It's a build-your-own experience that begins with warmed tortillas. From there, it's your choice of meat combined with egg and wedge potatoes. I typically order the Jr.that comes on a 10" tortilla, which is still a large burrito, busting at the seams. But their regular Matador burrito is ridiculous!! My first visit, I held the door for two guys carrying one out like a roll of carpet (13" tortilla). They're THAT big!! the breakfast burrito was ok. Not anything exceptional ! price was ok. what turned me off was the restaurant was not clean. The floors, especially by the front door were filthy. The area next to the drink machine had not been recently cleaned. This was at 9:00 am so I can only imagine what it would be by dinner time. Just the best! You can always see them flat top grilling meat, stove top cooking beans, and pan frying up veg. Anyone claiming instant or microwaved anything is absolutely lying. All these hand made preparations come through in the food. Everything tastes vibrant, fresh, and amazing. Pretty decent fast food Mexican food. Stopped in for lunch and had a breed a bowl with black beans, chicken, guacamole, sour cream, cilantro rice. The bowl was actually a tin foil pan but it was tasty enough. I knocked a star down simply because the restaurant really wasn't that clean. We had to find a table out of a number of empty tables, that was clean. And were you dropped off your trash looked pretty messy and should have been cleaned up. The staff were very friendly and helpful to newcomers as us and helped us with our selections to make our burrito bowl. A hidden gem in Fort Collins. Local, family-owned. Hidden between Cold Stone and a Judo studio, lies amazing burritos and queso for a great price. The location is small and quaint. Easy to pick up food on your way home from work/whatever you're decompressing from that day. Usually I've been helped by very sweet young people, seeming to be mostly students. My favorite thing to get is the chicken bacon and ranch burrito. So flavorful and it fills me up to the brim each time. The chicken is in large chunks and deliciously seasoned. Soft tortillas. So my friends and I were looking for a date night spot before we hit a movie tonight. This was near the theater and had some stuff on the menu that it looked like i would be able to eat so we opted to try it out. None of us had been there before so we were not sure what to expect. I told them i hadn't been in before and they didn't really go into a lot of details or offer much information on their products. I asked for a salad and then asked what toppings go on it and they didn't really say much other than lettuce. I guess because there is not much more than lettuce. muahahaha. Just kidding i will get to what i actually got in my salad here in a bit. So that was a little confusing. Also my husband ordered a quesodilla and they put his order initially in taco shells...... he was watching and then asked them didn't those usually come in flour tortillas and then they were like "oh yeah" and started over on his order. He watched his whole order get made to assure they actually did what he wanted. 2. So not really knowing how to order or what to order and the staff not being really very forthcoming with information despite my asking questions. I ended up ordering a salad - minus the shell it would come with which i later found out i guess i could have just ordered a "bowl". i didn't want rice. I did go ahead and get a scoop of potatoes, then beans, lettuce, guacamole and some pico. I did pay an extra $1 for some falafels. I didn't really care for the falafels as they were just too spicy for my taste. The rest of the food was okay but they were a little skimpy on putting stuff in the bowl. I left still hungry. My husband also didn't totally get the ordering process but he figured it out and as stated earlier they made his food wrong. He sadly thought his food was gross and the worst take out type stuff he had ever eaten...... He would have rather have gone to a chipotle or something like that instead. 3. the restaurant was clean and well lit. There were tables inside with a fair amount of space in between them. This spot has been on my list of regular go-to's since the day I moved here. I've sat down in there dozens of times with one, or two, of the cheapest (cost-wise) pints of local craft beer you can find in Fort Collins and all surrounding areas, paired with one of their junior burritos, formerly known as a burrito-ito. Normally, however, I'm heading somewhere and stop in to grab something quick to go. It's all counter service, somewhat Qdoba style (but local! Yay local!), with a plethora of different, homemade ingredients available. I've been known to wait up to half an hour if their sweet potatoes aren't ready yet, and it's worth the wait! Crunchy on the outside, tender and steaming inside - I throw that in a burrito-ito with shredded chicken, refried beans, corn salsa, cheese, guacamole and one of Paul's famous insanely spicy sauces, GHOST HONEY. This sweet honey has a fierce bite that always has me breaking a sweat and leaves my nose dripping. It's a beautiful pain and I highly recommend it. The burritos, even the small ones, are gigantic - I often have to request them not to stuff it so much so it's a little more manageable in the car, but you never feel like they're skimping on your filling! A great place for burritos! Food and cleanliness of the store is always excellent. The food quality, customer service is consistent. Only reason why 4 stars, salsa offered are okay, but not my fav; and the walk-in a la carte style ordering is nice and I imagine can help keeep costs down... However, I feel like it's not so inviting to eat there. It's clean, but the ambiance feels very stock photo, generic. It's like they're not over the top fancy like some places, however, the vibe seems to lean more towards a taco truck vibe. We were staying at the Home2 hotel and were looking for somewhere close by for dinner, we didn't feel like driving. Matador is within walking distance although I would recommend being with others walking here from the back of the hotel. The food was very good. We opted for junior burritos and we're glad we didn't opt for the larger size burritos. The service was fairly good although the young woman who we first encountered may have been having a challenging day; her coworkers were helpful and friendly. This is a counter order restaurant but that was fine for us. The options for meat, beans, rice and salsas were plentiful. Other reviews said their breakfast burritos are great so perhaps on another trip to FC we'll give them a try to start our day. We opted to take our order back to our hotel room although there were tables available in the lobby space. I'm pleasantly full as I write this review. I didn't give five stars as it wasn't quite as clean as I would have liked but the food is very good. A great find while traveling. read more

my family has been coming here once a week for roughly about 20 years. this is hands down one of the best Mexican food options in Northern Colorado. I'm hooked on the fish tacos, thier burritos and the enchiladas. Thier quaso is basically crack and thier pablano sauce is amazing as well. Matador has a bunch of different salsas they make and they're all good but my wife is hooked on the mango habanero salsa. If this place were in California, I'd give it two or three stars but as it was in Colorado, it gets four. My friend and I shared a shredded chicken burrito smothered in a hatch chili sauce. It could have used more sour cream, cheese, and pico de gallo but all in all it wasn't bad at all and by far the most superior burrito I've had in FoCo. (4 months ago, forgot to upload here). Never tried here before so wasn't sure what to expect. A few minutes after I parked in front of the entrance, this woman with her kids walked by and she told her kids that this place was gross. I was reconsidering ordering but did anyway to see for myself ... I got the cheese enchiladas with corn tortillas and I'm wondering how they can call those enchiladas.. the tortillas wasn't even cooked and the cheese wasn't even melted... the fu*k? Gross. The white rice is instant rice so thats even more gross. The canned refried beans, sour cream, green chili sauce, Guacamole, dab of lettuce, and Pico (just tomatoes literally...) was the only half decent thing for me to eat so that I didn't completely waste the meal since I did toss the uncooked enchiladas and skipped the rice. I mixed everything else together and ate with some chips i had on hand. Never eating here again or reccomending. Nothing wrong with the service. I would rather eat Qudoba which is saying a whole lot. Chipotle is better too. I will never understand how people like to eat this food here. read more

Went to this place for lunch today and really enjoyed it. I got a burrito with potatoes, refried beans, ground beef, cheese and salsa and it was really great. The potatoes had good flavor and the meat was tasty. I got a habanero sauce on it, but it wasn't very spicy. My friend got pork enchiladas and she loved the pork. The burrito was a good price for the size. We also go chips and salsa. The salsa was a little bland and didn't have any spice to it. Will be back to try more things next time I have a meeting in Fort Collins. read more

I finally found a really good Korean place in Fort Collins. They have a spicy Korean barbeque wrap that will blow your socks off (I wouldn't wear sandals just in case, who knows what may happen). It had steak, spicy sauce, and a big 'ol plop of Kimchi! If you don't know what that is, you need to get out more. It's kinda like fermented cabbage, with like stuff in it, and...actually I aint entirely sure myself, but it tastes good. Hang on, I am just now being informed that it was actually a Mexican eatery, not Korean. They just happen to have a really good Korean BBQ burrito. Enchiladas were great (not too spicy for any little people you have with you), Tacos were so-so, and the Chips-N-Queso was just beautiful, full of all the little chunks of peppers and junk that makes your mouth happy. I've been excited to try Matador for a while. I love that they are locally owned and that they are strong supporters of the local craft beer industry. Unfortunately, I was really disappointed in my food. I got what I'd normally order at qdoba or chipotle; rice bowl (I chose cilantro lime), with chicken (I chose their honey-chipotle? Option) topped with fajita veggies, lettuce, pico, and guac. They make the fajita veggies fresh to order which would be a nice touch except they assembled the rest of my food as soon as I ordered. The result? My bowl sat there getting cold for about 5 minutes while It waited for the veggies which were then dumped on top. I had to ask the guy to microwave it because I don't like my food tepid warm when I start to eat, I like it hot! The dish itself was bland. Really lacking in flavor compared with other burrito bowls I have at the chain competitors. So that was a bummer. My food was 2-star. I bump them to three-star cuz my husband was satisfied with his fajita veggie burrito, though he said next time he's get a burrito w/o the veggies. (He had to wait, too,) He loved the local beer options which were very reasonably priced! Best part he said. The service was also friendly. When a friend of mine said that Matador was her favorite burrito shop in town, I wondered if "local" could really make much of a difference. This is a category where I think the national chains -- Qdoba and Chipotle -- largely meet expectations. We also have another local spot (La Luz) that makes a pretty mean steak & potato burrito, though they are better known for fish tacos. What could Matador possibly bring to the table? Well, plenty, it turns out. Let's start with their commitment to local sourcing, e.g. produce from Grant Family Farms. House-made hot sauces -- I happen to like the fruit-pepper combos, like the mango habanero ... they also have some based upon local brews. Speaking of beer, there are plenty of interesting local microbrews (yes, beyond Fat Tire!) available, should you wish to imbibe. It's a small thing, but I love that they offer sweet potatoes as one of their fillings -- certainly a more nutritious option than rice or regular potatoes. Finally, their staff is always friendly and efficient. I don't know that I would drive too far out of my way for "just a burrito," but if I'm looking for a quick bite after a movie at the Cinemark or am driving back into town from I-25 and just want to pick something up, Matador would certainly be up there on my list. read more

I ate here last summer with a couple of friends of mine, before all the covid-stuff started. (Not MY choice) About all I have good to say about it is that they have good, cold beer, and large, cheap burritos. Pretty sad, huh? I can see how they survive though; they are just around the corner from a major theater (Cinemark), plus the aforementioned items. Beyond that, however, let me warn you about Matador. As a former everything in food service, from waiter to chef, let me tell you, this place is not to be trifled with. How they are flying under-the-radar of the Larimer County Health Department is beyond me. If you would like to go home withOUT food poisoning, don't eat here.
