Now, this is a little out of the way but if you so happen to cross pathway with this BBQ joint, then you definitely have to check it out! The joint is small with an outside tent seating area. We arrived right before lunch and the line wasn't too long yet. But right at noon (on a weekend), the line exploded! Once the BBQ is in front of your face, then you forget about that line and remember why you came here in the first place. I am a ribs person so of course, I had to get ribs. The ribs were soft and smokey! The sausage was smokey as well so I also recommend getting that. I enjoyed the sides (i.e. veggies and mash potatoes) which a meal is not completed without them. Get the tater tot casserole. There are so many flavors in that thing, and they all work together perfectly resulting in a masterpiece side. Honestly, I'd eat that thing as an entree! Load me up a to-go box of it! I really enjoyed the turkey as well. The pulled pork and the moist brisket are top notch. Both paired well with their homemade pickles and pickled onions. I liked the texture of the ribs; it gives you a good bite while still tender enough to come cleanly off the bone, but I could do without the sourness in the barbecue sauce that coated the ribs. The sausage was fine. I got the regular sausage so I set myself up for fine. The corn pudding was interesting - mushy and lots of corn flavor. I'm guessing it was corn inside of bread pudding. The banana caramel cake was amazing. I can't express how much I appreciate a good slice of cake that isn't just sugar. The crunchy bits on top of the cake are very sweet and satisfies the sugar craving, but the frosting and the cake itself let flavors other than sweetness shine. I got to Truth at 10:40am on Sunday and there was a line of about 20 people. Parking space is very limited but you can park on the grass and on the side of the road behind the restaurant. After the doors opened, it was another 20 minutes to get inside to order. Only 8 people inside at a time because it's a really small building. The line does not move fast so there's probably always going to be a line. The food is good enough to wait in line for. I really hate lines, so it says something that I'd be willing to wait in line for Truth BBQ. There's not much inside seating and outside seating only works on good weather days. This place is the definition of Michelin 3 star. If you are a food connoisseur, BBQ enthusiast, or meat eater in general, you must travel to this place, regardless of how long the trip is. This place can compete with any BBQ joint in the world. Everything we ordered was to die for. We got there around 10:45, 15 mins before it opened. The line was not bad, probably due to the location. After about 20-30 mins of drinking free beer, we were ordering our food. We ordered Brisket, Pork ribs, both types of Sausage, and a beef rib. Everything was ridiculously moist, to the point where sauce was completely unnecessary. Flavors were very simple, not too much black pepper like Austin BBQ. Brisket can compete with Franklins; you can't find a "better" brisket than this. The pork ribs were hands down the best I've had in Texas, maybe better than anything I tried in Memphis. The jalapeño cheese sausage was probably the best sausage I've had. The other sausage was also on point, easily better than anything I've ordered in Texas, I just like the jalapeño one more. Beef rib is also as good as it gets; maybe even better Louie Mueller's, idk. I can't emphasize enough that all of these meats were dripping with fat and had absolutely zero need for sauce. Small details make this place over the top. The sides were A1, bread was homemade, homemade pickles, pickled onions, homemade cakes.. these people definitely love doing this. Good lord!!! I've been stalking this place for a few weeks and on the way back home from Austin we finally stopped in. Parking is a struggle but PLEASE don't let this run you off. The door is to remain closed if you can't fit inside, but there's plenty of free beer and water while you wait in line (that moves extremely fast!) By the time we arrived brisket and pork ribs were the only meats left.... but they certainly did not disappoint. This was by far the most delicious BBQ I've had ever. In life. The brisket literally FELL APART and was full of flavor. The ribs were amazing as well. We also tried the macaroni and cheese with bacon and it's as good as it sounds. This place was well worth the wait...literally. I stood is line for about 30-45 minutes for some of the best bbq AND cake EVER!!! Yes, there is a line...outside...in the heat BUT don't let that stop you. They provide free beer and water (just leave a tip) and you'll meet some pretty cool people while you wait. The only bad side is the possibility that they'll run out of food before you order (definitely a heartbreak moment). It's best to get here early to secure your spot in line and get out of the sun faster. The people are friendly and you get to sample the meat. Not a measly sample either. A sample that makes you want to kiss them in the mouth. I've been here twice and so far I've ordered: -the brisket (chews itself, so moist) -jalapeño cheddar sausage (not really my fav BUT still delicious) -pork rib (I messed up my shirt eating a rib. Damn thing was so tender it slipped right off the bone and onto my shirt. I was happily angry to still eat it!) -baked beans (sweet, but with a tang) -mac & cheese (almost passed out when they topped it with extra cheese and bacon...mhmm) -baked potato (it's more like brisket with a side of loaded potato) THE CAKE!!! Hot damn! This place lives up to its hype! You get a nice scenic tour going through Brenham with its grassy lands and pastures. Leading into the place, it has all the traditional appearances of a BBQ joint, complete with the gravel driveway, lopsided streetside parking, tin can building structure, steaming wooden benches, creaking wood stairs, even a raggedy quilt draping the walls. The surroundings alone transports you and is part of the experience. And there is the most awesome, soul-tingling blues rock pumping and grinding out from the speakers. I dig it before I even eat. The line is bumper to bumper but it moves fast. The space is very tight but everything was orderly and it worked. I feel the kinda bad for the indoor diners because they were face to buttock level with people constantly shuffling in. The menu is written on a chalkboard out front behind the counter. It's your basic fare and it all sounds good. We got the brisket, pulled pork, Mac and cheese with collard greens. The meats were monstrous juicy mounds of smokey meaty deliciousness. They were both moist with good bite, flavorful and fragrant. The tallest guy (who looked completely thrilled to be doing this work), bedazzled us with his knife handiwork, double-handed chopping the bejeezus out of our brisket in three seconds, like a mini hibachi grill show. I normally favor the brisket over all else in most BBQ, but I have the say the pulled pork edged out as the winner. Salty, juicy, stringey, with just enough burnt corners to darken the flavor just so. It deepened the saltiness even more in those bits. It didn't get a bitter char but just a crisp burnt-ness, i.e perfection. The mac and cheese was fantastic. Creamy, rich, cheesy. The pasta had the right bite. And even when it cooled, it still remained creamy unlike some other places where it would gum up once cooled. Collard greens- yum. Cooked to soft perfection, with tomatoes to give a touch acidity, bacon to give natural saltiness. Even the stems were cooked to a soft bite, which is important because these greens can easily be tough and fibrous. It was cradled in its own yummy juices. It was flavored perfectly. Even the pickles and pickled onions had a freshness to them. I'm sure they are made locally if not in house. Fresh peppers and herbs and a crispness that does not come from jars that embalm them on a dusty shelf. Everything was flavored perfectly. Only complaint would be the bread was slightly dry. I think I would have liked the bread a lot. It's cut thick and fluffy with a good crust. But it may have been exposed to open air for too long. And don't forget to add their hot sauce varieties which are equally good. There is even Lone Star beer sitting in ice coolers offered to anyone and everyone. How awesome is that? Be sure to leave these guys a nice tip in the jar they left there. You get the all around Southern BBQ experience while you sweat up a storm in Texas August summer heat on the patio. My clothes stuck to me like a second skin. Despite the inferno heat, the patio is spacious, airy and nice, with a well groomed surrounding garden. I am even in love with the lush vibrant tree they planted out on the side. What is that? These BBQ guys and gals look like all around cool and likable folks, like people you'd just want to hang out with. And then you see their attention to detail and the care and passion that goes into their foods, even the music and decor, and then you also gain a respect for their craft. We stopped here on a recommendation of the Tater tot casserole and we were not disappointed with that but I heard the corn is better so can't wait to come back and try that. We stood outside and waited about 20 minutes to be one of the 8 people allowed inline inside, they were quick and fast in taking your order and getting us our food. Friendliest little BBQ joint! Arrived around 11:30 am on a Friday and waited about 20 min. Excellent service. Brisket and garlic sausage were delicious. Pork was pulled to order. Collard greens were amazing and a nice variation to traditional sides. BBQ sauce had a vinegar base which I enjoyed a lot, but the meat doesn't need sauce. So I am a self-proclaimed bbq snob. Most of the time I'd say the best bbq is found at a family members home or this one food truck in South Austin. I'm very picky when it comes to bbq. The ever famous Franklin's and Salt Lick (both in Austin) just won't do. And I was scared that Truth was going to be a bust. However, let me tell you TRUTH BBQ IS THE REAL DEAL. Hands down some of the best bbq I've had, period. We stopped in around 2 p.m. on our way through Brenham & they were already sold out of pulled pork and sausage. So I went for the pork ribs and brisket with a side of Mac and cheese & potato salad. Those ribs... Great flavor. Meat literally fell off the bone. So delicious. The brisket... Super juicy and smokey and full of flavor. Even the sides were delicious. I literally ate until I couldn't eat anymore. It Is the truth. They do sell out quickly, we came on a Sunday afternoon at 2 pm and by the time we were done they had sold out of beef and pork ribs along with brisket. My favorite of everything I tried was the pork ribs, they didn't have any beef ribs when we ordered, next I really like the sausage along with the pulled pork and the brisket was all good. Though the brisket did have a little more fat than I like. The Mac N Cheese with cheddar and bacon on top was good, so was the potato salad. 1 meat plate with 2 sides and bread was around 12.95, 2 meat plate 14.95 and three meat 15.95 if I remember right and add a dollar for each additional meat. The whole family loved their meals! From other reviews there is a "dino" plate and free beer in the cooler. :) Not too much of a fan of the cake, but can't complain too much, I'd take the red velvet over the German chocolate. read more

Sides were corn pudding and potato salad. The potato salad was OK. Corn pudding was pretty good. Garlic sausage was good. Brisket was great. The STAR of the show, however, were the pork ribs. Legit Top Tier BBQ. Brisket was amazing -- right up there with Terry Blacks in Austin. Sides were top notch! Mac n' Cheese was the best I've had -- nicely balanced. Pickles were super fresh. The Carmel banana cake was fantastic -- like someone make banana bread into a dessert. Time wise, we arrived late at 1:30p, line was to the street -- about an hour long. The service here is really awesome! There was a slight line outside on a Sunday afternoon, but it moved at a decent pace (and free beer and water never hurts =) ). Their moist brisket is exceptionally tender, with an amazing texture. My only complaint is that it lacked a bit of flavor (there was no smoke in it). The true Texas sniff test is whether or not you can eat your BBQ sauceless. My favorite place in the country used to not even offer bbq sauce cuz their meat was so good. Truth's brisket needs sauce, not to accommodate any dryness like most other spots, but to add the flavor that's missing from the meat.
