Went to Hugo's tonight, (a Wednesday around 8pm), and honestly wasn't expecting much given how empty it was -- but the food and service were both excellent. Sandy was my server and she was great. Attentive without hovering, the kind of service you'd expect at a much fancier place. I decided to move from the bar to a high top when my salad arrived and she immediately jumped in to help me get resettled. Later my napkin slid off my lap and she had a fresh one down before I even reached for it. I ordered the Rocky Mountain Ribeye with fingerling potatoes, green peppercorn sauce, gorgonzola, and braised onions. It came out thinner than I usually like my steak cut, so I was a little skeptical at first, but it was cooked perfectly and very tender. The gorgonzola on top made the dish. The flavors were incredible! The fingerlings were fine but forgettable. Didn't matter -- the steak carried the plate. I also had the side salad, which I almost didn't bother with, but as it turned out, the ranch dressing was scratch-made and they toss in thin-sliced green apple, which really elevated a simple side salad. Can't figure out why this place wasn't busier. Food and service this solid deserve a full room. read more

Stopped into Hugo's and had such a great experience! I ordered the mandarin pineapple Paloma mocktail and it was SO refreshing -- perfectly balanced with just the right amount of citrus and sweetness. Honestly didn't miss the alcohol at all. For my meal, I had the salmon dish and it was cooked beautifully -- tender, flavorful, and paired perfectly with the sides. You can tell they really pay attention to quality and presentation. We've been visiting our daughter who resides in Carbondale for the last three weeks. Last Sunday she suggested we try Hugo's for Sunday brunch. WOW! Cute and unique little spot! Came here in the end of February for Sunday brunch before heading back home and there were several groups that all knew each other, felt very much like this is where "the regulars" go! Windows give a lot of inside light, decent spacing between tables so you don't feel awkward or squished. We were seated quickly. The host and servers were all nice and checked on us regularly. We started with drinks- my wife had an Irish coffee (strong!) and I had a Bloody Mary; this thing was LOADED with celery, carrot, something pickled, bacon, etc and it was divine. I wish I had taken a picture of the menu because it had some different offerings compared to what is currently on the website so unfortunately, I cannot recall the names of what we ordered but they were both fantastic! Descriptions as follows- My wife had some kind of pork hash with 2 poached eggs and caramelized onions that was melt in your mouth delish! It was a fairly large serving; she ended up saving about half of it for a meal later. I ordered a dish that had caramelized sweet potatoes, spinach, smoked salmon, spinach, mushrooms, poached eggs and an aioli - this was delightfully fresh but also filling. New Year's Eve dinner for 8 people. Everything was wonderful. Corina was our server and did a fantastic job! Cocktails were delicious, appetizers were excellent (butternut squash, calamari, baked Brie) and the beet salad was fresh and delicious. The entrees were next level. The rack of lamb was large enough to split and cooked to perfection. Sea bass was tender and flavorful, the ribeyes were wonderfully seasoned and cooked to order, and the Cobb/lobster salad was full of fresh lobster and delicious! We brought our own wine. corkage fee was $35/bottle which we appreciated being able to do. The only less than amazing part was the desserts. The Yule log was dry and a bit bland and the champagne panna cotta had a strange gelatin top that was texturally off-putting. Overall this meal was exceptional with eight people equally thrilled with the evening and everything about Hugo's! We will definitely return to this treasure. read more

My girlfriend and I stopped at Glenwood Springs for one night en route back to San Diego. We came here based on the great reviews on yelp and they were accurate. It was an odd location like other people have mentioned in a tiny strip mall but the inside is very classy and elegantly decorated. The hostess greeted us instantly as we walked in at about 8:15pm on a Saturday night. There was a very large party that took up almost half the dining room and a few smaller parties seated in the dining room. We opted to sit at the bar and the hostess ended up being our bartender and server. She was very friendly and super casual talking to us which we appreciated. I got the Braised Short Ribs and my girlfriend got the Pappardelle Bolognese. My short ribs were outstanding....fall off the bone and full of flavor. I had to taste test my friend's Bolognese since I had my eye on that first but opted to do something different so she could get the Bolognese. The pasta was great and the meat sauce was perfect as well as the heaping dollop of cocaine (jk...ricotta and parm!) that topped off the dish. My cocktail was delicious as well and went great with the Short Ribs. Highly suggest this place as the food was fantastic and so is the vibe. read more

What a little gem! We visit Glenwood Springs two or three times a year and I've noticed Hugo's while passing by time after time. It's an unassuming property I'd call the anchor corner of a strip mall. I've seen cars in their lot and patrons coming or going, so it's been apparent that Hugo's enjoys some degree of patronage. Now I know why. My wife and I dropped in for dinner. The interior decor sharply contrasts the strip mall facade. It's clean, beautiful and welcoming. The lighting is perfect: light enough to read the menu, but dim enough to exude elegance and charm, even romance. The staff were friendly. They knew their menu and were able to answer every question we had about the food's preparation, content, or presentation. The service was exceptional. I don't go out of my way to eat pasta dishes at restaurants. But I have eaten carbonara in Europe and I'm a big fan. So when I see carbonara as an offering, I'm always tempted to give it a try. Sadly, I'm always disappointed. The carbonara sauce is always lackluster and, honestly, a let down. But I keep looking, hoping to find that dish that equals those I had in Europe more than avdecade ago. Tonight I scored at Hugo's. It's without a doubt the best carbonara I've eaten in North America. It's the perfect balance of traditional ingredients. It's creamy, smooth and flavorful. It reminded me of the carbonara dish that first made me a fan. And my wife had a similar experience. She had pappardelle and short rib ragu. It to was top-drawer. Delicious in every respect. The plates were beautifully garnished and tasty. The portions were generous and filling. The cocktails were as beautiful as the entrees. And they were reportedly tasty, too (I'm a non-drinker). Desert was a unique and delicious pistachio crème brûlée. Surprisingly, this was the most reasonably priced meal of our Aspen trip, and also one of the most delicious. Pastrami sandwich -the meat did have a fridge smell but it was still very tasty. Dressing was tasty but a little too sour, less vinegar or lemon juice, please. My companion had the special, a grilled short rib sandwich. She said the bread was a bit greasy. With 2 glasses of $16 wine. (Why no less expensive offerings, there are plenty of good, less pricy wines out there), my bill came to over $100 with tip...at lunch. We didn't have reservations, but this place didn't look like you needed to worry about one after 7 pm. This is off the main downtown Glenwood Springs area, so we assumed it to be a more local spot. My dish was good but ended up swapping the wife for her dish as the sauce on her halibut dish wasn't sitting right on a pregnant stomach. The wine list was reasonable, and they had options for all with a full bar. Wished places like this carried more local (Palisades) wines when they're just down the road. Picked at my fried while I patiently waited for the server to come around and ask how everything is. Finally got the hostesses attention to confirm how I ask for my burger to be cooked. When it was confirmed I ordered medium well, the hostesses took my plate back to the kitchen. Five minutes later I received the same burger back just on a new bun, seeing there was cheese and a burger sauce in one side, they could only cook one side to bring it to the proper temperature. Hugo's is an absolute GEM!! We've been to Glenwood Springs so many times and have always stuck to the main strip restaurants (because we just hadn't ever bothered to ventured further out). This time we tried something different and it was the best meal we've ever had in Glenwood Springs!! Not only is the food delicious but the atmosphere is wonderful, they have a dog-friendly patio and the service was incredibly friendly and efficient. Publicly Shamed....Within 5 minutes of sitting down, the man playing the piano told the entire restaurant how offended he was that our kids were watching their tablets instead of listening to him. Five minutes later he mentioned it again. Then he took a break and gestured towards us as he talked to other guests. We let the waitress know two times how uncomfortable we felt. The manager did not come out. We still paid full price for the meal and tipped, a total of $150. Don't judge a book by its cover. The outside is certainly not a reflection of the inside. We all expected a dive bar (which we also were looking forward to) and instead experienced magic. The food, every detail, was done with care and refinement. The quality of the ingredients was only heightened by the preparation. The executive chef came out to every table to not only help deliver but check in to ensure expectations were exceeded. While it's pricey (what you would expect for fine dining), it was absolutely worth it. The service was beyond wonderful and we experienced so much joy in view, in taste and in memory. Mother's Day Magic. My first time at this local eatery and I was wishing I hadn't waited so long. The atmosphere was elegant, bright, and cheery. Perfect for brunch. I had the mouth-watering Belgian pancakes drizzled with lemon sauce and my husband had smoked-salmon eggs benedict. Delicious! The exterior is a bit weird, but the interior looked nice. One of our party was NOT comfortable in the chairs. The restaurant was very accommodating to a dietary restriction we had, so that was great. The food, however, was not. Everything at the table was overcooked, including a $40 lobster. They replaced the rubber with another lobster that was just as bad. The medium rare steak was hard medium. The shrimp was rubbery and crunchy - 2 of them weren't fully cleaned and the tails were on but they were served IN pasta.
