The menu does specify they go by ounce. They literally have a scale and weigh it out . They cook a certain amount of food per a shift I'm assuming . The food was fresh and hot . Definitely make it earlier to get more options. The food was a little pricey, especially for the portions. But other than that, it was very clean restaurant. One of my favorite place to eat in Waco. I work during the week so I can only get it on Saturdays. Im a regular and the staff definitely knows me. I mainly just get meat and bread with both sauces and gravy. I get lean brisket and sausage. I love this place and I look forward to Saturdays every week. read more

Finding Texas BBQ on Monday is a chore. I was driving through Waco at lunch time and wanted some meat smoke for lunch. Yelp pointed me towards Tony's. The place is pretty nice on the outside, as far as BBq places go. It is a little ways north of the downtown area. I went in right at noon and had to stand in line a while. I ordered 1/3 of a pound of moist brisket and 1/3 of jalapeños sausage. The cashier called someone else over cause she couldn't ring up 1/3 of a lbs. The second person told her to enter .33. When she did, it popped up .330. She asked if I'd be fine paying for .330 instead of 1/3 of a lb. Brisket was good, but I didn't get the requested moist end. The sausage was good, but not great. Great little que spot. Nicest friendliest folks running it. Counter order then find a spot and they bring it to you. I had regular plate half brisket/half sausage. Brisket delicious and tender. Sausage not to my liking but still delicious, I prefer a firmer texture. Available with gravy, which I didn't try. Hot and regular bbq sauce both tasty. We came to eat lunch on a Monday around 1PM. There seemed to be plenty of parking and the inside was very clean and tidy. Several people were inside dining as well. The ENTIRE STAFF was sooooo nice and helpful. It was the first time for us to eat there and they talked us through it without making us feel like a burden. Love this restaurant, been eating here for years. Brisket is moist and a little bark and my favorite. My daughters love the smoked turkey and ribs. We eat bbq there, take some home and many times we've ordered it for Christmas meals. The staff are all friendly, good service, and homemade desserts. Don't go expecting fancy because you will be sorely disapponted, you eat off butcher paper, paper napkins, and plastic utensils but you will be elbow deep in great food, and in making great memories. Not what I expected. Always see a lot of people scurrying to get inside of this place because I hear they sell out pretty fast. A typical barbecue joint as the inside is not anything exciting to think about. You can see by the photo how they just threw my food inside of this white Styrofoam dish. The beans were not separated in a cup, just by a compartment. I always feel likes chopped beef sandwich is a signature dish that you can taste to get a feel if any of the other food might be worth pursuing. Inexpensive but good BBQ in very low key, casual setting for a cheap price. Lunch sandwich, two sides, fountain drink, and tax was under ten bucks. My chopped brisket sandwich came on old school soft white Wonder bread so eating it became a bit of a juggle to keep it from falling apart. The BBQ flavor was good, well smoked & hearty. Plenty of it piled between the slabs o' bread. Beans and cole slaw were okay. Pretty much commercial grade stuff. Big Red from the soda machine was sugar overload, as is dictated by the laws of the universe. Interior is rustic but serviceable. Staff is friendly. A native Wacoan, I've heard about this place for years, but just now got the chance to try it out! My first impression was good! I walked in to a short line and ordered my food within 5 minutes. I got a brisket plate with coleslaw. The staff was very friendly and helpful. Let's start with the food now. The coleslaw was excellent I thought. Its a sweeter coleslaw, so beware if your the type that doesn't like sweet coleslaw; but I thoroughly enjoyed it. The brisket on the other hand was bland, tough and all around just not good. It fit the dive barbecue setting but with marginal COVID precautions, so we took our meal across the street to an outdoor picnic table. I would like to clarify for BBQ aficionados that this place only serves beef brisket, sausage (Slovacek's), turkey, Bologna, and ribs on Wednesday (all you can eat for $10 currently). They have a medium smoke style with no bark. The brisket is moist, succulent and has mild smoke. I personally think brisket is better with a bark. However, pork ribs with medium smoke is perfect. So I hit this place on "Wenribday". I like the potato salad and beans sides. The 'gravy' is au jus that has been skimmed. Beware, the gravy is served scalding hot. If you dunk bread into a bowl of it shortly after it arrives at your table, you will be tempted to plop it into your mouth before it disintegrates but that will cause a painful scald. The Large order gives you 12oz of meat in any combination of what is available. A great deal for $8.70. The prices here are very low, and currently, there is a Yelp! deal $10 for $5 that makes eating here even more affordable! If you're a bark hound, you're outta luck. On our way from Dallas to Austin, we planned on stopping by at this old skool bbq joint in Waco because of the great reviews on Yelp. It was pretty close from the freeway exit so it was the perfect lunch layover. The place is nothing fancy, simple menu and super friendly service. You walk in, go to the counter, pick your meats, pay & enjoy killer bbq! I ordered the Dagwood Sandwich. Double decker filled w/ brisket and side of slaw. The brisket was so tender, perfectly marinated w/ the right amount of juicy fat :) My friend got the large meat plate and it came w/ 2 sides. He opted for brisket and sausage. The sausage was excellent as well. Juicy, not salty with the right amount of snap. The potato salad and slaw were of course homemade. The best part was this entire feast was about 15 bucks w/ drinks! Bbq done right, mom & pop friendly service and very affordable. So glad that we got to try this legendary Waco bbq! As a Wacoan born and raised, I am so glad that Magnolia has not taken over this place yet. Tony DeMaria's is so great! They are a mom and pop shop and I'm pretty sure everyone who works here is related. It kind of looks like a shack from the outside, but don't underestimate it. They have prices that no one else can beat. I mean it's only like $8 for a sammy and a side and a drink. They have all you can eat ribs on Wednesdays too! They usually run out of meat by 1pm. I've never been here after 12 tho. I try to make it early so I am guaranteed a plate. The meat is always tender and juicy. I have never had a bad experience here. I've tried every side. The potato salad and the cole slaw is always my go to but the beans are amazing too. You can't go wrong with anything . If you're ever in Waco, stop here for lunch. You won't regret it. ALSO - I recently visited during COVID Pandemic - they are not allowing dine in and they have little X's on the floor with tape with distancing in the line. The brisket was good and pretty tender but I think could use more flavor and a crust. The BBQ sauce was good and not too tangy. I liked the potato salad and had good chunks of potatoes. The cole slaw had a good bite to it which I liked but could use a little more vinegar or mayonnaise. I have come for the Wednesday all you came eat ribs for $10. It was a good deal but the ribs were very fatty. Baby back ribs were good though and would rather get these.
