Roast it at a very low temp for 8-12 hours. The interior is clean and should be kept that way. There are many Mexican restaurants in Lancaster, so competition is strong. As a new restaurant, you must have something different to set you apart from the competition. Work on the salsa to uplift it and make it better than any other restaurant.
