The place is order at the counter, touchscreen kiosk, Chowbus online ordering, and delivery (GrubHub & DoorDash, higher pricing). There is limited table seating inside this cozy space. I stopped by Sugakaya recently for takeout. I ordered on the touchscreen kiosk, the A5 Tonkotsu Ramen ($15.95 plus tax) and my order was all set and packed in about 10 minutes. Similar to other ramen places, they use compartment stacked plastic containers to separate ingredients including the hot broth in the bigger container/bowl and the ingredients & noodles in a separate top container with lid stacked on top in the bigger container. This is to prevent ingredients and noodles from becoming soggy and good for transport. I did eat the ramen a half hour later at the hotel, dumping the ingredients into the hot broth, ready to eat. The Tonkotsu Ramen had hearty pork bone broth with soft ramen noodles, tender sliced chashu pork, soft-boiled egg, bamboo shoots, kikurage mushrooms, green onions, fish cake and nori. I enjoyed my ramen lunch with some hot tea. I would come back here for takeout if I stop at this mall again.
