I literally just finished eating this dish and had to get right on to let everyone know about it! I decided it was a good day to get tacos (honestly though, what day isn't), and I hadn't tried out The Taco Stop since they got their brick and mortar, so I hopped in my car and headed down 287. I've been following The Taco Stop for years now, starting with those tipsy nights out in Old Town, and then chasing them down from brewery to brewery, so to see them grow from a little cart, to a large truck, and finally to a full size restaurant over the years has been such a thrill. The building is a little difficult to find if you don't have it in your GPS, but they recently started parking their larger truck out front, which made it a quick spot. I walked in to the expansive indoor space after watching two people walk out with their takeout orders and was helped immediately. I couldn't decide between the Fajitas Tacos or the Pastor Gringas, and the owner Berenice was on point with her recommendation! After just a few minutes wait (the kitchen seemed SLAMMED, so the speed I got these was impressive), I had my tacos wrapped up and ready to go. Ravenous, but knowing I had to do my due diligence, I snapped a few photos of these beauties before digging in. Still warm, the sweet al pastor and the crispy potato fries swirled around in the avocado creme like some beautiful ballroom dance. The roja sauce added a faint bite to round out the dish and the house-made tortilla chips were perfectly crunchy and topped with cotija and magical jalapeno specks. Of course, I could only finish one of these gigantic tacos (and for only $8? What a steal!), and I'm already looking forward to reheating the other one for dinner! read more

This is one of those rare places where I kicked myself through the whole meal wishing I would have tried it sooner. I've certainly been missing out. I decided on the fajita tacos with carnitas and they were so tasty. The flour tortillas were just the right balance of soft and crunchy and the carnitas were perfectly smoky. The ingredients tasted fresh and the salsa roja had deep flavor. We also couldn't resist trying the queso fries and omg WOW! The fries taste hand cut and the queso was silky smooth. The restaurant was very clean and the service was friendly, attentive, with plenty of check ins to let us know they cared about our experience. Excellent service and the fajita tacos were excellent. While I was there an episode of Guy Fieri's show featuring Mexican food was running on the big screen TV. So ambiance was excellent. The quantity of food that came with our meals was adequate for lunch as was the serving of tortilla chips and queso. Inasmuch as we were charged a significant amount for the chips and queso and the price of our entrees I feel this place is a bit expensive for what you get. Just moved to FoCo in January from Arizona. I used to eat street tacos 3x a week, minimum. Mexican food and sushi are my favorites. I tried so many places, but the Mexican food in FoCo was extremely disappointing. That was, until I discovered The Taco Stop. This place is great. I get the steak tacos every time (with some red sauce), and they're legit. The steak is juicy and flavorful, never chewy. The corn tortillas are perfect. I really appreciate the authenticity of just cilantro and onion as toppings-I love cheese as much as the next guy, but these tacos don't need it at all. I'm sure if you wanted some, they'd be willing to oblige. That's another thing-the wait staff is so kind here. I went one time and they remembered me from then on. For such an unassuming front, this restaurant is a hidden gem in FoCo. I urge you to try some steak tacos, because these wonderful people deserve the business for the fire they're cooking up consistently. read more

I read all these high reviews and had to try this place and I was disappointed. I am here on a Tuesday and place my order. As I am sitting waiting on my order I here lady at the register start telling others about a Taco Tuesday special. Dang that would have been nice to know. Why tell some and not others about your special? I got 2 carne asada and 1 al pastor taco with a side of chips and guacamole for $16. The carne was way over cooked and had absolutely no taste. The al pastor was better with some super ripe pinnacles on them. All tacos came on the small street taco corn tortillas and were fresh. The guacamole was good and the chips seemed to be very fresh and possibly cooked in house. Not even close to being work $16 for lunch. read more

The tacos am carcon where ordered 1 carnitas that was food but tastes more like a taco de canasta, 1 steak a la diabla for my liking it was too salty and one chicken which was ok. Their social media is really fun and you can see them doing prep and more. They make their own horchata, sauces and more. Yummy stuff. Check them out at a rally or around town. This place is awesome! It's out of the way, but worth the short drive. There is a small parking lot and a decent sized dining room. Dine-in and take-out are available. Order at the counter and then find a table or sit at the bar. The service is so good and they seem to do everything they can to make sure you are satisfied. We have had the nachos, street tacos, fajita tacos, and pastor tacos. All of these are amazing!! I have to admit I wish they had a good table salsa, but they give you four different options for sauce. I've been here twice and can't wait to try the enchiladas next time. If you like good Mexican food that doesn't take itself too seriously, you will love this place. They do a couple unconventional things, like put fries in the pastor tacos, but it tastes really good with them. I was surprised how much I like their fries. I had heard good things about this place and boy oh boy...it did not disappoint! Tuesday's are "Taco Tuesday" which is buy 3 tacos get 1 free. That's $2 a taco which beats the price (and flavor) of our normal taco place. I had the carne asada (no onions for me) and al pastor. Delish! The habanero salsa was divine! Not too hot that it kills all taco flavor but hot enough to make your upper lip tingle. Margaritas were tasty. I'll need to come on a Monday where house margs are buy 1 get 1 free. Staff was SO attentive and helpful. I needed more salsa...no problem. At least 3 people asked if we were ok. I will return and suggest you do the same if you haven't already. read more

I was so excited to try the Taco Stop and (finally) get some authentic Mexican food in northern colorado and it did not disappoint! I visited as part of Impact Chiropractic's patient appreciation day and we could get a free meal which was such a treat! I had the el pastor enchiladas with rice and beans and a mojito and both were delicious and super flavorful. They are only open for takeout or delivery right now but it was super busy for a weeknight; they have a large parking lot and will bring food out to your car if their 5 person limit has been met for waiting inside. The staff who took my order was friendly and able to assist with finding a gluten free option for me, and made sure that the note she was making for the cooks was even spelled correctly (for celiac) which I SO appreciate!! Small details make so much difference. The food was even packaged well and kept pretty warm for the drive home in winter. The mojito was my first take out drink since the pandemic and it was great too! Strong and sweet. Definitely a must try in Fort Collins! read more

I've been wanting to try for awhile based on the great reviews. So, finally made it this afternoon. First thing through the door was greeted with a very friendly welcome. Awesome We stated with the nachos pastor...I'm not a big meat eater, so was able to pick it out ...they were incredible. Probably the best I've had in a long time. We ordered My friend had the PASTOR GRINGAS - she did not expect the fries in the tacos, but they were very good. The pineapple was a great touch. She also did not order with a sauce, but regardless they were very flavorful I had the FAJITA BURRITO vegetarian with habanero sauce - was not too hot, so must be very little added.
