It was a sunny summer day, so the outside temperature was in the low 90s...so inside the trailer (not a traditional food truck as in DC/VA as trailers are permitted in MD), the temperature had to be well over 100. Second, the beans - a medley of beans, peppers, onions and homemade BBQ sauce...sweet, mildly spicy with a vinegar base. Finally, the brisket - cooked to perfection, but lacking any flavor from the dry rub. Paired with the homemade BBQ sauce, it was damn good...but just okay without.
