I've tried those deemed "the best," including Salt Lick in Driftwood and Killen's. So how did CorkScrew measure up? In addition to the beef rib, we tried the moist brisket, pulled pork, and sausage. We also tried several sides, including those recommended in the Michelin review: potato salad, mac and cheese, smokey beans, and coleslaw, and I picked up a peach cobbler, as well. Serve the tacos with an option of corn tortillas because I feel corn tortillas would've worked better to give a great contrast/pairing with the sweetness of the pulled pork and sauce. 2. Serve the corn/flour tortillas on the side so that they don't get soggy and wet. 3. There are some things that just don't belong on a taco of any kind and that's coleslaw.
