    The gentleman who runs it and is the Chef makes everything from scratch. I knew it was gonna be good when I got the Agua Fresca, with mango, it was so fresh and amazing. Also, I got the yucca chips which came with three different sauces. That were just a perfect compliment. Then I had the beef empanada that came with a spiced cheese sauce, refried beans and some amazing rice. Normally when I get stuff like that, I'll just skip the rice and beans... But these were amazing. The rice cooked perfectly it wasn't overcooked or mushy. And the refried beans was smooth yet tasty. Not bland. The empanadas were handmade tortillas that were created and the deep-fried and came on a bed of shredded cabbage, which kept it from getting mushy on the bottom and allowed for the empanada to cool without becoming soggy. And the sauce is the cheese pickled onions on top were just an amazing combination. And then I had gotten the tacos and I thought it was like one taco each, but each taco was like huge. I got a chicken mole taco, and I got al paster pork taco, and finally I got a shrimp taco. Thinking they would be small, but they came on lettuce and we're all amazing and fresh. He asked me if I thought I was gonna eat all this by myself and I was laughing and think one empanada ...no, it came with three. And the tacos came with came with an amazing fresh piece of watermelon seasoned with spices. It was an amazing feast. He is such a gifted Chef. The seating is in the union so it's like a big hub where you can try different kinds of restaurants. And I walked around for a while before I pick this one, but his food just looks so fresh and tasty and it was. I am so glad I picked him. Definitely gonna have to come back and try the rest of his food and I suggest that you give him a try to cause this place is amazing and needs to be experienced. And don't miss dessert... The churros and ice cream are amazing

    This place is insane! Must go! Our son went to Baylor and he's moving tomorrow, best place to have our last dinner in beloved Waco. He had the torta, amazing, huge, great dipping sauce. We shared the nachos, also amazing. Two lettuce wrapped chicken tacos, and the prized pozole. Incredible meal! Thank you Huaco Eatery, Waco and Baylor! All so special.

    I recently visited Huaco Eatery and tried the grilled chicken lettuce wrap with yuca fries. The presentation was absolutely beautiful, making the meal feel like a truly elevated dining experience. The chicken was perfectly cooked and well seasoned, while the tomatillo brought a bright, flavorful touch that tied everything together. Every bite had a great balance of flavors, and the yuca fries were the perfect complement to an outstanding meal.

    Pozole is a must-have! Huaco is located inside Union Hall. They offer an interesting take on Mexican cuisine. Our favorite is the Pozole, hard to come by but can't miss! Its a decadent green pepper based stew with fresh avocadoes, cabbage, and chicken. The broth consistency is just right and has a depth of flavor from various mexican peppers including anjo gụailo, and bell. The portion is quite generous as well for the price. The staff are quick to take your orders with your name assigned and will either do call outs or bring your food to the table if they're not too busy. Plenty of seating arrangements all throughout Union Hall! Dont fret if you may not find a spot right in front of the food stall (although we've never had a problem with seating before). Enjoy!

    Stopped in this place about six months ago and had a terrific experience here so we came back.... This place never disappoints the owner is super friendly. He made us a special plate of chips and queso before our two entrées came out. Everything was absolutely delicious and it looks as good as it taste. Wake up Waco!!! This place is the best mexican food in town....pay this guy some props and see for yourself.

    Huaco Eatery is out of this world good! The food is so delicious and flavorful! Chef Sebas attention to detail and service is top notch too! The ambiance inside Union Hall is really chill and laid back. 10/10 recommend you give this place a try!

    We always pick a quick bite to eat here when visiting Union Hall. The chef pours his heart everything he cooks and is always so gracious with us. The food never disappoints. We like sitting by the street side view, as Union Hall has a lot of outside visibility.

    This may be some of the best food I have ever had. We tried the chicken lettuce wraps, dip trio (salsa, guac and queso), and chicken nachos. Please try huaco if you've not already. The people of Waco may not know how lucky they are to have this in the neighborhood. 10/10.

    Absolutely amazing lunch inside the Union Hall food hall. Shockingly beautiful quality and presentation. Pozole is one of my favorite dishes and this one is outstanding. Chef Sebas was warm and helpful-- he's obviously very talented as well. The tuna lettuce wrap tacos were so fresh and vibrant. Someone in the reviews said the portions were small, but that was not my experience. I laughed out loud when the chef set a gigantic wooden bowl of pozole down in front of me, big as my head! What a refreshing and special experience in an unexpected place. Worth every penny, better than the last 10 restaurants I've eaten at. ¡Que rico!

The waitress was sweet, but remained slow throughout the entire meal. Our waitress never offered drink refills, and we waited extended periods for a to-go box and our check before finally going to the cashier ourselves. The biggest issue was a strong sewage-like odor coming from the restroom area. We were seated nearby, and every time the bathroom doors opened, the smell drifted into the dining room. Even the handwashing station in the dining area had the same unpleasant odor. The food looked great when it arrived, and the chips and salsa seemed fresh. However, I was disappointed to learn they no longer serve guacamole with their fajitas. The chicken fajitas arrived sizzling hot, but became very dry as they cooled. They were spicy, but lacked much flavor. The rice and beans were good. Overall, between the slow service, unpleasant smell, and mediocre food, I would not return or recommend this restaurant. There are plenty of other Mexican restaurants in Waco that I'd try before coming back here.
