We went here on a Saturday evening, and the place was absolutely packed, always a good sign. Luckily, the chef's table was open, and I'm so glad we grabbed those seats. If you can, do it. It completely elevates the experience. The amuse-bouche was the perfect start to the meal, a bright, refreshing citrus bite with goat cheese, prosciutto, and a light acidic glaze. Thoughtful, balanced, and such a great opening note for the evening. Next was the butternut squash ravioli, and honestly, the sauce alone was memorable. Rich without being heavy, deeply flavorful, and one of those dishes you keep thinking about long after the meal ends. We followed that with the ribeye, cooked medium-well, paired with potato fingers. The steak came with a fantastic chimichurri, and the chef even stopped by to recommend a finishing salt specifically for the ribeye. That level of attention to detail, combined with thoughtful table side service, really stood out. I also have to give a huge shoutout to the bar staff. The creativity behind the drink menu is impressive, and the cocktails are genuinely fun, inventive, balanced, and clearly crafted with care. It's no surprise the drink menu has recently won awards, and you can absolutely taste why. What truly made the experience special was watching the kitchen in action. The female lead chef was calm, focused, and clearly guiding the team with confidence. It felt like watching a well-orchestrated dance, and the food absolutely reflected that leadership. Honestly, I wouldn't be surprised at all if she ends up with a spot on one of the Top Chef shows. This place is a must stop. What a wonderful accidental visit during the afternoon before opening hours. Super friendly staff - Kelly. We were allowed and encouraged to walk around the newly renovated historical building. After seeing the menu , we came back to have dinner after visiting Silverton. The food here is absolutely amazing!!! The charred eggplant with the nice olive oil and sourdough had the right touch - quality olive oil was a nice touch! The porkchop special was definitely a hit. Ravioli was surprisingly delicious! We loved all the food that was served and decided to order dessert. I hope we can make it back and have more of this great food! The Yelp review and rating is super deceiving . This is hands-down the best restaurant in Ouray when it comes to food and cocktails. The bartenders and servers are consistently attentive, and the entrees are thoughtful and well-executed. Cocktails are some of the best I've had in town. That said, there are a couple of things I hope the management takes seriously--especially around pricing transparency. First, the appetizers are significantly overpriced for the portion sizes. For example, $15 for just a few thin slices of sweet potato, or $21 for four small pieces of toast with mushrooms, feels disproportionate--even by upscale dining standards. More importantly, the way the restaurant handles service charges and tipping is misleading. There is a 5% kitchen living wage fee, which I actually support in principle. However, the way it's presented is problematic: it's not clearly listed as a separate line item on the bill--it appears to be folded into the "tax" line, which is misleading at best, and possibly not legal. Guests should be able to clearly see what they're being charged and why. To make matters more confusing, the restaurant uses the Toast POS system, which prompts tipping based on the total (including tax and the 5% kitchen fee), rather than the pre-tax subtotal--which is the standard tipping base in the U.S. It then suggests default tip options of 22%, 25%, and 30%. This makes it easy for guests to unintentionally tip far more than they realize--especially when they've already contributed 5% to the kitchen. When I worked in restaurants, we tipped out a portion to the kitchen--this feels like a workaround that shifts the entire burden to guests. Some easy fixes I'd encourage the owners to consider: 1.Clearly list the 5% kitchen fee as a separate line item--not rolled into tax 2. Adjust Toast settings to base tipping on the subtotal, not the total 3. Offer more standard tipping prompts (e.g., 18%, 20%, 22%) so guests don't feel pressured or misled Again, great food and service--but these billing practices could use more transparency and fairness. Your posted hours indicate you're open until 10 PM, but when we arrived, before 9, we were asked to wait several minutes before being told by the host (a blonde woman) that the restaurant was at "capacity" and that you actually close at 9. The drinks were great. Unfortunately the hours on Yelp were wrong and the service was poor. We went to get food and they had said the kitchen was closed even though Yelp said they were suppose to be open. Then we decided we'd just have a drink at the bar. While we were standing there the guy who was helping us asked the bartender if he could serve us or was it too late. The bartender did not even look at us but said "yeah sure it's last call but he should be able to make the 3 of us one drink." There were 5 people sitting at the bar he was chatting up and making an espresso martini for one guy that clearly should have not been drinking any longer. Plus one of the girls seated at the bar was an employee of the front desk hotel. So we stood there for maybe 5 minutes, no eye contact no knowledge me from the bartender. I looked at my friends and said "wow I feel like I'm at a hipster joint in Los Angeles". Nothing cool or cozy about this bar. We finally decided to just sit down at a table and wait. The bartender did eventually come over to take our order. He dropped the drinks off and said last call do you want anything more? No we did not. But 3 drinks and $80 down. This place has been completely renovated and reopened May 2023. This is the BEST dinner spot in Ouray hands down, and is easily one of my top 5 favorite restaurants in Colorado. Make reservations as it's quite popular, and if possible request the chef's counter for an immersive dining experience. They use a lot of fresh, local produce and are all about highlighting the importance of each ingredient. They also feature a wood fire oven, so everything has a nice semi smoky flavor to it. Chef Nic has a very impressive background and you can tell he pours his heart and soul into these dishes. We started with several apps: A Tale of Three Sisters (local beans, a delicious mole and cornbread crumble-this was fantastic), the Blue Corn Bread (a perfect light but savory dish), and the Anasazi bean hummus (served with wood grilled vegetables that were beyond delicious). I ordered the wood-fired ruby trout served with caramelized potatoes and asparagus, and it was fresh and phenomenal! My husband had the saloon steak and is still raving about how unique the sauce/gravy was. We finished off an epic dinner with a unique dessert of cherry & goat cheese pie with butterscotch ice cream. I have to admit I was hesitant, but our server convinced us not to miss this and we were thankful she did. It was a perfect balance between light, rich and, sweet-you won't be disappointed. Lastly, our server was very attentive. She didn't rush us and made sure our drinks were always full. We recently had a fantastic dining experience at The Grill inside The Western hotel in Ouray. My friends were visiting from Manhattan and we were all blown away by the incredible meal we had from start to finish. The variety of starters, including the flatbread, charcuterie plate, and summer salad, were all delicious and set the stage for an amazing meal. The real standout main courses were the lamb bolognese and the shrimp with chorizo stew. The lamb bolognese was hands down the best I've ever tasted, and I've had my fair share of bolognese. 3 of the 4 of my party ordered the shrimp and chorizo pan stew at the recommendation of the server.All 3 of us were completely disgusted with both portion size and lack of any flavor. There were about 5 shrimp in a tiny amount of sauce that contained an even smaller amount of tasteless chorizo with two pieces of small bread. I can only assume they were out of stew. Be better than this. We were so unsatisfied with the food quality and portion size we ordered a salad to try to at least feel like we had eaten dinner. This meal followed a charcuterie that was literally slices of lunch meat on the plate. Then To top it off I was confused as to why the tax line item on the bill was so unusually high. Now I notice that at the bottom of the menu in purposefully tiny font it says they build in a 5% tip for the kitchen. I have no problem with this except for the misleading practice of not showing it separated out on the receipt. I was not actually paying 12% in local taxes which is how the receipt reads...5% was going to the kitchen.... but the restaurant purposefully hides this so you still highly tip the server and the restaurant can pay the kitchen staff a non living wage and dupe the customer into paying the kitchen and the server without telling them. Shame on this restaurant and the management. We will never be back. We had been traveling for two weeks and eaten at multiple wonderful restaurants in telluride and park city and this one was by far the worst experience we had. read more

This is one of the best meals my husband and I have had in a long time. I would go back to Ouray specifically to eat at the Saloon. Every dish was fantastic, high quality, unique flavors and ingredients. The corn bread is to die for, three sisters mole will have you scraping the plate, gazpacho was fruity and refreshing, and the short rib was the best we've ever had. My husband ordered the Miner's Steak and I had the Trout Almondine. I will give one thumbs up on the steak...It was wonderful, a much better taste than evidently Shane's was. That is as far as it went, though. The following are my expectations of any restaurant that is in the $16-24 or more range: Heaters out on the patio....Hello, dinner time gets very cool even in July. Cloth Napkins. Cheap paper ones, really? Period chairs in the second dining room...one star hotel banquet chairs, huh? Dried Marinara Sauce on the top of the parmesan cheese shaker...this is a real personal peeve, let's not see it in an expensive restaurant. Angel Hair Pasta in Butter Sauce...again, level of restaurant. To me, this is a wonderful dish, but even Rice-A-Roni puts parsley in their 'mix with water' sauce. Same with the baby asparagus...how about oven roasting with olive oil, cracked pepper and a little sea salt instead of just boiling? The trout itself was very bland, again, not something I am willing to pay a second time for. Here's the worst though...we were cold so my husband asked to be seated inside. The back room was empty, the front room full but had one table for two next to the window and door. We were told we could have that table, there might be a fly or two since it was near the door. There were MANY flies. I pulled my plate from the table and flew into the second room and asked to be seated there. The waitress looked shocked that I asked to be seated yet again and a woman who I took to be the Manager asked me what the problem was. I dunno, maybe 15 flies??? She agreed to let us have the large table to finish our meal but then tried to sell us on dessert. I have had other restaurants in much less serious situations take off meals with severe apologies, but not try to sell me another item when it's obvious we are having such a bad experience. My husband and I recently spent a week in Ouray and decided to try The Saloon because of the delicious options on the menu booklet that was in our hotel room. We went for dinner one night and ordered the jalapeño caps for an appetizer and then the Miner's Steak with garlic butter, a baked potato, and sweet potato fries and just split all of it. The bottle caps were pretty good but were an extremely small portion (although they were only $4 or so). The steak had a lot of gristle - especially for an $18 steak!! I wouldn't have ordinarily paid $10! The baked potato was REALLY old, and the sweet potato fries were okay. The only thing that made the meal edible was the garlic butter served with the steak.
