    Beer Flight
    Chad H.

Apoptosis is a nice and classy bar/brewery with a variety of crafted beers. I was impressed by this location, although it was a big apple bagel previous, the interior is well balanced to be clean but not sterile. It was very clean and relaxing, although some of the tables are a little packed into the tiny venue. My guess is the service behind the bar were the two owners, and one bartender they were able to get during this pandemic, all whom were very friendly. Unfortunately, I got one wrong beer in my flight (all the names of the names of the beer are scientific-related, so I'm guessing it's easy to get confused), but the mistaken was still pretty good. The Beer: I had a flight and the 4 flavors were all very good. The variety they demonstrated wide had quite a few unique beers, such as a grape cream ale, milk stout, IPA, raspberry wheat, a blood orange something, Pineapple seltzer etc. etc. I found that a lot of their beers have a very similarly cultivated flavor profile that is a mild flavor but every beer always has a very clean after taste. The beers are served lightly chilled, but not ice cold, (probably to let the flavors stand out). My guess is that the beer might not be for everyone, but I think overall, the beers are made well and are easily drinkable. I don't think they had food or a kitchen - I don't recall seeing a menu. But overall, I was impressed by Apoptosis, and highly recommend giving it a try.

One Well Brewing is the kind of place that makes you think, "Yeah... I could probably just live…read morehere." The kids disappeared into the games so fast I briefly considered filing a missing persons report before realizing they were just... happy. As a parent, I experienced something I hadn't felt in years: finishing an entire meal while it was still warm. I almost cried. The pizza is offensively good. My cardiologist has specifically asked me not to be tagged in any more of my Yelp reviews, but if you're reading this, Steve... mind your own business. Some relationships are worth fighting for, and mine with this pizza is one of them. The beer was fantastic. Every pint tasted like it was brewed by someone who actually enjoys making beer instead of someone trying to impress a guy named Chad who owns three flannel shirts and says things like, "I'm getting notes of pine and emotional unavailability." The place is huge, which is exactly what every parent dreams of. The kids sprinted off to the games, the dog made about 47 new friends, and for a glorious 20 minutes nobody asked me to open a juice box, settle a courtroom-level dispute over whose turn it was, or inspect a mysterious object they found on the floor. I wasn't parenting anymore. I was just a guy eating incredible pizza in public. One Well somehow found the perfect balance between brewery, family hangout, dog park, and therapy session. I walked in stressed, left full, and briefly convinced myself I could handle having more kids. Thankfully that feeling wore off before I got to the parking lot

Turning into the parking lot, I…read moreremembered it was previously an automotive business and I am so glad to see that the building is being used to help better Kalamazoo with another brewery. Walking in the area is open and still in need of work but you can see they are working towards that currently. We reviewed the menu and learned that this was a Meadery at heart. We didn't know this previously but think it is great because there not many of them, let alone in Kalamazoo. We scanned through the tap list and picked out 4 to try and sat down. The owner was sitting at another table with someone that sounded like somewhat of an interview. After a little while he got up and came over to our table and asked if he could sit down with us and show us the vision for the brewery. We welcomed him to join us, we really love talking with beertenders and owners when they have passion in what they do. He had a book with photos of his vision which is going to be Viking based (the name makes that obvious) with some Thor inspiration. You could hear his passion and love for the brewery and what he does when talking about the things to come which made it that much better. Everything looked super cool and I can't wait to see it once completed. The owner shared his past history prior to the brewery which was in films and music, Ben couldn't have related more to this man if he tried. LOL. Be sure to stop in now to try their tasty meads and then once their renovations have been completed, we will be following them on social media to see their progress.

Finally we made it there and loved it. Ben and I both asked each other how it took us that long to make it happen. During this visit to Michigan, I was with just my Dad and he wanted to visit his bestie that lived close by so I drove him over there and I left to go get some sours while they talked and caught up on their own. I felt it was gonna be way more fun drinking alone than sitting around listening to two old grumps talk about the same stories of their younger days that I have heard over and over as a child. LOL. I was 100% correct. When I was talking in, I normally there was a food truck outside and behind that they were setting up for a wrestling match. I kinda thought it was funny because that is just something Ben would have loved to stay for if he had been with me. Inside was fairly business with everyone there getting ready for the matches but that didn't disrupt the friendly service that I had the first time I was there. Even though I haven't been to Wax Wings many times, each of the sours that I have tried have been delicious, I even brought some canned home with me to Florida!!! I look forward to the next visit!

Unfortunately, when we visited this most recent time, the market was not working so I ordered a flight with my dinner. I ordered the Honey Chicken sandwich with the cheese curds and it was honestly delicious. The chicken was good and a perfect blend of savory and sweet, the sandwich came with lettuce, freezer pickle and ranch. The cheese curds were surprisingly some of the best I've had and were perfect with a bit of ranch. I'd have the meal again and hopefully next time, the exchange is up and running! :)
