I'm leaving yet another... 5 star review for The Pullman because every year I come dine at this restaurant I am blown away. First off, the most notable thing about this experience was the genuinely most amazing waitress I think I have ever encountered, Grace. Grace was the kindest soul, she took such amazing care of us and went ABOVE AND BEYOND. Me and my family will go out to eat now and say "she was good but not as good as Grace". Second off, The food was AMAZING per usual. I had the Wagyu steak and it was cooked perfectly, I usually hate going out for steak because I find it to never be seasoned as much as I'd like but this took the cake. The blue cheese dip with chips was so delicious, like possibly one of the best things we have ever tasted. We also tried to carrot cake sorbet which I know sounds odd but it was so delicious, you can tell the kitchen staff puts their heart and soul into this food. My husband got the special, which was like a Turkish ricotta stuffed pasta and it was AMAZING. Even my sister who got the wagyu burger, AMAZING. My only critique was the hostess was very rude to my family for no reason when we walked in which almost turned my parents off from trying to the most amazing restaurant. Luckily, the service got amazing after that. Everyone was so kind and helping everyone, just a great atmosphere. They also had the Knicks game playing which was great haha. I can't wait to come back next summer for my favorite meal despite living states away we will always make it back to The Pullman. read more

I started with the pickled deviled eggs - little vinegar taste with a slightly sweet filling is a perfect combination. 10/10 The Steak Tartare is unlike any tartare I've ever had before. It comes on this homemade tater-tot that's shaped kind of like a piece of bread or a cracker. I wasn't expecting it, but it made the dish. There is some sort of sauce drizzled, which tastes like an egg yolk base. I scraped it with my fork so I could eat all of it! So delicious! Finished with the Pierogies. Handmade, thin wrappers with perfect, delicious filling. It comes in a bowl with an amazing sauce I couldn't get enough of. I literally used a spoon to drink it! Traveling? MAKE THIS a place you stop! At 1st glance everything i read in the menu put me off... bougie. Words and names i couldn't pronounce nor had a clue of what they were. To be safe we started with small bites wow! I would have never known Glenwood Springs has a serious food scene, and this place is a stunner that would give top restaurants in big cities a run. Truly one of the best dinning experiences I have ever had. The use of locally sourced meat from CCR and Law's Bourbon is such a great add. The atmosphere is trendy and cool, way above an average "mountain town" dining but still warm and friendly. our service was absolutely perfect. Food - the steak tartare is completely unmatched in presentation & preparation. I love traditional steak tartare but this was a really great take on it. The menu has a considerable presence of peas and beans incorporated into this dishes which is a unique touch from other high end restaurants. The dishes were amazingly plated, and the tastes were so tremendously brought together with quality. Do NOT miss the pistachio tiramisu. The absolute best dessert I have ever had. Went here on a Saturday evening and we were promptly seated. We had ordered a couple appetizers including a gnocchi salad and truffle fries. The gnocchi in the salad had a good crisp and the flavor of the dressing with the parmesan shaving balanced the salad well. Truffle fries were good too. For my main, I went with their salad. A bed of potato and sauce with the steak sliced on top. I'm not going to pretend like I remember what everything was as there was a lot of flavors happening, but somehow it just all worked out well together. For dessert, we went with the pistachio tiramisu and that was a delicious way to end our meal...soft mouse, nice crunch of the pistachios. Finding a destination dining spot to write home about in touristy Glenwood Springs was not on my bingo list, but I'm glad others have not been sleeping on The Pullman! My SO and I stumbled in during a cold December evening seeking a cozy but elegant meal, and that's exactly what we were delivered. We did not have reservations, but I'd definitely recommend doing so if you have more than 2 people since it does get pretty crowded during dinner. We got a seat near the windows where there was full view of the lively bar, kitchen, and diners. There's definitely a pork theme here, evidenced by the literal writing on the wall and not subtle pig statue in the center of the dining room, so we took this as a sign to order some pork dishes. But if you need to satisfy some vegetarians, Pullman makes sure that there are plenty of options on their rotating menus as well. As our apps were being delivered, one of the staff noticed that our table was a little wobbly and immediately went to get a shim to balance the leg. Others made sure that our water was always filled, and our cutlery was exchanged between courses. These little notes really gave our experience the extra touch, showing that the waitstaff truly wanted you to enjoy your meal. While the apps were lovely, the star was definitely the oh-so-tender Roasted Pork Shoulder over creamy polenta, but the Yuzu and Ricotta Agnolotti and Winter Stew were close seconds. I found myself looking forward to trying each new bite of something, just to remind myself of the flavors and texture, and the stew was like a hug from inside out. One of the added pleasant surprises was the appearance of some Christmas carolers who made their way into the center of the restaurant during our meal, belted out a song, and then left as quickly as they came. My first review I wrote immediately after the visit magically "disappeared" so here is my reattempt- It was the very end of February and our first time in Glenwood Springs; this restaurant was recommended by a friend - Inside there is a fun pub/ bar yet somewhat classy vibe with brick walls and large screen tvs on display. The host was pleasant and immediately took us to a table for two. After more than a few minutes, a waitress arrived. I can't even tell you her name, bc she never introduced herself; she basically walked up and asked (almost annoyingly) "hey, are you drinkin' or what?" - the whole night she had this attitude and barely checked on us. More on her later though... I ordered the bomb diggity [bourbon, alchermes, cinnamon, spicy peppers, lemon, szechuan bitters] - it was disappointing for me as I anticipated more "burn and spice" with those ingredients but was actually more on the sweet side, but not a bad cocktail by any means (just less my style). My wife ordered the get squashed [tequila, dry curacao, allspice roasted squash, agave, lime, hickory salt rim] - had this with mezcal instead - which was what I would call a very fun cocktail and would definitely get again! We ordered the Steak tartare for an appetizer, followed by the Red wine cavatelli for the wife and pan roasted colorado striped bass for myself. After a decent amount of wait time, our entrees arrived (delivered by food runners)- We ask, what happened to our appetizer? They indicate they will find our server. Our unnamed waitress comes back to the table and made a comment something to the effect of "the kitchen must have messed it up," no apology, no "let me check on that," just shrugged it off and asked "so do you still want it?" The entrees were good but too much time has passed for me to provide significant detail here, we were also just flustered by the waitress-tartare situation. Ultimately we decided we would still like the steak tartare and would just consider it "dessert" since we had been looking forward to it, and I'm glad we did. It was DELISH. The tots? Fantastic and unique base for the tartare. When the bill came I am pretty sure this is the first and only time our waitress smiled. There was, again, no apology or comped portion of the bill. We did speak with the manager (who was super personable and understanding) to let him know our concerns about said waitress. Overall, the food here is worth it but that waitress should find another job, perhaps one with less human interaction. read more

We have gone to this place a couple of times already, and it's always been a great experience. Last night we made a early dinner reservation and we had a great time again. Service was fantastic and the place looked amazing all decorated for the winter holiday holidays. Nice and cozy! We ordered the chicken lever pate as an appetizer, and then I had the steak salad and my husband, the Wayu steak. My salad was great, but it's so filling that it could be totally shared by two people. I made reservations ahead. I highly recommend having reservations. We were scheduled for right when they opened on a Saturday night. There were several tables of folks and we were all there on time, so they were busy as soon as they opened. We were seated and Bill, our server, took our drink orders. I had a lovely wit beer. Bill came back once we had our beverages and had time to look at the menu. He went over the specials. My brother-in-law and sister-in-law ordered the special of sous vide short rib with parsnip potato puree, parsnips, carrots and a shiitake reduction. They loved every bite. My husband had heard about their amazing pork chop so that was his selection. It was an 8oz cut that came with farro, shishito, heirloom tomato, bacon vin, and palisade peach relish. He also thoroughly enjoyed his meal. I have a plethora of food allergies, so many times I find I have to ask for an accommodation in order to select something from the menu. I asked, and Bill advised it would not be a problem to leave the peas out of the Rock Shrimp Carbonara, which was my selection. It was a delicious combination of guajillo spaghetti, pancetta, cipollini onion, egg yolk jam and parmesan cheese. The spaghetti had such a wonderful texture and flavor. The restaurant itself is open so you can see into the kitchen. It is located on a corner with lots of big windows and the view across the river quite nice. Came for 10th anniversary dinner after previous excellent experiences. First a shout out to Janey who was an amazing server and took fantastic care of my wife and me. We started with drinks with a coke and Whiskey sour with Marble Distillery bourbon (from Marble just down the road). The bartender knows how to craft a cocktail. It was tasty and looked amazing. For appetizers we started with 4 of the oysters that come with a seasonal mignonette. They were briny and free of shell (a pet peeve of mine) and oh so good. We also had the chicken liver pate that is served with blueberry preserves and grilled bread. It is a decadent and delicious pate offset by the sweetness of the preserves and smoky char on the bread. Janey was nice enough to bring extra bread to get all of the pate (too rich to eat on its own). The steak tartare was delicious served on top of toasts instead of making it yourself. For mains we had the venison special and roasted half chicken. They were both tasty. As we had so many appetizers and entrees we turned down dessert. The options did look enticing. Service is excellent! Hostess, wait staff, all employees are really top notch. Location is convenient. Restaurant is clean and comfortable. We each had an appetizer, deviled eggs and oysters on the half shell and both were good. Wagyu burger was very good with fries. Steak salad was DRENCHED in dressing and so salty I ate about 1/3. If you select the steak salad ask for the dressing on the side. I do NOT complain about a high dose of salt but this was really over the top. Dressing on the side I think it could be fine, there was just an over abundance of very salty dressing. Had the service been less than excellent I'd say 2 stars because the steak salad was really bad. read more

Quite the gem. The menu is a variety of seasonal tapas, which is awesome because you get to try a multiple things instead of committing to just one dish. The standout for us was the seasonal pozole verde - insanely flavorful, honestly better than most homemade versions I've had. The pickled deviled eggs were great, the tapas fries, gnocchi, and salad were all solid hits too. The savory beignets were tasty, though the cold cream underneath didn't quite pair right with them. Craft cocktails were delicious, service was great, and the vibe was homey and relaxed. We came here for my birthday after the restaurant that I wanted to dine at was not open. We were seated right away. The restaurant was spacious with several tables. We placed our order with our server but when our food came out it was incorrect. I was first brought out a meal that was not mine. I explained what I ordered which was a medium well steak but it was then brought out well done and way overcooked. My friend ordered her burger well done but hers was brought out medium well. During our experience our server was very nonchalant and unapologetic about getting our orders wrong. Later the manager and chef came out. I believe his name was Matt. They were apologetic and my order was finally made correctly. In the end the manager made amends to try and rectify the situation. I appreciate his professionalism. Yet another Yelper from Denver here to praise the Pullman. We had an amazing meal with creative menu offerings and cool vibes. The restaurant was packed on a rainy Wednesday evening and we were lucky to snag a seat at the bar (pro tip- make a reservation). The service staff was engaging and it was clear to see this was a place a lot of locals favored. We ordered a salad and a pasta dish off the menu for meals and it was the perfect amount of food. The gnocchi may have been the best thing I've eaten in Colorado. The flavor profile from the mint and meaty additions complemented each other in a way I didn't expect. If you're looking for a food experience outside the normal restaurant menu this place is for you. The menu was small but its sources ingredients locally. They had several craft brews available and the one they recommended was quite good. The 6 oz colorado wagyu burger was well made and tasted great. However, my companion ordered the spinach & ricotta agnolotti and was quite disappointed. It appeared to be as described on the menu but was a very small portion compared to some of the other entrees we seen being delivered to other tables including my own. The hostess was great, the server was adequate but when speaking to us it felt as if he was speaking down to us. The Pullman was not for us, but appeared to be a popular spot. Could not eat the entire meal due to the amount of fat. Asparagus side dish was not brought to the table with the main dishes. Had to remind the waiter. The restaurant did offer to comp us for the lamb ($38)with paying for the asparagus or for a dessert. Asked for the lamb to be comped which it was. Salmon and tartare were good. From start to finish, The Pullman, exceeded our expectations. Having read a handful of previous Yelp reviews, we knew we just had to try it and are ever so happy that we did! We started off with ham and cheese Coquettas and a couple of Bacon Pickled Deviled Eggs. Absolutely tasty! Our entrees were the Grilled Chicken Salad and Steak Salad (medium cook, no Blue Cheese with vinaigrette dressing). We added a side of Butter Squash Risotto and Mac & Cheese. Super yummy! We then finished off our meals with an order of Ricotta Donuts and Chocolate Pie with creamy peanut butter. Divinely delicious! The restaurant was clean and cozy with lovely lighting. We had made a reservation a couple of days in advance, so when we entered the restaurant, we were promptly greeted by name at the front door. We were also informed that the kitchen closes at 9pm. That gave us the heads up to be considerate of the time to ensure we were able to try the things top of our list. Jake, our server, was attentive and kind. We didn't know if they would seat us since it was 30 min before closing. Not only did they seat us immediately, they welcomed us warmly and made us feel at home. The restaurant was bustling with big and small groups. The seating was spacious and comfortable. The food was great. I ordered the picked deviled egg coz I heard so much about it. It's really good. I understand they change their menus frequently, so we didn't have the port shoulder but there was the porchetta served on grits. It was very tender and delicious. I ordered the steak salad, which was excellent and filling. We also ordered pierogis and wagyu burger. The servings are not huge, so if you have one or three hangry teen boys who have skied the whole day, then please order more sides or dishes or courses. We had to add another order of wagyu burger at the end of dinner since the hangry boys were still hungry. Even though the kitchen was closed, the chef agreed to make it for us. Thank you to our amazing server and chef for saving us from a night of hangriness. We decided to forgo dessert since it was getting late and they gave us a really lovely pomegranate sherbet. It's been a very long time since I've been blown away by a really good meal and they definitely did just that. I came here for my birthday dinner at the recommendation of my friend. Upon walking in, you can see that the restaurant is bustling! It's definitely on the loud side, very busy, very lively. For starters, we ordered the chicken liver pate and the pomegranate glazed lamb belly. The chicken liver pate came with blueberry preserves and crostinis. It was very good but pretty on par with most places that would serve this. The pomegranate glazed lamb belly, however, was phenomenal. A single taste of this blew me out of the water. I think this was my absolute favorite thing on the menu. I was tempted to order another but I refrained. We ordered the ricotta gnudi, pan seared scallops, and braised beef short ribs as our entrees. The ricotta gnudi is a pasta dish very similar to gnocchi. It came with duck confit, tangerine slices, and topped with dried parsnip and sage. I absolutely loved the texture of the gnudi, but the rest of the flavors didn't really meld together well and was perhaps a little under seasoned. If I didn't know the dish came with duck, I would have guessed turkey myself. The braised beef short ribs came on a bed of farro. The beef itself was very tender but the pop of flavor definitely came from the farro. The sauce that it was mixed in was so good and I wish I had more of that sauce for the beef. The pan seared scallops was a recommendation from our server and I can see why. They were absolutely cooked to perfection. The dish came with a butternut squash and bacon risotto, which paired so great with the scallops! My dad and I agreed that the scallops were our favorite but my mom's favorite was the gnudi. Lastly we received a complimentary dessert as it was my birthday. They generously allowed me to pick one out from their menu. I had to try their pistachio tiramisu. They brought it out with a candle and informed me that they won't be singing, which I was very ok with. I was pleasantly surprised to find they topped it off with bubu arare. As other Yelpers (in Denver) I personally know have left good reviews for this restaurant, I was simply convinced that it was this place where my dinner (last night) should be ordered from. And I am happy to inform you readers that I am glad that I did. I opted for a to-go so I'd be comfortably eating my dinner in my hotel room (just right across from it on the other side of the river.) But I have to warn you: If you choose to do a to-go, the menu is somewhat limited (it's not full range like the dine-in menu) and yet, you'll still have a decent number of dishes you'll get to choose from. Ever since I have become a huge fan of gnocchi (over two decades ago), I've only had disappointing experiences with this Italian cuisine staple. But for some reason, when I saw pictures of the Pullman's gnocchi dish other posted, my gut feeling told me something else. At that moment, I didn't have to second guess, so I went with it. And to go along with the main dish, I knew I'd have to have a delicious dessert. The salted chocolate pie (with peanut butter/sauce) looked decadent and rich. Through the online ordering system, my order was placed in seconds. And it said it'd be ready by 4:45pm. When I arrived at the restaurant, the place was still 10% of its full capacity, I was a few minutes early for the due time of the order. A friendly female waitstaff alerted me twice that it would be ready in a few. Finally, at/around 4:50pm, she handed me my food with a friendly "Thank you". My dinner table in my hotel room was set by 5:02pm. With a glass of Cabernet Sauvignon ordered from the hotel bar, it couldn't be any more perfect than this. The gnocchi - The full name of the dish is "Pistachio & Ricotta Gnocchi". Braised lamb shoulder, preserved lemon, pickled shallot, mint, these ingredients are dancing together cheerfully to marinade the pistachio gnocchi. It's not only beautiful but it is well-seasoned with rarely noticeable amount of salt where the dish is not boring or bland in any way at all. The way they perfected the recipe to create this Italian dish with a little twist of New American deserves my utmost praise. Hence, I must say that this might probably be the best gnocchi dish I've had at a restaurant (I wasn't really impressed with the gnocchi I ate in Italy to be frank (LOL)!! Can you believe that?) Whether or not I truly know the authentic gnocchi is something I won't debate but despite the fact that it takes at least 2.5 hours to get to this restaurant from my Denver home, if I start craving for a good gnocchi dish, I might drive to the Pullman just to satisfy my appetite. The dessert - The official name for this dish is Salted Chocolate Pie. What the name doesn't suggest is the fact that this dessert contains a lot of peanuts (which some people - due to their allergy - have to avoid unfortunately.) It's got peanut butter crunch crust, peanut butter anglaise and peanut brittle. Oh boy, this dessert (as the photos uploaded by the past diners) was impeccably crafted/created. Decadent and yet it's not ginormous. The size is simply just right where you can comfortably finish it on your own. Since my dinner was pistachio based, the dessert being another type of nut oriented, they (in a way) complemented each other. Denver has a lot of great restaurants nowadays; they compete one another. Had the Pullman existed in the Denver Area, I am certain that it would be one of them where it would cause a buzz. read more

A birthday dinner for us in Glenwood- wanted someplace a bit special. The Pullman fit the bill nicely. Excellent selection of Colorado liquors at the bar, and a nice array of beer and wine. The appetizers were the big draw for me & they did not disappoint. We had to have the special devilled eggs, and we added the pork rinds. A keto heaven moment! We were in Glenwood Springs and had dinner on Wednesday June3rd. It was very busy and glad we had a reservation. Our evening could not have been more perfect. Sat at a hightop by the window, great location. The food, service and atmosphere was wonderful. I waiter took excellent care of us and paced all the food well and gave us spot-on recommendations. My wife and I like this place so much we went back to back nights for dinner - and might go back again tonight. Why did we love it? The food is excellent - and we went up and down the menu - devil eggs, peirogis, steak, burger, salads, Mac and cheese - not a single disappointing bite. It's like real food. Homemade everything. I see why this place has close to 5 stars. The service from the staff was friendly, like it's been from all the people in this town. We got sat down fast and right on time before the rush came in. I got the hanger steak and my oh my...perfectly cooked and seasoned, with burnt a little on the tips. It was amazing. A must have when visiting here. And last but not least the pistachio tiramisu was probably one of the best tiramisu's I've had in forever. Don't forget to pair it with my all-time favorite Moscow Mule with local Vodka. A little pricey and hard to find parking, but other than that Pullman is amazing! Brittany, our server was so kind. Not impressed with the pierogies but the pork rind was so crisp. Can't say enough great things about The Pullman. The menu, the execution, the bar/wait staff, the drinks... You name it. The gold standard for -any- restaurant.
