I love what they did with this bar! After a recent remodel the Vault reopened as a sexy, sleek bar that is so much more welcoming to hotel and non hotel guests The craft cocktails were delicious and the food was NOT your average bar food. Caviar on mozzarella sticks, yes please! They do get busy on nights with live music but I love that there isn't a cover charge and their staff really goes above and beyond to make sure you have a good experience.

I've come here off and on since shorty after opening. It's in a perfect location. It's always been classic decoration, and professional. Rarely has it felt friendly, or a place a local would want to hang out. It is mostly filled with customers staying at the hotel,or attending a conference nearby. The cocktails are expensive and usually reasonably made. This is never a place I'm going to choose for myself, but it's a place that just got too good a location. It's directly across from Capitol Theatre. So, when you get parked for an event, and there's a little spare time, this is about the only option. Sorry, Red Door doesn't always do it. So, I end up here more than I'd like, but I like that it's here. On this time around, I asked for a Manhattan. High West top shelf Rye, but cheap tasting sweet vermouth. Even with the extra bitters, it tastes like they put a little cherry juice in. No mas. The one positive aspect is that they use real Luxardo Maraschino cherries.

There's been a movement in the US for a while now, wherein hotel bars are becoming a viable option to get a drink or grab some really good food. That, for the most part, has skipped SLC. Some of our hotels don't really have bars, or if they do, it's an overpriced experience with nothing memorable. To skip over them entirely would be a real injustice done to hotel bars, as they can be great. Move beyond your bias and you'll find a perfect case in point with The Vault. I've been on a couple of occasions, but only once to actually sit down for a dinner. It's like this little secret spot that's protected by a hotel stigma force field. The spot is gorgeous, as it sits on the main floor of the Hotel Monaco. The kitchen is shared with Bambara (listed separately on Yelp) but as in insider pro tip, there are a couple of items on The Vault menu that you can't get at Bambara. The burger and the chicken sandwich are much more affordable, bar-appropriate foods that show up special just for you. Quietly, The Vault churns out some really creative cocktails and is known for their tongue-in-cheek names. It's not really a schtick, though--they pull it off. Sure, they're on the upper end of SLC cocktails ($13, give or take) but given the great surroundings, top-notch service, and the fact that in the heart of downtown in other cities that's par for the course, I'd say it's worth it. Are they good? Consensus is yes, but I don't drink so you'll have to let me know. One caveat about the menu--I'm told the burger used to be INSANE and we were very excited to get it. We mentioned that to our server who, with a look of concern, let us know that they had changed it up. The cheese was different now, there was no longer bacon jam--indeed, it sounds like they've trimmed the bells and whistles off. I still ordered it, and it was good, but knowing about all the extra that it used to have made me long for days of past. The fries are terrific, so be sure get them. Rosemary lovers rejoice. The mood is a little sultry with the low lights, the actual bar itself is made of gorgeous wood paneling set against vaulted ceilings, and the name gives a nod to the building's old tenant; it used to be a bank with safe vault. Throw off the stigma of "hotel bar" and enjoy one of SLC's most underrated spots.

I live in Salt Lake but was staying downtown for a work event. Went here with a couple of friends for dinner and drinks one night and it was amazing! I loved the cheese curds the most and will for sure be back for at least that. Though next time, I will have to take my husband. I had one of their burgers and it was so juicy and delicious. I love the pickle on top, and fries...NOM!

Couldn't ask for a better atmosphere for relaxing and enjoying amazing drinks and food. These folks know their mixed drinks and dishes. Whether you are wanting light fare or more heavy meat and potato, this place will not let you down. We will be back. Tomorrow...Highly recommend.
