Really good dinner after a day of hiking! My friend and I shared the Gouda Mac & Cheese Bites and the Sampler Platter on which we got brisket, chicken, ribs, with sides of coleslaw and fries. The Gouda Mac & Cheese Bites, little flat balls of mac & cheese, deep-fried, were so full of smoky Gouda flavor I almost slapped my friend's hand away from them - I wanted them all! It was served with their "cowboy sauce" which, I have no idea what was in it, but it was smoky with a bit of a kick, and they also gave us a little bowl of ranch. Good stuff! All of the meat on our sampler platter was excellent. The shredded chicken totally melted in our mouths and had a nice flavor and kick to it even without any additional sauce. My friend took a bite of the ribs and told me they were terrible, and then I realized he only said that so he could keep them all for himself and I wouldn't try them! We also enjoyed the brisket, and the fries were nice and crunchy. I'm not a coleslaw person, but my friend is, and he said it was excellent. I did end up taking a bite, and I would have to agree. We got there an hour before closing, so it wasn't very crowded. The kid working register, who was also our waiter, was great, very friendly and accommodating, and everything was clean and bright. They sell their barbecue sauces by the bottle, and my friend was so taken by the spicy barbecue sauce they served with the dinner that he picked up a bottle for $5 (they didn't have any already bottled, so our nice waiter got that done for us). On the way out I saw on their board that they had "smoked cheesecake". I groaned because I would've loved to have tried that, but I was so full I couldn't even think about taking some home. Dining there is an awkward experience. All the servers are high-school age and inexperienced - our server tried to take an order across a large group of people, and we had to tell her to walk down to the person to take the order. There is no sauce on the tables.... and when we asked if we can have bbq sauce, she said "which ones?" And proceeded to list them off. We found out very quickly, one doesn't get bottles of bbq sauce on one's table - they bring out plastic to-go ramekins of sauce that are only filled half way and packets of ketchup. I've never in my life been to a bbq restaurant where there wasn't bbq sauce and ketchup readily available. I had the sausage sandwich, which I thought was pretty good. Beans were meahh. We ordered two 3-meat sampler platters. They were huge! We made a second meal out of the leftovers. Sides were dinner salad, green beans, sweet potato fries and French fries...all were good 4 stars. Meats were ribs, burnt ends, smoked sausage, pulled chicken. I haven't had pulled chicken before but wow, very good...possibly my new fave smoked meat. The sausage was very good as well...another surprise. The burnt ends were very VERY tender and they gave each platter a bunch of them...also very good. The last place item was the ribs on this visit. We are definitely coming back...still need to get some brisket and pork steaks. Both sound amazing. Service was good. Place was clean. Worth a short drive from Columbia or Jeff City. Their Lang Smoker is out front and smells awesome when you pull up. read more

My favorite place to get BBQ! Even though I live in Columbia it's a quick drive (sometimes I have to drive longer to get to places IN Columbia)! I have tried many items (brisket burger, pork steak, multiple sides) and have been pleased every single time. The owners and staff are very helpful and are quick to get you your food. One of my favorites is the Frachos! I've had them to share and I've eaten them as my meal. I highly recommend Trail Boss for dining in or taking it to go (I've done this as well). We wanted to try a local place that wasn't a chain and something none of us had ever had before and we were actually quite happy with this place. It doesn't look like much from the outside, not a big parking area but inside it was very clean and new looking. Small tables that could easily be put together for larger parties and there was even a private area with more tables and sliding barn style doors for parties I imagine. We sat at a double table next to the juke box. Bathrooms were down a hallway. The bbq sauce selection is 3 sauces and two more you could ask for upon request (not bbq). I ordered the frachos where were basically nachos but with large steak fries. It had a tiny kick to it but I didn't add more bbq sauce I actually liked it just as it was served. The pork was tender and even tasted fine by itself without sauce. I went with my husband and his friend and they had the sandwiches. The onion rings were very good, sweet onions but crispy golden batter. The baked beans were a little more on the plain side, sweet but not very thick. Though the Frachos was an appetizer, it was enough for a lunch for one person, they were also too good to share, haha. The staff was friendly. We went on a Sunday for lunch and it was not very busy, couple tables but not a crazy lunch rush. If you're in the area and want some decent bbq this place is one worth making a stop for. What I had to eat (brisket sandwich) was ok, friends in our group never got their order. When approached about this, the manager indicated the orders were delivered in the order they were placed, which was incorrect. The owner argued with the customer implying the Resturant didn't make a mistake, which they clearly did. Very good BBQ. Brisket has good flavor, frachos are excellent, and sides are great. I'm typically not a big fan of pork steak, but their pork steak special on Sunday is excellent! It seems to have a dry rub, and it is a thick cut that is smoked, which makes it very tender and full of flavor. Service has been very good each time we have been there. read more

The food all tastes great, my reviews based on the meat servings. We ordered a slab of ribs, 2 one halves since a whole slab is not available. Chinchy at best. Sides are on the on the slim too. We visited here off a recommendation while in Ashland for a basketball tournament. Great selection. A group of 7 with 4 kids. Kids loved the chicken nuggets and the 'white cheese' Mac n cheese and the adults enjoyed the bbq. I would certainly recommend Trail Boss. read more
