The staff is really welcoming and so helpful! I tried the Indian Taco plate and it was delicious! While I was skeptical of the blueberry vinaigrette they suggested to drizzle on top, he put it on the side and honestly, it was surprisingly really good! I definitely recommend that! Found this place mentioned on Reddit and was not disappointed. Love to try something unique that we don't have back in CA. Great vegan/vegetarian options and the dishes are customizable (think chipotle style). I had a vegetarian bowl and my husband had a bison Indian taco. So delicious and nice presentation. Tocabe has been one reason why I've wanted to finally visit Denver. It's one of my go-to places to get food at the Denver airport, and I was very excited to finally try its brick-and-mortar location. When I got off from my Lyft here, I was delighted to step foot into a sweet eatery with plenty of seating and friendly workers. It was clean and brightly lit, and the sight of the Native American decor gave very nice cultural touches. I got a plate with braised shredded bison Indian taco, which was shredded bison meat on top of fry bread. It was very filling. I had been getting over a flu, and filled up on water while I was here. There's a tiny parking lot in the back, but your best bet is to find street parking. It's a huge space with plenty of seating. The line moves pretty quick. This was the meal we were looking forward to the most during our Denver trip. The thought of bison ribs was enticing, salivation worthy and unique enough to grab our attention. Instead, we ended up getting a bowl with wild rice, ground bison, hominy and corn. We also bought a side of fry bread and a cup of the stew. Everything was okay, nothing that blew our minds. This was a great stop on ur Denver trip! Being from small town Kentucky, we wanted to try something we'd never tried before that we couldn't get at home. This hit all the requirements, and was really good! We really worked through the menu, getting a couple of bowls, fry bread, ribs, soup, and dessert. Would definitely recommend! The flavors of the food were immaculate, I would go here over chipotle anytime. They have a bunch of different ways you can eat the food-- plates or bowls. I had been wanting to try Tocabe for a while, and I especially love their philosophy, "Native first, local second." In addition to supporting small business owners, eating at Tocabe also supports the American Indian community and local farmers--a triple win! Servers were very helpful. When ordering, the first question asked was, "Have you dined with us before?" Our server recommended the Indian Taco plate, as it featured fry bread and a choice of meat and toppings. The plates are heaping, so be sure to go hungry or take some home for later. The fry bread is pillowy and delicious, and a good base for the ingredients. I like to be adventurous when I try a new place, so I selected the braised shredded bison (tender and flavorful), served with roasted green chiles and hot tomato sauce. The hot tomato is no joke with the habanero chile and jalapeño, so add a drizzle of sour cream and ancho chipotle to temper it a bit. This comes with fry bread on the bottom, your choice of protein - I went for the chicken, but the shredded bison also looked yummy - cheddar cheese, and two salsas of your choosing. For a Chipotle-style restaurant setup this is great quality and still relatively affordable. Fresh frybread v good, not oily, v fluffy inside (sort of beignet style?). Bison ribs were flavorful on their own, more on the dry side, slight heat with a little sweet, nicely balanced. Prepare napkins!!! Can definitely split this between two people, but if you're hungry it's good for one :) Love that they source from other indigenous businesses, and love seeing more indigenous businesses popping up. Would definitely come back to try more of the menu when we're back in Denver! If you're in Sacramento, check out Seka Hills (and if you can catch the Bigfoot food truck, get the rez dogs and the blueberry fry bread if they have it). In Oakland, check out Wahpehpahs. My first experience with Native American cuisine and I was pleasantly surprised. There was a sign saying "bison ribs ready in 30 minutes to 2 hours" when we were ordering. Thankfully, they were available when we asked. I split two entrees with a friend. The food: Indian Taco with Braised Shredded Bison + chili beans, corn, cheese, and sour cream. This might have been my favorite bite of the whole Denver trip. The base is a circular piece of fry bread - soft but with a good thin crispy exterior. All the toppings working together gave the taco a ton of textures. It was very tasty and what I thought brought it all together was some kind of sweet and tart fruity sauce (cranberry?). Bison Ribs- tender, yet chewy. Surprised these are roughly the size of a pork rib (thought they would be monster sized bison ribs). The seasoning reminded me of beef jerky. This comes with two pieces of fry bread and a fantastic berry BBQ sauce (they should bottle this and sell it). Iko's Green Chili Stew - a stew loaded with potatoes and corn - comfort food Fry Bread Nuggets - small bits of fry bread coated with powdered sugar. Kind of like mini beignets. Tocabe is a unique and wonderfully flavorful Denver dining destination. From the moment you enter you're treated to Native music (great mix of trad and contemporary) and art. The setup is fast casual, build your own so I chose the bison Indian taco plus a side of fry bread with wojapi. The wojapi and honey were perfect accompaniments to the fresh, pillowy fry bread. For the food, 4 stars really. It's quite good, but it's also $20pp for a single item and a drink. That's a bit steep for what is basically the Chipotle concept re invented atop fry bread. The tacos are very solid and filling. I did like the bison ribs, which were not amazing as ribs, but a cute concept and the berry sauce with then was not too sweet. Counter staff were quite patient with our asking questions. The bonus star is because let's face it, this is a community and concept that deserves to be promoted. This is an update from a previous 5 star review. Went to Tocabe for lunch. Whoops. Things have really gone downhill from the service. perspective. Tables could have been cleaner, but eh, not the real problem. I asked for my usual bowl. Half Quinoa / Half rice. I was told they would have to charge me for extra grain because I selected 2. She offered to double the grain in the bowl, but I didn't want to eat that much. This was NEVER an issue before. I also used to get black beans and pinto beans, but after being up-charged for the grain I didn't bother to ask. The food is still good, and it is clean. But the attitude with the women in charge of the front line is gross. They never have the ribs. Literally the last five times I went and today they didn't even have the ground Bison. I will not be driving half an hour one way again just to eat there, which is something I did until they opened in Greenwood Village and something I would have done again. I will give the Airport location a shot as I haven't been there yet, but with the attitude, ridiculous up-charge for no reason, I definitely won't be going to 44th again. My bowl and my drink cost 29$. Absolutely nuts. I have been going to Tocabe since it opened. When they opened the location in Greenwood Village, I started going there primarily because it was only a few blocks from where we lived. I used to go a couple times a week with my kids or husband in tow. I almost got a job there because I vibed with everyone so well, but my husband got a job at Amazon and we were forced to move to the Seattle area for a couple of years. It is a long trek to get to 44th from DTC. Fraught with all of the traffic issues of 25 and I can tell you it is no longer worth the trek, in my opinion. I was surprised to enter into the building and it be kind of what makes you think of a chipotle with how everything is done. I expected it to be more of a sit-down atmosphere. It was ok, though. The location is very clean and there is a very large amount of seating, both tables and high tops, so everyone can sit inside, especially when it's cold out like it was when I visited. They have many different options here that include build your own bowls and some signature bowls. I decided to get a signature plate. I had the base being the Indian taco, which is more of a fluffy bread that was so flavorful that I have thought about it at least once a week. For my protein, I decided to get the ground beef that is made with house spices. I have never had such flavorful ground beef then this one right here. every bite had a wonderful flavor to it and I wanted to get a second plate, even though I had leftovers! It was more than enough food that I had a second full helping the next day from them! I got the sweet corn and the mild tomato as toppings and everything was so fresh! Oh my gosh, I 100% regret not eating here sooner! I tried Tocabe for the first time today and was blown away. We got a fry bread taco with chicken thigh and bison ribs. I seriously almost cried because the food was so good. If they are in stock, definitely get the ribs! They were so tender and deliciously charred with a berry vinaigrette based bbq sauce. They must sell out later in the day. Hey come with 2 small fry breads. The fry bread base for the taco was sooo crispy and doughy, it was great! I chose all 3 beans on top as well as cheese, hominy, and sweet corn. Not sure how you're intended to eat it, but I tore off pieces of the bread and scooped up the toppings. Tocabe strives to use ingredients from local farms and indigenous providers when possible. I appreciated their website relayed the farm/supplier for their meat. Someone called this the Chipotle of Native American food. For better or worse, I get it. This quaint spot serves Navajo tacos with bison meat. Yes you can get chicken or even get it with vegan beans but the star is the bison ribs and/or the navajo tacos. They don't always have the ribs but if you do, definitely check it out. It's not the greatest ribs I've had but the meat is flavorful, you get two pieces of fry bread and a side of berry sauce which can provide a nice contrast to the saltiness. I do love a good navajo taco and thought theirs (which you can customize with various toppings, hence the Chipotle comparison) was pretty tasty. I got the shredded bison meat which had a lot of different seasonings and added a depth to the taco but you can always get chicken or ground meat or beans if you want. The fry bread is a little dense but chewy and very good. Similar to a Vietnamese donut if you've had those. The one downside to the taco is that the toppings will make the fry bread a little soggy and that's the nice thing about the rib plate. No separate fry bread. The service can be a little slow because they hand make their bread but otherwise great service. Definitely recommend if you have time and are in the Denver area. read more

As other reviews say, Tocabe is similar to Chipotle. Choose the base, followed by the type of beans, the meat, then lettuce/cheese, and finally salsas and toppings. We drove here straight after landing at the airport, arriving at the restaurant at 2PM, and the entire time we were there, there was a line of people. I really wanted the Bison Ribs but apparently they didn't decide to cook any that day. They were also out of wojapi, although we were told it would be a mix of blueberries and strawberries. Indian Taco w/ Grilled Chicken ($15.40) - Starting with the base, it's a ridiculously fluffy and softly tender frybread with just a slightly firmer crust. It's way more airy than any other frybread I've eaten, which tend to have a denser chew. With it being that soft, it doesn't hold up to the ingredients piled on top, becoming soggy in no time. For the beans, we went with the pinto, which are cooked until tender, although not especially flavorful or seemingly salted at all. The beans are drained but still retain a lot of moisture, which soaks into the frybread even more. On top of the beans, there's the meat, which in this case consists of very tender and moist chicken chunks that taste charred and seem to be one of the very few sources of salt in the entire dish. Shredded cheese melts nicely on top, followed by some of the mixed greens. For the two salsas, we went with the rotating butternut squash special and the sweet corn. The former includes tender cubes of sweet butternut squash and some chopped bell pepper, giving it a sweet and vegetal taste with a tiny bit of heat (or perhaps the heat is the from the poblanos in the corn). The latter adds some more corn sweetness with a bit of a radish bite. (3/5) Posu Bowl w/ Wild Rice & Braised Shredded Bison ($19.25) - The wild rice on the bottom of the bowl gives a good bite, remaining so even after soaking a bit in the liquid from the chili beans on top. As with the pintos, the chili beans don't seem to be salted at all (neither is the rice for that matter), making it a bit bland rather than extremely flavorful as I usually expect chili to be. The bison on top of that is cooked excellently until pull apart tender. It has a bit of a pleasant gamey taste and again seems to be the only component in the dish that's salted appropriately. On top, the cheese and greens are followed by the Osage hominy and roasted green chilies. The former includes hominy that's cooked but still has a pretty firm bite. It's rather sweet and fruity tasting thanks to the cranberries mixed in. It doesn't seemed to be salted. The green chilies give a somewhat fresh roasty flavor and a good amount of spice. It's served cold rather than being warmed up. (3/5) We got sour cream with both dishes that's a nice viscous liquid that conforms to the container it's placed in. Not that gel-like and not too sour, so it's very pleasant to eat with the rest of the food. Fry Bread (Normally $4) - We ordered this with powdered sugar and cinnamon. I guess it was our lucky day because the cashier comped the fry bread for us! As with the Indian Taco, the fry bread is super tender, far more so than all the fry bread I've eaten in the Great Plains. For some reason the crust easily detaches. It's light and not greasy at all. I do prefer the chewier and denser fry bread, but this one is a very nice alternative. We also drizzled honey on top (prepacked in 1 oz containers for customers), making this a good dessert. (4/5) I have to say, this restaurant is really unique, combining Native American cuisine with Colo-Mex influences. I think the food overall uses very flavorful ingredients, but is blunted by the lack of salt. This is one of the very few places where I feel prodigious use of the salt shaker might be necessary to really brighten and bring out all the flavors. Just to be clear, I can only remember a single other restaurant where I had to reach for the salt shaker - not to mention that I think most restaurants are far too salty. Great food, always consistent. Prices are a little steep and parking can be tricky. Service is always good.

Yum this place was so yummy! I was told by a friend to try it and I am glad that I did. I absolutely LOVE fry bread. My friend and I got Indian tacos both with shredded bison, I got lettuce, cheese, nuts and seeds, corn, sour cream and chipotle on it. So so good! My friend loved hers too. They have local made bottles sodas. I did try the blackberry one and it was really good too. Service was quick and friendly. I would definitely come back and try those bison ribs.
