The balance of fat, sweetness, and sauce was perfect. Messy in the best possible way. And then the star -- the Tonkotsu Ramen. The broth was deep, creamy, and packed with flavor -- that slow-simmered richness that tells you it was done right. The noodles had the perfect bite, and the pork was tender and seasoned beautifully. But, as it was I just ordered at the bar and was on my way in 10 minutes. The Hiyashi Chuka is so satisfying during these heat advisory days - cold noodles with a soy and I think sesame oil dressing, topped with chicken, cucumbers, rolled egg, and pickled ginger.
