    I'm so happy to have discovered Bandidas bake shop!! The owners are so sweet and have a knack for making a space feel inviting. The vibes are great in their tiny spot with lots of cute merch and yummy fresh foods on display. The warm sandwiches on fresh house made focaccia are insanely good. The desserts are also amazing, as are the takeaway items like the curry chicken salad. The sausage biscuit sandwich is a delicious morning choice. Definitely stop by for lunch or breakfast!

    I took a break and decided to grab a quick breakfast at Bandidas Bake Shop at 1755 E. Edgewood Dr. Lakeland. It's a small store front in the Bently Plaza next to Gigi's Korean Market. They have a marvelous selection of fresh baked items and have a breakfast and lunch sandwich menu. (See photo.) Everything is made to order, so you know it's fresh. I had the Sausage Biscuit which is a pork sausage patty with guava caramelized onions and shredded Kerry Gold cheddar cheese on a flavorful biscuit! The flavors go together so well. I added an orange juice from the cooler and I had a delicious meal! They have a small dining area inside and a table and chairs out front. The staff is very friendly and the whole store has a welcoming vibe. They are open Wednesday through Friday from 7 a.m. to 3 p.m. and Saturday and Sunday from 10 a.m. to 2 p.m. Stop by and treat yourself!

Order 1 for a snack or 2-3 (3/12) for a meal. I had the Toasty which was like a grilled cheese with scallions and black sesame seeds. Simply delightful. My friend had the Anko which is filled with a Japanese sweet bean paste. She liked hers as well. You place your order and wait 5 minutes. There were three of us and our fishes came out pronto. When you order you see WAFU ice cream waffle cones. Visually these are beautiful and unusual flavors. They fill the cones with vanilla or matcha ice cream. If I had not been bundled up for a January day I would have taken a licking. Like them on FB for dates and locations.

They are super cute and filling, and I even got to try their Cherry Blossom soft serve made from real cherry blossoms! It was perfect on a sunny day (even though the weather was a little chilly). I highly recommend trying Wafu Taiyaki if they pop up at an event near you!

And the eggs Benedict featured "Canadian Bacon", which is a US marketing term for round slices of bacon, not Back Bacon or Peameal Bacon that is actually served in Canada. Their competitor downtown is better in some ways, BUT Bright Ice has better flavors and more traditional type of flavors. This is an important distinction which makes it stand out on its own. Honestly, I will return for a pint of that Espresso with Kahula. Great addition to the Lakeland scene and I would definitely recommend this.
