The best way I can describe a birria taco, is as if Mexicans had invented the French Dip. Meat and cheese-stuffed, fried up, and then served with a side of consomme to dip it in. Meat was flavorful, tortilla shell perfectly infused with flavor and yet still delightfully crispy. The dipping soup was bold---I found myself taking a few sips after I had eaten everything. Absolutely hit the spot and strongly considering hitting their brick-and-mortar while we're still here. YUM!

The cashier was friendly and helpful, offering recommendations and money-saving tips, which we appreciated as first-time visitors. The chips and dips were okay but not worth the $12.95, with portions on the smaller side. The food was average, similar to other Tex-Mex places in the area. I ordered the Grande Burrito with added grilled steak, but the extra $4.50 only got me a small amount of steak. The noise level was overwhelming, making conversations difficult over the loud chatter. For four people, the total came to just under $100, including a mandatory 15% tip. Having live in Austin a long while, I was familiar with this place before going to the new one in Fort Collins. The menu doesn't seem to have changed in years, and the food is sort of bland. Yes, it's hipster neo-cute and the combos are creative (at least 10 years ago they were). Although edible, the food is uninspiring and a little soul-less. On top of their tepid tacos, they had the nerve to sue a Colorado taco place over a word. The food and the lawsuit just underline that this is corporate food - designed, cooked and delivered efficiently by a corporation for your mindless consumption. Probably the worst experience I've ever had in my life, at a restaurant. Took my mom here for dinner and after waiting for almost an hour got up and asked for my money back and left. No big deal, right? Except they never voided my credit card transaction. I even disputed the charge and they fought it and won! I've been fighting for 3 months to get my $36 and change back. They just keep fighting me every step of the way. I'm a district manager of 7 restaurants. One of my patrons would've got their money back months ago. I even tried to contact their corporate service department and they won't even fix it either. read more

I tried the Baja Shrimp Taco with the Street Corn, and it was a great combo. The shrimp taco was crispy, spicy, and creamy all at once - definitely one of the more flavorful tacos on the menu. The street corn was tangy, cheesy, and just the right amount of smoky, making it the perfect side. The portions aren't huge, and it's a little pricier than a typical taco spot, but the flavors made it worth it. Overall, a fun, satisfying meal that I'd definitely order again. read more

Torchy's used to be one of our favorite spots for tacos, but something has definitely changed. The last two visits have been disappointing. The guac, which used to be our favorite, is now bland and tasteless. The soda machine that once had fun, unique options has been replaced with standard Coke products. Fried avocado tacos were awesome, Independent taco (fried mushrooms) was good, guacamole was my favorite ever (fresh and spicy,) Democrat (beef barbados) taco was AWFUL, greasy, flavorless, and Baja Shrimp way too salty. This corporate franchise chain bullies other small, family owned local businesses with lawsuits. They are not authentic or local. Go to D.G.T., Los Pepes or The Taco Stop if you're in Fort Collins and want great tacos.
