This is a restaurant that I would drive out of the way for. The decor, vibe and ambiance is spectacular. It definitely feels like you're in the middle of the city. The menu was varied with options we liked. The prices are more in line with a restaurant in a large city, but worth it. Our dishes, the burger and chicken fried steak, were well executed and plated. The stand out for me were the drinks and thoughtful service of all the staff. The bar program is on point. I cannot imagine dining anywhere else in Smithville. read more

We took an overnight trip from FTW to stay at the Interstate Inn and dine here at Chef Pyle's new restaurant. The restaurant is lovely as you can see from my pics. We were seated at one the booths for two along the wall overlooking the open kitchen. I intended to order a Manhattan but upon discovering they're pouring Gallo vermouth decided on a Maker's Old Fashioned which was nicely done. Anne went with a glass of an Italian Pinot Grigio. I ordered that as well with my entree. We started with the shrimp ceviche. This is a unique rendering of the dish and quite enjoyable. The portion, however, was surprisingly and remarkably small for $17 even by upscale FTW/Dallas restaurant comparisons. The Caesar salad presentation here is so creative. See my pic. The dressed whole Romaine leaves are arranged in a toasted Parmesan cylinder which you crush up, slicing the leaves yourself to mix. The dressing is excellent. Again the portion is small, especially to share. But the price point is reasonable at just $10. We both opted for the grilled quail. This was the star of the show. The quail were nicely seasoned and perfectly grilled. The mound of crisp, fresh Arugula sang with the most perfect Arugula enhancing vinaigrette we have ever tasted. The salmon served over grits is amazingly tender and delicious. The warm apple almond cake with ice cream is wonderful, too. Service is great, atmosphere upscale but friendly and my guests feasted on whet they thought was the best fried chicken they've ever tasted. I'm going back soon! read more

We went for Sunday brunch and the food was good. I want to return for the full menu to give it another shot. My pancakes and sausage were good. The CFS that I saw on other tables did look really good, ngl. The decor is really cool. There's a 70s/Once Upon A Time in Hollywood vibe going on for sure. Would recommend and will return. read more

We received a gift card prior to The Seeker opening. We were excited to try it. I had the honey chicken and my husband the short rib dinner, both were excellent. The appetizers we picked were ceviche trio and hells eggs. The drinks were good too. A dirty martini with Italian red olives stuffed with blue cheese! Great new addition to the Stephenville restaurant scene. Arrived for happy hour so sampled some of the offerings: sliders were good, I prefer them cooked a bit more. Dinner: Shiner Bock bread had a fun presentation and was tasty. Steaks were outstanding, Mac and Cheese very good. Lobster dish was visually striking, thankfully the waiter advised me how to approach it. Thoroughly enjoyed the food, staff, and total dining experience! read more

Unfortunately we were not able to get in and grab a bite to eat. Which was very upsetting considering walking through the door and seeing lots of empty tables that looked a little disheveled. Someone needs to teach these people how to bus their tables and have a more approachable dining room. We are going to consider stopping back by at a later date and maybe just maybe will stay. Went to The Seeker a few days ago for my parents 58th Anniversary! After than many years, all you want is some good food and an early bed time! We had a great experience. Service was great, and the atmosphere bright and tasteful--a mix of classic vibes and modern. The food was excellent. We had the braised spare rib (similar texture and flavor to beef brisket), salmon, and quail. Sides were Mac and cheese (yummy), Brussels sprouts (delicious), etc. Dad had the butterscotch pudding for dessert and enjoyed it. I'd say most servings are on the medium size scale--not enough food that you'll be taking home a to go box, but I don't think any of us left hungry either. Overall, a nice experience and the restaurant is a pleasant addition to the Stephenville scene. read more

The Caesar dressing was not of my liking but the presentation was excellent The tenderloins that we had were raw instead of median rare, we needed to send back the dinner and they came back rare this time. What a case of mixed signals, mixed emotions! There were 6 of us seated at a U-shaped booth. My son-in-law was at one end, I at the other (facing him). A distinguished looking gentleman went directly to my son in law, ignoring me bowed stiffly to him and shook his hand and walked away. I was clearly the senior person at the table. Our server was oddly very new to upscale service. Amongst other things the server didn't know what a sommelier was. I explained that was the "wine expert", but was told they didn't have one. I asked who served that function as some wines cost $340 there. Turns out it was the distinguished gentleman from earlier. We discussed a few wines and his recommendation was superb. The food was superb as well. I wonder though - given the "money" in Stephenville is earned mostly through working land and livestock, how New York/Paris pricing and portion sizes will eventually play out here. They offer a beer bread, barely the size of my fist, for $10, and has but 3 pieces. The presentation is nearly magical, but that's good just once. Mere bread for such a price! The bar was superb, very good drinks. Again the kitchen did a magnificent job. But being ignored, and having such inexperienced (but friendly and very eager) service sent very mixed signals. The portions and pricing are typical for upscale New York/London/Paris. Again I wonder how that will play out here. read more

Waitress was nice, if a bit too casual,  inexperienced and inattentive. Service was about what you'd expect at a middle of the road diner, certainly not anything approaching fine dining. She just dropped off wine carafe without pouring it, didnt offer another glass, had to be stopped and asked for things, drops and spills things, and overcharged on check. Food had its highpoints, but the quail was unseasoned, not fresh, very miniscule, resembled a grilled mouse, dry, and tasteless. Really should replace it on the menu. Dress code was listed as business casual but is not enforced. Atmosphere was interesting, drinks very good, but overall probably not worth the price. read more

We've been twice and both times were truly outstanding. Definitely will keep going back. Not too fussy and not to formal - it's a perfect mix of cool hip vibes with great food - where the best of the big city meets the even better part of the country. If your in DFW - it's worth the drive. If you are in Erath County - consider yourself lucky. So to the basics - atmosphere is fun and friendly. Servers are knowledgeable. The bar offers a nice respite for you if you are lacking reservations (full service). The drinks are top notch and so is the food. We've tried the quail ( 10 of 5 stars - yes that good), the fried chicken (5 of 5 stars plus an extra star for the pickles) and the cowboy ribeye (9 of 5 stars). The Southwest Caesar is outstanding and easily sharable as is the ribeye. Great addition to Stephenville!!! read more
