I don't know why Georgian food isn't a widespread phenomenon, but if the world could be introduced to it, VAZI should be the gateway drug. Its pkhalis and eggplant rolls are superb, each bite a true pleasure. As eaters, my partner are inclined to save our favorite bites for last, getting the "vegetables" out of the way; but at VAZI we are in constant choice paralysis of which item is best, uncertain what to save for the ideal finale. The carrot, beet, spinach and leek pkhali are all satisfying with subtle flavors and chewy consistencies. They run the gamut from salty to sweet, all excellent. Meanwhile, the eggplant rolls with walnut paste are the platonic ideal of a meal. I would eat it every day, and we actually did while we were in Paris. The restaurant is both elegant and funky, with large red bear plushes next to the window, a walkie talkie system between the front of house and the kitchen and a decibel meter on the wall. I don't understand all of it, but when the food arrives in the dumbwaiter and the waiter delivers it, nothing else matters. In a city renowned for its food, VAZI rose to the top.
