I had the pleasure of meeting Chef Bones at an event a few weeks ago. After a brief discussion away from the station, his slightly smug demeanor, blunt attitude, and overall level of confidence in his product left me salivating to try his pizza. When one is a true master at a craft, one must posses a level of confidence well above the average person because without this confidence, execution can be inconsistent. There was no inconsistency here. This pizza was phenomenal. Chef Bones described his pizza as "simple" because as he said, "simple is best." I couldn't agree more. His pizza transported me back to Pompeii outside of the ruins to a little cafe that served me one of the best pizzas I've ever eaten. The crust was more than just the crispy watery crust many west coasters drool over because it reminds them of New York crust. No, this crust was light yet flavorful, crispy yet pillowy soft, a perfect bed of starch to soak up the flavors of a perfectly cooked pizza. And if I may add, cooking a pizza perfectly is no easy feat. Underdone and you might be scooping your cheese out of the middle like soup, and if it's over cooked your crust begins to burn as well as all of your delicate ingredients. The sauce was delightful. Sauce in my opinion is the most difficult part to get right. If it's too bitter you're eating Dominos circa 1999, too sweet and you're eating DiGiornos. This sauce was incredibly well balanced and NOT overly seasoned, a very common mistake of many "authentic" Italian restaurants - All aboard the garlic train! - No thank you! Chef Bones makes his cheese from scratch and I'm pretty sure that even a six year old could discern the quality difference between his cheese from other pizzas. To me this was his signature on the pizza. It was so incredibly moist without being overly tangy, and so soft without being too stringy. People say they want to stretch their mozzarella apart and watch the stringy cheese look fresh. Why? I want cheese with all of that flavor that is melt in my mouth soft. This is what his hand made cheese did. The highest marks I can give. Of all the pizzas I've had In the United States, nothing gives me more joy than to say this was in my top 3; nestled with the likes of a perfectly cooked pizza from Pizzeria Mozza and a fresh out of the oven slice of cheese from Ben's in the south village of Manhattan. Chef Bones it truly was a pleasure. Thank you for sharing your art, and I am counting the days until I take a trip down south to try to clean out your truck. Joseph and Jeremy catered an event for my daughters preschool. Both Joe and Jeremy were extremely courteous, helpful and the pizza was amazing! They allowed the children to create their own individual pizzas and assisted with the process. My daughter thoroughly enjoyed the experience. As for the parents, I think we enjoyed it much more. The customized oven is gorgeous and creates delicious masterpieces. We couldnt get enough of their Brie cheese and Truffle-oil pizza (still salivating at the thought). My friend and I were excited to try the pizza at the Scholb Bingo night. The crust was so good. I could tell by the look and smell when we got there that the pizzas would be good. They had 3 to choose from- veggie, pepperoni, and margherita for $12 each. They said we could have whatever we wanted on our though, from what they had. Just a really good brick oven pizza that went perfect with our beer. I will definitely be recommending them for future work lunches/ parties my company has. Joseph and is team arrived timely and were very courteous and considerate of our guest. They set up everything so that the food was prepared and served quickly and in a party like atmosphere. Great Food, nice staff, exactly what you want at a catered event. Every single guest raved about how good the food was. I I attended another event a couple of weeks later and they also hired a similar pizza company with a wod burning over etc. It was no comparison to what Joseph served, he knows his ingredients and what works well together to deliver the best flavors with every single bite. What a disaster! They showed up 2 hours late to begin with. It was a sit down 60th birthday for 30 people. Menu had been changed by Joe without the hostesses knowledge - food was ice cold - branzino was filled with skin and bones fillet was sinewy. The setting was so spectacular - truly a shame the meal was so poor. Perhaps this is not what they do best. However they should not have agreed to such a party. Even the specialty- Pizza- was soggy. Toady at Absolution tap room they made an outstanding pizza. It was cooked to perfection and the toppings were fresh and full of flavor. I really like the touch of kalamata olives with the marscapone cheese. Nothing beats a great pizza and a cold beer go see them at the local Torrance tap rooms and enjoy. read more

I've had their pizza a few times at King Harbor Brewing Co in Redondo Beach. Great concept, good menu, and pretty tasty! The staff is very friendly (some more than others). I'm docking a star because although the edge crust is perfect, the rest of the pizza comes out soggy and so the pizza is limp when trying to eat it (not sure if that's something they can control though). I wouldn't mind if they knocked off a dollar and made it $10 too...seems a little pricey. read more

I've seen them there a few times but never tried any of their pizzas till last night. The pizzas are not greasy and the flavors are on point! Vella Pizza catered my son's birthday first party last weekend. The food was absolutely delicious - even my mom loved it and she is very hard to please. Joseph and 2 helpers showed up on time and were friendly and easy to work with. The pizza oven, which Joseph built himself, was very impressive and my guests enjoyed watching the pizza being made. Joseph is a free spirit and I have a type A personality so it took me a few conversations to figure him out, but once I did, things went very smoothly. Where do I begin??? First of all, something as good as Vella Pizza needs a special extra start option. YELP get on it already!! If I could give Chef Joe and his team 10 stars I would!! I booked Joe for my twin girl's First Birthday party at my house in Glendale. He braved Southern California freeway madness from Redondo Beach to get to my house; ask me if he charged some extra mileage BS. No, he did not! Joe was professional and prompt from the word go. He made the booking process a breeze; he had ideas and suggestions I hadn't even thought of. On the day of, he arrived early to set up in my driveway. (I imagine my poor neighbors were pissed off because they could smell the heavenly aromas wafting through the air; I know I would have been) The pizzas were ready exactly when he said they would be. He was even kind enough to offer his assistance to the rental company who couldn't get up the tent. Now lets get to what really matters here; the pizza!!! They were absolutely delicious!!! I cannot tell you the amount of raves and requests I received from my guests. What Joe has created is awesome! Not only is his oven freaking awesome but his pizza is quality from the dough on up. The sauce has just the right balance of acidity and sweetness. The toppings are super fresh and flavorful. I had other appetizers; therefore, I only asked for the pizza catering. Joe just happened to have farm fresh produce, which he just happened to whip into a grilled vegetable platter and fresh green salad. I didn't ask for any of it, he just did it because he wanted to. Come on, who does that these days??? It is abundantly clear that Joe is passionate about what he does. He stayed until the very last pizza dough he had was cooked to perfection; not because I asked him to, but because he cares about his reputation and his work. WE LOVE VELLA PIZZA!!!
