This isn't the restaurant's fault, because that does tend to happen to dosa when it's no longer piping hot. I considered putting the dosas on the stove for a few minutes or reheating them in the air fryer, but didn't end up doing it - if you do get the dosa delivered, perhaps you can try doing that to recreate the crispiness/freshness.
