We came in today to make a payment on some meat processing that a friend had initiated. When I walked in I heard a voice welcoming me in, but before I could even think, I was hit by the aroma of delicious brisket being smoked in the back. This is more than a processing/butcher shop, you can shop here for various cuts of meat, seasonings and even just pick up a hot lunch with beef, macaroni salad and potato salad. The staff are very friendly and communicative. I started asking about how they process and smoke their beef because I'm a home smoker as well and I'm always open to new ways of seasoning and smoking cuts of meat. Next thing you know, one of the proprietors is leading me to the back where there is this monster sized double door smoker. The doors pop open and there were at least 8 huge briskets in large pans, some covered, some not. They were in various stages of smoking and were covered with a seasoning blend that he created. He was in the process of pulling this meat for hot lunches. The steam and aroma were definitely intoxicating. He cut off a small piece for me to taste and it just melted in my mouth. .....not what I was expecting from a meat processor! Well that sealed the deal for me and I ended up coming home with a nice sized brisket, a jar of seasoning mix and some skirt steak. ....I only came in to make a payment towards some processing that a friend had done. They also have a selection of various sausages, hotdogs, steaks, roasts, pork and even chicken. The huge slab of maple bacon was pretty tempting. Overall, we found the pricing very competitive and some better than the supermarkets, as well as the satisfaction of knowing that the meat is local and where it came from, and that the ground beef is from one cow, not a blend of a hundred cows. The staff are very friendly and willing to discuss their products and services. Such a nicer way to buy meat, much like the old butcher shops of days gone by. read more

I stopped here last week to get some tenderloin for a beef wellington I was making for Christmas. I hadn't been to a butcher before so I didn't know what to expect. There were a couple of other people there getting meat as well and the employees were all working hard to fill orders. I was greeted immediately upon entering. The guy who helped us was friendly and helpful. He seemed like he could be new and he was asking questions from an older guy who was happy to help. They cut the tenderloin for us and gave us the trimmings upon request. I overheard another employee helping a customer figure out how much meat to get. He was feeding a big family with teenagers and the employee was asking a bunch of questions to make sure she gave the best recommendation possible. That interaction made me feel like I made the right choice in butcher. The meat we got was very high quality. It was fresh and tender and the dinner I made with it was amazing! It was very expensive but it was absolutely worth the price. This is a treat that I would get once a year and no more. The shop itself was about what you'd expect in a butcher shop. The employee area was a good size and the customer area was small and narrow. It smelled surprisingly good and I left wishing I had gotten some of the smoked meats I was smelling. The parking lot is small but easy to get in and out of. There isn't a public bathroom (that I could tell) but you'll only be there for a few minutes so you should be fine. I would definitely come back here the next time I need some high quality meat. The people are friendly and knowledgeable and the selection is expansive. Definitely give these folks a try! read more

Changed stars from 1 to 5* I was upsold by the butcher on duty by 2.5lbs of prime rib roast. Cost me an extra 50$! I suppose I should have known but I didnt and asked the butcher for his advice as to if 4lb would feed 3 people with a little left over, he said barely and so I asked for another pound and he cut 2.5ish pounds...I am so humiliated and I feel robbed. I guess you cant ask a professional for their honest feedback and knowledge anymore. read more

Eleven years now and 4-Star is still providing excellent butchering services and I pick up their meats when I'm in need of meat I didn't buy by the side or quarter. Their beef jerky comes in a variety of flavors. I'm really grateful to have a butcher so close to where I live so that's another plus. read more

I had a problem with a cow, called all the butcher shops in the Roseburg area, they couldnt give you the time of day. Called 4 Star, he said bring it right up met me after 6 pm did me a good job . read more

The meat isn't bad, the jerky isn't bad. The people who the work there act like they don't want customers. They are very short with answers, and are unhelpful. I was excited to hear about a meat market closer to North Eugene, but after trying this place a handful of times I have come to realize their product is inconsistent, most things are frozen on request. The one time the girl said they only have frozen chops, the butcher interrupted and said he would cut some fresh, and the girl rolled her eyes. That was my last visit. Get better help, or continue to get reviews like this. read more

So I'm back at it. Swapping from an office job to one that involves labor will teach you the value of protein. Reading another review asking "how is this company still in business" given their lackluster phone etiquette puts me back on my soap box. This company has what I refer to as the Chinese food business model: they are rough around the edges and have a shitty location, but they provide a superior product at a great price and they know it cold. It's the same story with 4-star: every time I walk in I need to give them a minute to warm up (literally: the place is a huge meat locker), but they know their product is good, and after a few minutes, they know that I know, so by the time I walk out, we are fast friends again. I haven't seen anything like it in 3 counties, and I've been looking and asking around for years. Local meat cut on the spot and they give great value for money. Buy some of their sirloin steaks and tell me you've had better. Some of the local high end restaurants get their meat from 4 star for a reason. Hell, I even pay cash so that the credit card companies don't get their cut. Please give them a shot and open your wallet before they disappear. read more

It has been a long while since I have bought meat from here, I for some reason forget to stop in, which is stupid considering I live near by. Lately I have been really disappointed in the rising costs of bacon at the grocery stores, and to be real honest the quality at the stores are give and take. Thank goodness I remembered 4 star yesterday when I wanted to make some soup. They have some really nice, and thick slices that cook up perfectly. I got the peppered bacon. The price here is also really inexpensive. I also really like stopping in here before any long road, or camping trip to get some of their jerky. They have some of the best in town. My favorite is the sweet teriyaki. It just oozes goo all over your fingers in the car, so I have to remember to have the wet naps ready. Last time it was so fresh I had to have my dog lick my seat where the bag was. So it is always a good idea to remember also to bring a zip lock for your jerky. I get out voted and my boys go for the hot peppered jerky! They just devour it!! Once they are done, they move on to Mom's sweet jerky! This has been a tradition to do for years! There has been a few road trips when we forgot to stop, and we were very regretful. Especially on those long stretches of highway when you can't stop for food. This is perfect. Now that, Spring, and Summer are around the corner and camping is near I see a lot of jerky stops in my near future! read more

Fresh meat and great people. This place is close to our house and we are hooked. We never buy meat at the grocery store anymore. Never been disappointed. We've bought the whole beef set twice, ribeyes, holiday turkeys, bacon, ground beef, standing rib roast and most recently the bacon/cheese/ jalapeño burgers. All were fresh and flavorful. I've been coming here for a couple decades now for their beef jerky, but this place does so much more. Need your deer processed? Your elk? Your elephant? Your blue whale? Well, maybe they can't actually process a blue whale for you, but as friendly and professional as these folks are, I bet they'd give it a shot. This is an old school meat market. You can get darn near anything you need here. Need some custom cut steaks? Some pork chops? Need four pounds of teriyaki beef jerky? How about some pepperoni? Yeah, they've got all that and more. This is a moist jerky, rather than the dry leathery kind. And oh man, is it good! I usually get a couple pounds of the peppered and a pound of the regular, and it doesn't last nearly as long as it should. Heck, I've usually eaten half a pound by the time I get home. If I stop in on my way to the coast? Yeah, better get an extra pound just for the drive. I've had jerky in about 200 places all over the country, and 4-Star is in the top 3. Add in the amazing customer service, friendly folks, and a vibe that says you're family even if you only come in once a year? Yeah, I'd give it 6 stars if I could. read more

We don't eat a lot of red meat anymore but when we do, we only buy here. Whatever we get, it's always fresh and full of flavor. However, I have 2 complaints... 1. They DON'T take debit cards!! You have to either pay in cash or write a check. It's 2015 ya'll! Seriously, get yourself setup with a Square card reader!! 2. The staff is a tough crowd. Not 1 single person in this place seems to give a flyin' fart who you are, who you think you are or who your daddy is...or what you want. The first time I purchased something here (after running home to get my check book) the lady at the register joked that if the check was bad, she would send the butcher after me... ummm...Awkward! TIP: Maybe hire someone to run the counter separate from the butcher or his crazy sister (or whoever that crazy lady was) Maybe someone that smiles and has a DECENT sense of humor? This is our Eugene "go to" store for a good steak, bacon, and burgers. The meat is fresh and flavorful. The people are friendly too. My only complaint is they are open for limited hours on weekends, so plan ahead. We also ordered a Thanksgiving turkey there last year and it was super juicy and flavorful...again, order ahead. While I was there picking up my meat, I was so impressed with the cleanliness of the shop, the customer service (even the patience, as they were training a new employee), I bought beef ribs and 10# of burger even though my freezer was full! 4 Stars for 4-Star Meat. Really happy with the NY steaks I bought at my first visit. Service was great, but having to understand that I came in 10 minutes before closing. While visiting my brother in Eugene, re recommended this place. I bought some (jerky isn't cheap). I got on the plane the next day to come home and the day after that all of the jerky was moldy. The people there were really nice but u live on a fixed income so I don't have money like that to throw away. Don't buy from them unless you are eating it that day!!! read more

My mom recommended this place to me, she told me the customer service was awesome and their steaks, to die for. My first time in, the woman behind the counter was so patient.. there were people behind me and I wanted to order a variety of things. She guided me through how the meat was cut and how to order. The sausage I bought is sooo flavorful and isn't processed like what you get from the grocery store. And the HAM HOCKS!! Took my black beans over the top. First time I purchased meat from here was a good experience. This second time will be the last time. Customer service was horrible. The lady in the back room sat on her butt while I stood and tried to explain what I needed. Being new at buying bulk, she looked at me - with a smirk on her face, like I was an idiot. I was the only one in the place, she could have got off her ass and helped me. Once I finally got my order submitted, feeling like a dumb-ass, I stepped outside to follow the notice they posted on the front door, (one customer at a time inside) due to the coronavirus. HOWEVER, NO ONE was wearing hair net, the disposable plastic gloves when handling the raw meat and not one persons was wearing a mask. On top of that, the lady slicing the bacon (no gloves, no mask) WIPED her nose with the back of her hand while weighing the bacon I ordered!!! WTF??? NEVER AGAIN. read more

I called 4 star meats on Prarie rd. to purchase a tri tip after the one I bought at winco turned out to be loaded with over half a pound of fat hidden on the underside! I spent at least 20 min. trimming all the fat only to find it would no longer be big enough for my family meal that night. I called 4 Star Meats and they were very friendly and helpful! When I got the roast home...wow! It was perfect. I didn't need to trim anything. When I calculated the cost of the Winco roast after trimming all the fat, the Winco cut of meat was $6.65/lb... 4 Star roast $5.09/lb. The 4 Star roast was lean, tender and juicy. The Winco roast in my opinion was not as good a quality even though it was cooked under the same conditions. I know where I will be buying my meats and poultry from now on!! read more

Horrible customer service! horrible phone manners!! horrible salesmanship!! I can't believe these people are still in business the way they talk to people on the phone. Also they DON'T process you're wild game anymore. Unless it's already off the bone (if you know how to do that you're going to butcher it yourself). Don't even think about calling about sausages or summer sausages. It was like pulling teeth getting an answer from this lady. And if you want to jalapeño summer sausage you have to bring in the jalapeños yourself. I've never heard of such a thing. read more

Used to buy meat here all the time. I stopped after purchasing a LARGE quantity of filet migneon. I kid you not, the meat had a liver taste to it. I have no idea why, but think it might have been poor butchering. When I called to talk about this I was told that I just didn't know what quality meat tasted like. 4 Star gets "NO" stars from me! Been raising holstein steers for 40 years. 4 star has been our butcher for 20 years. Sent in a steer that dressed 911 pounds, got back Tbone steaks that were not much bigger than lamb chops. Who do they think they are kidding? ...we have been ripped! In the last 12 months we and our customers have spent close to $3000 on pork and beef processing at this butcher...they have seen their last dollar from us. read more

This place has been the best for our animal harvests at our farm. The job gets done quickly, with the end result of no stress to the animal harvested and a great tasting meat. The cut and wrap fees are reasonable, with double wrap packs. The custom cutting to your specification is a plus. Some of our customers who purchase shares of our meat don't know a lot about the different cuts, but after talking with the crew they understand what they are getting with no problems. Had our pig butchered here. It is absolutely horrible. They did not hang the pig long enough and the whole thing is useless. The bacon has no taste and the ham marinated for two days and it tastes like iron. When we talked to the owner he refused to do anything about it. He said all he could do was a 10% discount on our next order. Why the hell would we come back just to have more ruined meat. They must be out of their mind. I'd give a negative star if I could. I bought a tri-tip roast here after constant disappointment at other stores. So many stores/butchers just don't know how to cut a good tri-tip. So I called 4-star on a recommendation and they were very nice and helpful. They got it ready for me and I was able to pick it up right away. When I got there, the man went and got the roast and showed it to me before wrapping it up. It had a really nice marbling and a nice fat cap that wasn't too big. Perfect. Even a few people in line were remarking on the great looking cut. So I got it home, grilled it, sliced it, and WOW. Fantastic! You just can't beat local butchers with local grass-fed beef. I won' t go anywhere else! We also buy their pork chops, ground pork, whole chickens, bacon...all our meats! LOVE THEM! read more

Just before Christmas my mom (84) and I took about 30# of pork shoulder and loin roast(which we hadn't purchased from them) to get ground up to make a traditional Danish Christmas sausage. It needed to be ground 3 times. They gave us a great price (lower than quoted on the phone) and threw in some ham bones they had, for us to make broth. Couldn'the have been happier! read more

We have been buying a half a beef for 13 years straight. And i will say that 4 star meat company is the best yet. This was our first year here. The hamburger is so good tasting. The steaks are excellent and are tender. The people there were really helpful and kind. And most of all the price was pretty good. Thank-you Kathy and your staff.
