I was strolling around at night in Salt Lake City, downtown when I got kinda hungry. I am typically never in the city, so I thought - here's my chance to try something new! Because I was not starving, I wanted something light and healthy. I ordered a few of their veggie sides. Oh my gosh, I don't even know which one is my favorite. Every single one of them was divine. I was very impressed on my first visit to the Vault. Got a text about their blue cheese chips so decided to give it a try. The Salt Lake Fog was my beverage choice as one of my favorite things about Kimpton properties is they do their menus different by location so your not always stuck with the same thing if your a business traveler like myself. The old fashioned was on point. Out of the 4 Kimpton properties I've been to I'd say best old fashioned yet. The blue cheese chips were very tasty. My only suggestion there would to make it a dipping sauce so the chips stay crispy. They had great flavor all around. The staff here is very attentive. If you're staying at the hotel and want a great adult beverage it's hard to go wrong here. read more

We like this place. There are a great number of bourbon and Rye whiskey available and their mixed drinks are really lovely. The staff are wonderful as well in the atmosphere is really nice with big comfortable couches and sports on the television. Was in town for a work trip and went down to the bar to have a cocktail to end my night. I sat at the bar for over 5 minutes without being served or even offered water. The person a seat over was served and others at the bar. It was a Friday night and it was not busy. When I looked for the bartenders they were polishing glasses. As someone who has worked in the industry I have a lot of patience and respect for the work and this was inexcusable. There's been a movement in the US for a while now, wherein hotel bars are becoming a viable option to get a drink or grab some really good food. That, for the most part, has skipped SLC. Some of our hotels don't really have bars, or if they do, it's an overpriced experience with nothing memorable. To skip over them entirely would be a real injustice done to hotel bars, as they can be great. Move beyond your bias and you'll find a perfect case in point with The Vault. I've been on a couple of occasions, but only once to actually sit down for a dinner. It's like this little secret spot that's protected by a hotel stigma force field. The spot is gorgeous, as it sits on the main floor of the Hotel Monaco. The kitchen is shared with Bambara (listed separately on Yelp) but as in insider pro tip, there are a couple of items on The Vault menu that you can't get at Bambara. The burger and the chicken sandwich are much more affordable, bar-appropriate foods that show up special just for you. Quietly, The Vault churns out some really creative cocktails and is known for their tongue-in-cheek names. It's not really a schtick, though--they pull it off. Sure, they're on the upper end of SLC cocktails ($13, give or take) but given the great surroundings, top-notch service, and the fact that in the heart of downtown in other cities that's par for the course, I'd say it's worth it. Are they good? Consensus is yes, but I don't drink so you'll have to let me know. One caveat about the menu--I'm told the burger used to be INSANE and we were very excited to get it. We mentioned that to our server who, with a look of concern, let us know that they had changed it up. The cheese was different now, there was no longer bacon jam--indeed, it sounds like they've trimmed the bells and whistles off. I still ordered it, and it was good, but knowing about all the extra that it used to have made me long for days of past. The fries are terrific, so be sure get them. Rosemary lovers rejoice. The mood is a little sultry with the low lights, the actual bar itself is made of gorgeous wood paneling set against vaulted ceilings, and the name gives a nod to the building's old tenant; it used to be a bank with safe vault. Throw off the stigma of "hotel bar" and enjoy one of SLC's most underrated spots. read more

I've come here off and on since shorty after opening. It's in a perfect location. It's always been classic decoration, and professional. Rarely has it felt friendly, or a place a local would want to hang out. It is mostly filled with customers staying at the hotel,or attending a conference nearby. The cocktails are expensive and usually reasonably made. This is never a place I'm going to choose for myself, but it's a place that just got too good a location. It's directly across from Capitol Theatre. So, when you get parked for an event, and there's a little spare time, this is about the only option. Sorry, Red Door doesn't always do it. So, I end up here more than I'd like, but I like that it's here. On this time around, I asked for a Manhattan. High West top shelf Rye, but cheap tasting sweet vermouth. Even with the extra bitters, it tastes like they put a little cherry juice in. No mas. The one positive aspect is that they use real Luxardo Maraschino cherries. read more

I remember more locals hanging out but with all the new places opening up this place has just become a bar inside a hotel. Overpriced drinks for Utah pours. Service is always hit and miss especially if you order food. The blue cheese chips r amazing and decadent. The ceaser was a little dry but extra ceaser dressing helped with that. The filet was melt in your mouth. The cod is a fresh piece of white fish that the chef showcases as the star. My fingerling potatoes cooked in duck fat were not cooked all the way so disappointed about that. The vault is a good alternative when you can't get into Bambara. This night it was bought out by an MLM. Boy could you tell. Btw parking is self park or valet. Good food but hotel feel and price. read more

Vibe: I went to go see the miracle bar pop up and I was super excited because I have been to them back in the Bay Area but I arrived at this one and it was so dark and it had such a weird old musty smell... not to mention it was in a small tiny little bar in a hotel... But wait it gets worse I was so disappointed in the decoration it felt like the grinch came in and took everything and just left an old bar with a large nut cracker... my group didn't even stay to try the drinks we walked out the instant we walked in and not to mention there was no one to help us out either... So we stayed at this hotel for my boyfriends birthday weekend. Part of the reason I picked this hotel was because of the "Miracle" event they put together for the season. OMG do NOT waste your time or money on this! The cocktails are $18 and I took two sips and LEFT it there. What a waste of money. The service was fake and horrible and so pretentious and not done right. The sad thing is this could have been done really cute and well if they had some direction. Unfortunately this was a huge flop on our journey. We now know. Loved the hotel and restaurant.. hated this bar.! The Vault is attached to the back end of "Bambarra" (the hotel's tasty restaurant.) But its dimly lit and quieter, simply decorated and still classy. Seems like thats a pretty standard price point. Though if you want cocktail options, id go to "the red door" just down the street as they have way more to pick from for the same price. If you want wine, then youre in the best spot! Tons of lovely options including dessert wines! Not just a small list on the last page in the menu,like at any other place. The food is delicious too! You can order from the ajoining restaurant in the bar area and i highly suggest anything with thier gnocchi in it! But if you have dogs theyll love the leftovers from your steak! I spent 2-3 evenings here per week from November through February 2020. Come here for the excellent staff, lively ambience and, yes, for a useful bar menu. Much like the hotel it's located within (Kimpton Hotel Monaco SLC), The Vault is differentiated by its staff. Have to call out Regan, the usual person serving tables, as possibly the best server in SLC. Friendly without being intrusive, knowledgeable without being snobby, and discrete enough to remember your usual order without letting on that she totally remembers you've been there every night this week. I found the bartenders and additional staff to be equally awesome in more limited interaction. For business travelers, The Vault's vibe makes it a great place to grab a meal, a drink, and strike up a conversation - or to work from the tables without being rushed along by staff. And be sure to check out the holiday decorations - which can only be described as...memorable. Cocktails were very good - and don't be afraid to ask the server or bartender for their favorites. All were very knowledgeable. Wine and beer lists were great for sipping. Not massively extensive, but perfectly serviceable and of good quality. As many mentioned, the menu is a limited and possibly slightly varied version of Bambara's. Food is serviceable and several dishes try some neat flavors and touches. Wasn't disappointed by the scallops or fish dishes. Bottom line: Standout servers, great ambience, good food and bevs. Amazing spot for business travelers and great spot for old friends to catch up. Fairly poor service, and I really didn't appreciate being treated like a ditch and dine customer.....I can't even get a menu before giving my credit card...COME ON GUYS! This was so disappointing from waiting 10 min before anyone even acknowledging our existence, to our food arriving WAY BEFORE we got our first cocktails. We ordered a second round of cocktails, we saw them sit on the bar for a solid 10 more minutes before we decided to just cash out and leave, when they finally decided to deliver the drinks.....
