The Food & Wine Pairing: The Main: Ordered the warm, buttered lobster roll and added the optional 15 grams of Kaluga caviar. The execution was superb; the lobster was sweet and perfectly cooked. The briny brightness of the caviar provided a precise counterpoint to the rich, warm butter. The Sides: Served with excellent, well-salted french fries accompanied by ketchup and a high-quality aioli. The Wine: Paired the dish with a Grüner Veltliner, which had the exact acidity needed to cut through the richness of the butter and complement the seafood. The Dessert: Finished with the strawberries and chantilly cream.
