I love that the cheese is mixed throughout the brat. Too many have a tube of cheese inside, and it always seems to make the brat greasy. Not these. The jalapeños added a medium heat and a nice flavor. I'll admit I got the bison because they were the only other brats in the case; an afterthought. Man, was I wrong. The bison was outstanding. They're labeled as brats, but it's more dense. The spice blend is perfect, and the texture pleasing. They have a bit of heat, but not bad. You're probably going to Cut for steaks or seafood, but don't leave without the bison.

You already know my Waygu inspired me to have a religious experience. I'm not kidding. I've had both Japanese A5 and Kobe Waygu, and this was better. I got it with a wonderful chimichurri, but this needed no accompaniment. The sides were all great. I don't like Brussels Sprouts, but I always get them because my wife loves them. These were well above average. The mac and cheese was super creamy. Our favorite was the green chile creamed corn. My wife thought the sirloin was very good, and was amazed at its thickness. My son devoured the lamb chops. It's a favorite dish, and he said this was by far the best lamb chops he's had since our 2014 trip to Aruba.
