow spot for presentation, taste, service and all the above! The menu has so many unique food combinations that impressed us and bought us in! We had a nice young lady named Willa whom was very welcoming and great at explaining menu questions and did a great job serving us! It was a delicious spot and relaxing after a long day of driving and after a dip in the hot springs just over the walkway bridge! We highly recommend and the price is worth the meal

    Finding a destination dining spot to write home about in touristy Glenwood Springs was not on my bingo list, but I'm glad others have not been sleeping on The Pullman! My SO and I stumbled in during a cold December evening seeking a cozy but elegant meal, and that's exactly what we were delivered. We did not have reservations, but I'd definitely recommend doing so if you have more than 2 people since it does get pretty crowded during dinner. We got a seat near the windows where there was full view of the lively bar, kitchen, and diners. There's definitely a pork theme here, evidenced by the literal writing on the wall and not subtle pig statue in the center of the dining room, so we took this as a sign to order some pork dishes. But if you need to satisfy some vegetarians, Pullman makes sure that there are plenty of options on their rotating menus as well. As our apps were being delivered, one of the staff noticed that our table was a little wobbly and immediately went to get a shim to balance the leg. Others made sure that our water was always filled, and our cutlery was exchanged between courses. These little notes really gave our experience the extra touch, showing that the waitstaff truly wanted you to enjoy your meal. While the apps were lovely, the star was definitely the oh-so-tender Roasted Pork Shoulder over creamy polenta, but the Yuzu and Ricotta Agnolotti and Winter Stew were close seconds. I found myself looking forward to trying each new bite of something, just to remind myself of the flavors and texture, and the stew was like a hug from inside out. One of the added pleasant surprises was the appearance of some Christmas carolers who made their way into the center of the restaurant during our meal, belted out a song, and then left as quickly as they came. You'll never lack for entertainment in Glenwood Springs!

    Amazing vibe, laid back but elevated. Great service and quick with food. Our favorite was the Wagyu & Brussels. Hamachi needed more flavor. We would definitely recommend!

    We have gone to this place a couple of times already, and it's always been a great experience. Last night we made a early dinner reservation and we had a great time again. Service was fantastic and the place looked amazing all decorated for the winter holiday holidays. Nice and cozy! We ordered the chicken lever pate as an appetizer, and then I had the steak salad and my husband, the Wayu steak. My salad was great, but it's so filling that it could be totally shared by two people. My husband really loved his steak as well, and the chicken liver paté is definitely one of our favorites.

    This place is amazing! The server was incredible; personable and funny. I had duck confit cassoulet, cream of mushroom soup and apple cider with pecan rum, all recommended by the server; all amazing. I had a wonderful experience and would highly recommended this place.

    I made reservations ahead. I highly recommend having reservations. We were scheduled for right when they opened on a Saturday night. There were several tables of folks and we were all there on time, so they were busy as soon as they opened. We were seated and Bill, our server, took our drink orders. I had a lovely wit beer. Bill came back once we had our beverages and had time to look at the menu. He went over the specials. My brother-in-law and sister-in-law ordered the special of sous vide short rib with parsnip potato puree, parsnips, carrots and a shiitake reduction. They loved every bite. My husband had heard about their amazing pork chop so that was his selection. It was an 8oz cut that came with farro, shishito, heirloom tomato, bacon vin, and palisade peach relish. He also thoroughly enjoyed his meal. I have a plethora of food allergies, so many times I find I have to ask for an accommodation in order to select something from the menu. I asked, and Bill advised it would not be a problem to leave the peas out of the Rock Shrimp Carbonara, which was my selection. It was a delicious combination of guajillo spaghetti, pancetta, cipollini onion, egg yolk jam and parmesan cheese. The spaghetti had such a wonderful texture and flavor. The restaurant itself is open so you can see into the kitchen. It is located on a corner with lots of big windows and the view across the river quite nice. This was a lovely dining experience, I hope to come back again.

    Service is excellent! Hostess, wait staff, all employees are really top notch. Location is convenient. Restaurant is clean and comfortable. We each had an appetizer, deviled eggs and oysters on the half shell and both were good. Wagyu burger was very good with fries. Steak salad was DRENCHED in dressing and so salty I ate about 1/3. If you select the steak salad ask for the dressing on the side. I do NOT complain about a high dose of salt but this was really over the top. Dressing on the side I think it could be fine, there was just an over abundance of very salty dressing. Had the service been less than excellent I'd say 2 stars because the steak salad was really bad.

    Quite the gem. The menu is a variety of seasonal tapas, which is awesome because you get to try a multiple things instead of committing to just one dish. The standout for us was the seasonal pozole verde - insanely flavorful, honestly better than most homemade versions I've had. The pickled deviled eggs were great, the tapas fries, gnocchi, and salad were all solid hits too. The savory beignets were tasty, though the cold cream underneath didn't quite pair right with them. Craft cocktails were delicious, service was great, and the vibe was homey and relaxed. I'd absolutely come back and feel confident ordering literally anything - doesn't seem like there's a bad choice on this menu.

    We came here for my birthday after the restaurant that I wanted to dine at was not open. We were seated right away. The restaurant was spacious with several tables. We placed our order with our server but when our food came out it was incorrect. I was first brought out a meal that was not mine. I explained what I ordered which was a medium well steak but it was then brought out well done and way overcooked. My friend ordered her burger well done but hers was brought out medium well. During our experience our server was very nonchalant and unapologetic about getting our orders wrong. Later the manager and chef came out. I believe his name was Matt. They were apologetic and my order was finally made correctly. In the end the manager made amends to try and rectify the situation. I appreciate his professionalism. In the end my meal was good and the dessert was ok.

    If you're looking for a food experience outside the normal restaurant menu this place is for you. The menu was small but its sources ingredients locally. They had several craft brews available and the one they recommended was quite good. The 6 oz colorado wagyu burger was well made and tasted great. However, my companion ordered the spinach & ricotta agnolotti and was quite disappointed. It appeared to be as described on the menu but was a very small portion compared to some of the other entrees we seen being delivered to other tables including my own. The hostess was great, the server was adequate but when speaking to us it felt as if he was speaking down to us. The Pullman was not for us, but appeared to be a popular spot. Overall the food and dining experience were not worth the price.

    Janey was our waitress and she was amazing! Had great recommendations and would request her next time we go in! The food was top notch some of the best food we've had in awhile! Do not skip the pimento crab dip!!! The deviled eggs were SO good! The steak was incredible. Desert was the best, don't skip that either!!!! Large indoor area cute bar area and patio too! I'm still craving the steak this morning after our amazing dinner last night!!!!

    Yet another Yelper from Denver here to praise the Pullman. We had an amazing meal with creative menu offerings and cool vibes. The restaurant was packed on a rainy Wednesday evening and we were lucky to snag a seat at the bar (pro tip- make a reservation). The service staff was engaging and it was clear to see this was a place a lot of locals favored. We ordered a salad and a pasta dish off the menu for meals and it was the perfect amount of food. The gnocchi may have been the best thing I've eaten in Colorado. The flavor profile from the mint and meaty additions complemented each other in a way I didn't expect. The chicken on the salad was cooked and seasoned perfectly- it was clear they excelled at what they offered.

It's located on the lower level of a building and below street level. It's right below Bonfire Coffee so if you see that store, park there. You'll miss it if you're looking for an obvious sign. They may have some small plastic signs in front of some dirt parking spots you might be able to look out for. If the parking spots are taken, you're screwed. Do your research, check out the pictures on yelp. We were scheduled for a 2pm tour ($20 per person). We got here at 1:20 or so and went inside to see what the process was for check in. A guy told us that they were closed and to come back at 2pm. We were dropped off so we had nowhere else to go. There certainly were no businesses around to visit. We decided to just sit outside on the patio where they had some chairs and tables and enjoy the view. The view is certainly beautiful. The brewery overlooks a river and walking path. There's a bridge if you walk a little bit north of the brewery that may get you to the walking path. I would consider this a boutique brewery, catering to those special craft beer nerds who love their sours. I imagine only locals come by and those who care enough about good sours to make the 3hr+ drive from Denver. The bathroom was clean and well maintained. There was a shower in there so I'm guessing the brewers spend a lot of time in the warehouse. Our guide, John, was very entertaining and loud. There was no issue hearing him as he guided us through the history of the brewery and the brewing process. There were probably 30-40 people who came for the tour. The portions were good and of course, the beer was too. The main reason we came was for the bottled beer. Casey doesn't distribute to liquor stores (as far as I'm aware & at the time we went in late 2018) and so the only way to get their stuff is to go to the brewery directly. The whole wings are legit chicken quarters and the Jamaican Jerk was not playing around - a punchy jerk seasoning that had both of us drinking deeply from the spice, while the Hot Honey was a pleasant crowd-pleasing mix of flats and drums with a solid sweet to spicy ratio. All in all, we enjoyed our wings but probably would try coming when things are a little more lively so it's easier to ignore the ambiance.
