We came here twice during our stay - once in the afternoon /evening for happy hour where we ordered smash burgers and oysters, and a second time for breakfast. We had wonderful servers and delicious meals both times! For breakfast, Baba was our wonderful server! Their breakfast buffet is a bit of a hybrid as they have some things laid out and other things on a small menu that you order from. Some things on the menu included muesli, avocado toast, eggs Benedict, and omelets. The portions weren't too big so it was easier to try several things off the menu. Splurged on Sunday brunch here, and it was pretty good. This is an all-you-can-eat experience where you get to order an assortment of enticing-sounding dishes from a menu. It almost goes without saying, but the place is gorgeous and the service is basically world class. Shout outs to Pradeep and Cesar for taking immaculate care of our table. My two friends and I ordered one of everything off the menu (because why not) and a few repeats. Here were the standouts: lobster mac and cheese (delightfully heavy on the Gruyère, and laden with large pieces of slightly chewy lobster); smoked salmon Benedict (nice textural contrasts between the runny poached egg, the salmon and a tiny square of crisp potatoes); berry smoothie (refreshing, not too sweet, healthyish); and the crowning glory, the "ooey gooey skillet" (decidedly unhealthyish) which we all agreed was way better than its closest relative, apple pie. Next time I'd skip the pancakes and chicken & waffles, and I won't need to order bone marrow ever again. We spoke to the manager, Lauren, and she was apologetic and said she'd personally clean it herself. She then comped our kids' breakfast meals, which was nice of her. The spread is very basic-bagel sliced bfead croissant and a couple muffins, oatmeal and yogurt with some toppings.and some hot items like bacon, potatoes and sausages. They had some items you can order off a menu like omelette and avo toast. Again everything was very basic in taste for such an expensive (if you pay for it) place. Also, only black coffee is included and you pay extra for capuccino (weird i know for an all inclusive breakfast). Service was good on all 3 mornings. We also dined here one night. Got the 2 vegetarian pasta options, a cocktail and couple beers. It was a very expensive meal in my opi ion with super tiny portions. I initially wanted to try the Chef's bench live oyster which was advertised on their website. I called to confirm with a lady after making the reservation online as there was nowhere on the reservation to indictate my request. The lady who answered the phone was very polite but confused. she indicated that she would make a note. On the day of the reservation, we were surprised to find out this offer is only for Mondays-Fridays, which is contrary to the info on the website. Our server was very polite and clarified. We decided to try their oysters still as well as their charcuterie board. The oysters were fresh, just not my type cos of my personal preference but i did like the variety their charcuterie board though. The ARC - Fairmont Waterfront (Breakfast & Dinner) Breakfast at The ARC was included with our Chase booking, and at $65 per person, it genuinely impressed. What makes this buffet stand out is the made-to-order menu paired with unlimited self-serve stations. You can order fresh items from the menu while also building your plate from stations featuring fruit, bread, spreads, cheeses, and a hot bar. The hot bar was excellent--especially the sausage (well-seasoned and moist), the eggs (easily the best buffet eggs I've had), and the oats, which were perfectly cooked--neither watery nor dry. Portions from the menu were thoughtfully sized: not overly large, which made it possible to try multiple items if you were hungry. The drip coffee was surprisingly good, and they provided a personal pitcher so you could refill at your own pace. The berry smoothie was fresh, delicious, and a great healthy way to start the day. A few notes: * The muesli wasn't for me due to the coconut, but coconut lovers will likely enjoy it. * The lemon cake was fragrant with visible lemon pieces and great flavor, though it could have been slightly more moist. * The salmon Benedict would have benefited from fresh herbs or toppings like dill, capers, onions, or cucumbers. * The hollandaise sauce could have been more flavorful. Dinner was just as impressive. We tried the steak tenderloin, and somehow they managed to make a medium-well steak incredibly moist and juicy--no easy feat. My partner can't eat steak medium or below, so this was especially impressive. The pairing with the mashed potatoes was phenomenal and beautifully balanced. Is it worth $65 per person? If you have a solid appetite and/or can at least enjoy three menu items plus a drink, absolutely. If not, you may struggle to get full value. I ordered the 3 course meal for $79, it included a soup, main entree and a dessert. My husband ordered the tenderloin with a side of mashed potatoes. I ordered the soup which was the pacific chowder and the waitress offered to split it into two so that my husband could have a taste. She was very thoughtful there. The soup was creamy and filled with a lot of seafood. Next, the braised rib was tender and paired nicely with the chive mashed potatoes. Lastly the blood orange sorbetto was so good. The tenderloin was so good. The profiteroles came in 3 but our waitress sent the order for 4 so that my husband and I could get two each. How thoughtful was that?! We went in for the Bottomless Weekend Brunch for $69 per person. The hostess greeted us and sat us promptly by the window. The wait staff was extremely attentive and responsive. Starting off with the berry smoothie, it was light and not very sweet which complemented the rest of the brunch. The Souffle Suisse was light and fluffy yet packed a powerful cheesy flavour with each bite. The Padrons Peppers served as a nice way to cut through the cheesiness of the Souffle Suisse as they provided a refreshing tartness. Next, the Smoked Salmon Roesti felt like a benedict but with a crispy potato base. Very delicious as a whole but I would've preferred a stronger smoked salmon flavour. The Pulled Pork Benedict was well done however, it was slightly on the sweeter side. The Dutch Baby was huge however it was bland and the "bread" part of it was quite airy yet dry. The prosciutto, burrata and egg all had delicate flavour profiles which meant there wasn't very much to taste (also lack of salt) but the creaminess of the burrata was appreciated. The Lobster Mac&Cheese is one of those dishes to share rather than to get on your own as the portion size was huge. You could taste lobster in every bite and the mac&cheese itself was nice and creamy. The 6" inch bone marrow had a rich taste and mouthfeel especially paired with the scrambled eggs and toast. However, due to the richness, it's not recommended to order it more than once. Lastly, the Chicken & Waffles were delightful as the fried chicken was perfectly crispy while the waffles had a crunchy outer shell and soft inside. The chicken was seasoned well and it paired perfectly with the habanero maple syrup. Overall, this brunch was well worth the $69 per person. Almost everything on the menu is a hit. I ordered the white wine and spare ribs, which were cooked perfectly, and my girlfriend had the gnocchi--rich, comforting, and beautifully prepared. The food was fantastic across the board. Our server, James, had just moved to the city, but you'd never know it from how warm, attentive, and professional he was. What impressed me even more was the teamwork on display. Twice, when James was in the middle of conversation with us, Cesar stepped in and quietly took plates from his hands so he could stay focused on us. It was such a thoughtful gesture and really showed how seamlessly the staff works together. Not something you see everyday! They give a huge amount of lobster for the small dish. Next time I would order as much of these I could eat...!! Bone marrow toast: Great toast and soft scrambled eggs. The bone marrow was very rich. I can't believe they have bone marrow as an option! Would order multiple next time. Berry smoothie: Really good. Get as many as you can drink but don't take away too much eating room. I have been to ARC before but for their brunch menu, this was the first time I tried their dinner menu. They were also taking part in Dine-Out Vancouver but I didn't opt for that because they had a lot of seafood items on their menu and I don't eat seafood. I went there for my friend's birthday so it was a big table. I got their mushroom rigatoni which was pretty dry and did not have a lot of flavour. I also got their truffle mashed potato and brussel sprouts on the side. The mashed potato did not have any salt and I could barely taste the truffle, the brussel sprouts were pretty creamy which made them soggy and not very appealing to eat. It also did not have a lot of flavour. For dessert we got their Chocolate Cherry Frangipane which was again, pretty dry and did not have a very chocolatey taste. It was more bitter. I did not think the price of the dishes justified the portion or the taste. The service was incredible and pretty fast even for a busy Saturday night! Would I go again? To our surprise, it was better than we expected, portions were very decent even the husbands were full. And all for $55/pax. We love Julia, our server. My friend and I came here for dine out Vancouver 2024. Their menu looked great as it included a four course meal. There was only one option for the DOV menu but of course we could choose from their regular menu as well. All of their food tasted great. Service was great. Our reservation stated we would have 1.5 hrs for the dinner but it took us about 2 hours and 45 mins to finish the whole meal. Indeed we were ok with that. We paced ourselves when eating the appetizers, second main dish, third main dish and desserts. We chatted a lot while eating. We were happy that the server or restaurant didn't rush us to eat the food and finish the meal quicker. We took Skytrain the downtown and walked to the restaurant. It was convenient if we took the Skytrain. Driving would be a hassle as there is less street parking in that neighbourhood. There was paid parking at parking lots nearby but I personally hate to pay parking so I would prefer taking the public transit to get to downtown Brunch and dinner as well appetizers here are great. It is very spacious inside the restaurant. My friend and I were lucky to eat next to the windows so we were facing the ocean and Canada Place. It was beautiful! What a spectrale dining experience, from start to finish! Firstly, the entire front of house team provided incredible service! From being seated to the friendly engagement on the menu/wine list to ordering. The food servers were also terrific. Clearly all well-trained, but they seemed to complement each other flawlessly. Likely my best service experience in well over a year. The food was equally great. From the pull apart roles to the ribeye steak and corn (with bacon and CO sauce), all were incredible. And the wine (a Can Franc from the Okanagan region) were a pleasant surprise and have increased my understanding of global wine growing regions. The restaurant is modern but warm, clean while inviting. High ceilings and a walk of windows. I can only give 5 stars but by comparison, it actually merits more. read more

I'm so glad that we came here because we stayed at the Fairmont for a family wedding. This was the best breakfast buffet I've had in my entire life! It was incredible! Everything was amazing and well worth the price of $39 cad. The pictures do not do justice for the type of variety and quality that you get. They had everything from French toast, sausages, to eggs, to tomatoes, to quiche, to potatoes, to bacon, etc etc etc. Then there was a separate section with just fruits, cheese, avocado yogurt, oatmeal, smoked salmon, etc etc etc! And then there was an additional section with all kinds of pastries that you can imagine! If that wasn't enough, I totally didn't expect for the buffet to include a cooked to order menu with avocado toast, pancakes, omelette, eggs Benedict and more! They even have cute individual jars of peanut butter! Also comes with juice and coffee. I was incredibly impressed with the selection and everything tasted amazing. I would come back here in a heartbeat. The only regret I had was that I wasn't all that hungry to try more of the food! We came on a Sunday before church and we were pretty much the only ones there until nearly the end, so it was quite nice that it wasn't populated so we could eat all by ourselves and felt safe because we don't like crowds. read more

Since the Fairmont Pacific Rim only offered breakfast in the Botanist and we were interested in mimosas we decided to walk down to Arc and eat there. I was a little interested as the hostess informed people that they had no available tables for brunch and if they could eat in an hour they could sit for breakfast. We were the only ones to agree to those terms. We were seated and ordered quickly. I opted for the pancakes and was very happy with them. They were soft with slight crispy edges, not too big, not too small, had excellent fruit and even better maple syrup. We ordered cranberry juice mimosas and that was excellent. They were well balanced and quite lovely. What was funny was when our waitress asked if we wanted a second round we looked at the time and said we understood we had to leave in a couple minutes so no thank you. She checked the reservations and told us that there was no worries, we could stay as long as we liked. As we drank our second round the restaurant remained fairly empty. When we finished our third round and we're leaving, a good 90 minutes after we sat, it was just starting to pick up. I couldn't see why the other two parties that had been turned away as both were a couple of adults each. It was a great meal tho! read more

I initially made my reservation for 1:30pm, which would have been a total bummer if we hadn't arrived early and were able to be seated at 12:30pm! I ordered the Eggplant Schnitzel Burger with cabbage slaw, smoked chickpea aioli, pickles, and even a vegan brioche bun. It was delicious! I'm not a huge fan of eggplant but it seemed unique enough that I couldn't pass it up. The fries were excellent. My only complaint is that there weren't more of them. Our waitress was a hoot!
