    My girlfriend and I stopped at Glenwood Springs for one night en route back to San Diego. We came here based on the great reviews on yelp and they were accurate. It was an odd location like other people have mentioned in a tiny strip mall but the inside is very classy and elegantly decorated. The hostess greeted us instantly as we walked in at about 8:15pm on a Saturday night. There was a very large party that took up almost half the dining room and a few smaller parties seated in the dining room. We opted to sit at the bar and the hostess ended up being our bartender and server. She was very friendly and super casual talking to us which we appreciated. I got the Braised Short Ribs and my girlfriend got the Pappardelle Bolognese. My short ribs were outstanding....fall off the bone and full of flavor. I had to taste test my friend's Bolognese since I had my eye on that first but opted to do something different so she could get the Bolognese. The pasta was great and the meat sauce was perfect as well as the heaping dollop of cocaine (jk...ricotta and parm!) that topped off the dish. My cocktail was delicious as well and went great with the Short Ribs. Highly suggest this place as the food was fantastic and so is the vibe.

    So do t let the location fool you! Yes it's in a strip mall. Inside the place is incredible and is a fine dining experience!! Great service amazing food and just great ambiance! Had the pork chop! Incredible and cooked to perfection! PEI mussels were delicious and the pistachio crème brûlée and espresso martini was the topping on the dinner!!

    What a little gem! We visit Glenwood Springs two or three times a year and I've noticed Hugo's while passing by time after time. It's an unassuming property I'd call the anchor corner of a strip mall. I've seen cars in their lot and patrons coming or going, so it's been apparent that Hugo's enjoys some degree of patronage. Now I know why. My wife and I dropped in for dinner. The interior decor sharply contrasts the strip mall facade. It's clean, beautiful and welcoming. The lighting is perfect: light enough to read the menu, but dim enough to exude elegance and charm, even romance. The staff were friendly. They knew their menu and were able to answer every question we had about the food's preparation, content, or presentation. The service was exceptional. I don't go out of my way to eat pasta dishes at restaurants. But I have eaten carbonara in Europe and I'm a big fan. So when I see carbonara as an offering, I'm always tempted to give it a try. Sadly, I'm always disappointed. The carbonara sauce is always lackluster and, honestly, a let down. But I keep looking, hoping to find that dish that equals those I had in Europe more than avdecade ago. Tonight I scored at Hugo's. It's without a doubt the best carbonara I've eaten in North America. It's the perfect balance of traditional ingredients. It's creamy, smooth and flavorful. It reminded me of the carbonara dish that first made me a fan. And my wife had a similar experience. She had pappardelle and short rib ragu. It to was top-drawer. Delicious in every respect. The plates were beautifully garnished and tasty. The portions were generous and filling. The cocktails were as beautiful as the entrees. And they were reportedly tasty, too (I'm a non-drinker). Desert was a unique and delicious pistachio crème brûlée. We will be returning, for sure.

    We have eaten here at least four times, only once for lunch. Food is delicious! Almost everything tastes fantastic. We went to Hugo's for dinner tonight and we enjoyed everything. The service was great, very attentive but not overwhelming. The place is softly illuminated, which is perfect for us, and also very clean and spacious. Tonight we had the French onion soup, prime rib with veggies and mashed potatoes and for dessert the raspberry chocolate mousse cake. Everything was really well done and delicious!

    Surprisingly, this was the most reasonably priced meal of our Aspen trip, and also one of the most delicious. Pastrami sandwich -the meat did have a fridge smell but it was still very tasty. Fries were crispy and well seasoned. Calamari was flavorful and wish it was a bit cruncher but still tasty. We came here wanting pasta but server said only available during dinner. Meal was roughly ~50$

We also tried to carrot cake sorbet which I know sounds odd but it was so delicious, you can tell the kitchen staff puts their heart and soul into this food. My husband got the special, which was like a Turkish ricotta stuffed pasta and it was AMAZING. Even my sister who got the wagyu burger, AMAZING. My only critique was the hostess was very rude to my family for no reason when we walked in which almost turned my parents off from trying to the most amazing restaurant. Luckily, the service got amazing after that. Everyone was so kind and helping everyone, just a great atmosphere. They also had the Knicks game playing which was great haha. Handmade, thin wrappers with perfect, delicious filling. It comes in a bowl with an amazing sauce I couldn't get enough of. I literally used a spoon to drink it! First, the pricing transparency on modifications is frustrating. My son ordered the $12 mac and cheese (which includes a drink). Upon ordering the server offered broccoli or chicken as an option. He chose broccoli, assuming it was a standard side swap or inclusion. Instead, we were charged $1 for the broccoli and an extra $3 for the fruit. Second, drink pricing was a letdown. -For $14 the frosted coconut margarita was served in a short highball glass rather than premium glassware. -I was charged $17.57 for a double Malibu Pineapple, (they added an extra $1 charge just for the pineapple juice mixer). -To top it off, the drink took 12 minutes to arrive because our server was preoccupied with a recently seated large party. Finally, be aware that they add an automatic 3% "Kitchen and Brewer Appreciation" surcharge to the bill, on top of normal tax and tip. While the food was great, the unbundled charges for standard mixers, deceptive side options, and extra surcharges leave a bad taste. Food: Rueben was great. Husband wished for more sauce but I thought it was the perfect balance. Kiddo loved the broccoli and mac. Pro tip: Check your receipt (which we didn't get until *after* we cashed out). Server (who was great, by the way) came to our table in a break from his large table and announced our total so we didn't see the breakdown until the text receipt arrived.

The staff at the front desk and the restaurant, the attendants everyone was so kind that it really made me a visitor for life! Each person went out of their way to assist or help in anyway possible and they just fill the place with good energy! The hotel is in the most convenient locations to multiple hot spring locations, one is even directly across the street. Our room was adorable a nice bath and I enjoyed the historical aspect of the hotel. The Christmas decorations were already up and it looked magical! A truely wonderful place to visit and I look forward to going back in the future! I definitely recommend eating at the hotel restaurant as that is where we enjoyed all of our delicious meals while in town. Evan went through the menu with us and we found out it is seasonal, which is something I love! Everything was fresh and we felt spoiled and pampered! There is a full bar with wine and beer. Payton is also a great waiter that we appreciated meeting!
