A huge fan of this place! Located in Hilldale, it is always busy. Everyone raves about this place and I would have to say, it met all expectations. All of the food I tried was nothing short of delicious. I am generally skeptical about "fusion-style" places, but feel that Bartaco has executed it well. Their lemonade was extremely tasty, light and beautiful. Appetizers: The fried plantains were a perfect combination of savory and sweet. The tacos are quite small, but pretty flavorful. A satisfying dinner would be an appetizer (such as plantains), 3-4 tacos, and a dessert. Tacos I tried: baja fish, chicken pastor, carne asada, crispy rock shrimp, roasted duck, tuna tataco, and cauliflower. Every single taco was unique and tasty. The tuna is a MUST. It was so delicious and full of flavor and the quality of tuna was high; I was pleasantly surprised. My least favorite were the cauliflower and rock shrimp, which were just alright. We tried the gelato flight of four cones and it was a perfect way to end the dinner. The coconut gelato was out of this world. Overall, I LOVE the food here and would definitely not hesitate to take friends here and visitors from out of town. I had to dock a star for convenience. When we came here the first time, we had to wait over an hour. We tried to come back for lunch on another day and it was again, completely jam packed. Expect to wait. In addition, it took over two hours for us to have dinner the first time (though the waiter did say it was exceptionally busy that evening) from sitting to tab, not including wait time. We came back again for lunch on another day but it was going to be at least a thirty minute wait so we did not end up coming back. We have been enjoying Bartaco since they opened.we're there at least once a week. Great food great vibe and service. The food is always fresh ! This is a place you'll never be disappointed. If anything isn't perfect the staff will always make it right. They are doing a great job with providing a safe place to eat in challenging times. You'll feel sage and have fun. Many people are discouraged by the App used for ordering. No worries It's tricky only the first time. but now we love it. Works great and actually provides a great level of service. This is a wonderful environment. Make sure you meet "Gibby" the General Manager. He sets the tone and keeps you coming back. 5 stars isn't enough. Should be 10!!! Cool vibe in Hilldale. If the weather is nice they prop open the place so even the inside people can enjoy a bit of the outside. Large space. What I like about them: their service. No games to play or to find a server to hunt down. They give you a rundown about how it works. Place your order on paper, put it in a holder and let's them know you're ready to order. Place a card and that's letting your server know you need something. Chicken empanada was great! The outside was crispy, definitely different than empanadas I've had in Venezuela, but in a good way. Perfectly salted, great combination of inside flavors. Sauce accompaniment was too limey for my liking but was a good addition for others who may like that. Tacos! Duck: my favorite out of the four. Flavorful, not dry! Chicken chorizo: a close runner up to being first Pork belly: this had a sweet glaze (not my ideal preference for a taco), was wishing for a crispier meat Carne Asada: a disappointment, too salty for me-this was the one I was looking most forward to. I'd rather go elsewhere for carne asada tacos. I probably could've eaten 3 more. They definitely err on the smaller side of tacos. The server recommended ordering between 3-6 tacos a person. I've been held up for months in trying Bartaco and finally had the chance to visit. Located in high end the Hilldale mall comes with certain expectations (that's what the mall says, at least). While several doors exist, the main entrance is in the courtyard that faces other stores sharing the space. The restaurant it self is casual and modern. It has a bit of an outdoor atmosphere. Music complements the atmosphere in lively, laid back, and a bit loud when not enough patrons are in the restaurant. Being seated a table, you will find a container that has menus to fill out your order, a drink menu, several sauces, and a card to ask for service. An additional container is present including silverware, napkins, and chopsticks. The cocktail menu features primarily tequila or mezcal drinks. Rum and bourbon do make an appearance, however. The drinks are quality and deceivingly strong. The ordering scheme is that you fill out a little card, similar to sushi restaurants. I ended up getting 7 distinct tacos. I think putting it all together, all the tacos had excellent flavor with your choice of corn or flour tortilla, or bib lettuce. Several vegetarian options. Textures advertised on the menu are present. Flavors aren't neccessarily traditional mexican and may feature several cultural inspirations.The set back is the fact that many of meat fillers are sitting around and, therefore, sometimes dry. Overall the food is as advertised and as ought to hit the spot of most patrons. Tacos are small overall, and people ought to aim to order 3 to 7. Other than tacos, other dining options include rice bowls, roast chicken, and sides. I did try the corn on the cob. It came piping hot with a whole ear split in two, topped with mayo, cojita cheese, and some combination of lime and chili pepper. The flavor of the corn overall was lackluster and bland. My guess is that they want to try to do something better than traditional elote which results overall in a poor execution of an originally amazing dish. Several dessert options exist. I ended up trying the churros, served freshly fried and dipped in cinnamon and sugar. The churros come with a side with a chocolate dipping sauce. These are simply the best churros in town. D.E.L.I.C.I.O.U.S!! I am beyond impressed with how well this restaurant is functioning after being open just a few weeks. We stopped in on a Monday for lunch, and the restaurant was fairly busy. We were seated right away and got a lovely table surrounded by greenery, cool basket lighting fixtures, and a wall of windows that can open in the summer with nice weather. They offer a paper menu that you check the number of items you would like ordered. All menu items sound fairly customizable to specific food/dietary needs. They have a great selection of vegetarian options and fresh made cocktails. We shared a variety of menu items including a variety of tacos, the beat and goat cheese salad, Street corn, and plantains. We loved everything we ordered! Bartaco also offers a seating/lounge area with fireplace and couches. I've stopped in two additional times to have a drink and chat on the couch. They didn't skip on any detail related to atmosphere. There is a small patio area with heat lamps attached to the ceiling, and garage door style windows are able to be open on a nice summer day. We visited this spot on a Sunday afternoon and pleasantly only had about a 10 min wait for an outside table under a warm heating lamp. We started off with 3 different non-taco dishes, duck quesadilla, corn fritters, and ceviche. The ceviche was very fresh and refreshing! The duck quesadilla was also tasty, the corn fritters were good but not overly memorable. We sampled about every taco I think you can order at Bartaco! There were some hits and some misses. The Baja fish tacos were a little underwhelming without much sauce on the taco. The chicken verde taco was tasty, but slightly dry as a whole. On a better note the pork belly and duck tacos were absolutely delicious and we will be back for those again! Overall this is a great place for a light lunch or dinner! All their tacos are 2-3 bites each, you order everything through the app and it goes right to the kitchen and boom, 5 minutes later you've got smoking hot tacos. They offer many sides, margaritas, plus an assortment or other tropical drinks. All though the experience is through an app, the servers are very very attentive, you can place a black card up on a holder to notify them of any questions or concerns you might have and they'll be right over. I stopped in after a long travel day for a work trip at the Hilldale Madison location and had, as expected, an excellent dinner and cocktails. I was greeted and taken care of by both Dren and Alondra. Both very friendly and attentive. Alondra was really informative and pointed out some great menu options. Dren shared his tequila knowledge with me and we explored a few different tequila options and talked about some other high end, off menu, tequilas that he thought would be of interest to me! Bartaco seems to be doing everything right. The vibe inside is really nice. You can sit in lounge chairs by a stone fireplace, in booths, or at the bar. In the summer, they have quite a bit of outdoor seating as well. The wait staff have generally been good, no complaints but nothing memorably special (apart from one waiter's impressive overuse of the word "awesome" multiple times in every interaction that became a running joke for my whole table.) The manager always makes me feel like he cares about our experience, so that's a plus. Nothing's ever gone wrong, but if it did, he makes me feel like I could bring it up to him and he'd sort it out quickly. Their tacos are, in a word, DELICIOUS. I've had quite a few different ones, and none have really disappointed. However, the real winner of this place, perhaps the best taco in Madison, is the Brussel sprout taco. I barely even like Brussel sprouts, and I dream about this taco. Sometimes when I'm on a budget, I'll just head there and have two of those (they're $2.50 each) and feel satisfied. Their margaritas are also quite good, although that's where you tend to feel the more expensive nature of this restaurant. I like restaurants like Bartaco because they are a bit more pricey, but because individual items are actually priced quite low, you can still get away with less than $10 a person. If I could give 10 stars, I would! I came here with my husband and a friend because Cafe Hollander had an insanely long wait. The staff, SO FRIENDLY! Every single person we came into contact with was super personable, helpful, and fun. We sat outside, and loved the spacious patio. Instead of having servers take your order, you scan the QR code and order everything right from your phone, and then pay on your phone as well! This is especially nice if you have a group that would normally want separate checks. I think this whole system make the server's job so much easier which is probably why the staff was in such a great mood. I really wish more restaurants would adopt this ordering system. Now.. the food. O.M.G. The pork belly tacos were the best tacos I've ever had! I also got a crispy oyster taco, roasted duck taco, and lobster taco (so amazingly buttery,) everything was INCREDIBLE! we came here for lunch one day and we were extremely impressed! I have recently felt in need of something new and this place did it for me. You sit down at your seat and the server kind of explains how things work is you have never been. You pretty much just scan this barcode and then there is all the food items on the menu and you just put everything in your cart and order it. we started with a mojito and a fresh squeezed pomegranate lemonade drink. The drinks were incredible and you could literally see them freshly squeeze the fruit. As for food you get one taco and they are about 3 dollars each which honestly was really nice because you can try various things and share them. For food we got chorizo, ribeye, verde chicken and pork belly tacos and all of these tacos were great and really enjoyable but let me just tell you the pork belly taco was AMAZING! We ordered like 4 more after we tried the first one. we also got elotes and a coconut gelato for dessert which were both very good. There was a variety of things on the menu such as other tacos but also different rice bowls, appetizers, desserts and even a nice kids menu. The atmosphere was also pretty cool you really felt like you were on the coast or beach somewhere. You don't see much of your server but honestly at this restaurant it made sense and worked great. They understand food allergies and provide great service. In fact, they ask all the orders (I overheard from other tables), if there are any food allergies. Really good food but the "efficiencies" at Bartaco amount to bad service. It starts with a "Cash Free Restaurant" (or similar) sign on the door. Clearly they wish to be cash free but enough customers have complained that Bartaco welcomes customers not with a friendly greeting, but Article I of the rulebook. This sign serves as a metaphor for their dehumanizing approach to sit-down dining. Why not take that sign down, perhaps mention somewhere on the menu that card payment is preferred, accept that some customers prefer to pay with cash, and take it? I found this policy especially annoying when I bought a single drink at the bar...where I can't even transfer my tab to the table. I'd much rather hand them ten bucks than do paperwork. Then we entered to find that they took our name by phone but didn't explain that it actually does nothing to get us a table faster once we arrive. What's the point? Next we were told to scan the QR code and submit our order electronically. I prefer to connect and interact with a human to place my order, as did all 4 adults in our group. A member of the staff overheard us talking, and was wonderful about making an exception and taking our orders "traditionally." Then random friendly staff bring the food but have no idea who at the tale ordered it. And the food came at random intervals, creating the awkward situation where someone has their meal and must eat in front of the others or wait while their meal gets cold. One person's first food came a full 10 minutes before the all at our table had been served. That works with shared small plates but not with individual orders. In these times when when so much human connection and interaction are being eliminated from our lives I choose to dine at restaurants that lag behind this trend not lead it. Had such a great experience stopping here for lunch on a Sunday. The place is easy to find, obviously lots of parking in the shopping center, and the whole vibe is very cute and very reminiscent of "beachy California." Definitely not your typical street tacos, though that's what we were told they were styled as. The size is about the same, but that's where the similarities stop--they're more upscale, with non-traditional but delicious ingredients and served on one tortilla instead of two. My favorites were the pork belly, portobello, and the crispy shrimp. All super flavorful and well-cooked. Three was definitely enough to fill me up, but I did split a swordfish one with my partner, and that was also really good! Chips with the salsa trio and guac was worth it if you want something a little extra. The salsas were all really good and different from what's provided on the table. Chips were tostada shells that you break yourself into chips, which is the only place where this loses a star for me; I think something's really lost on not having house-made tortilla chips as far as the experience of being there. Also, nothing was really spicy, so if you're looking for spicy maybe ask for extra jalapenos or something! This place was delicious! Margs were on point, salsas and guac were good. My husband and I tried every taco on the menu (other than cauliflower for allergen reasons) and they were ALL amazing! And yes, every taco, because they are tiny. Service was prompt and friendly. Didn't give the full 5 stars because while everything was incredibly delicious, it was also incredibly EXPENSIVE. $9.75 for a very small glass of margarita. Tacos range from $2.50-$3.50 and are tiny, so you would def need to order 4 or more depending on your appetite. $95 for dinner and drinks for two. Great place. Amazing interior. Nice seating area and trendy bae place. I came in a bit early so didnt have any wait. Remember they don't take reservations before but you can put your name on the wait list of there is one. Now for the food, i tried poke, fritters and a bunch of tacos. They are all good, its a good one time. The highlight of the dinner was Tres Leches. OMG one of the best one i have had. I remember the last time i really really like this was a couple of years ago but this was really good. I would recommend that. read more

The table service with a phone app absolutely RUINES what is an otherwise wonderful dinning experience. The food is delicious. The drinks are so well mixed. I will probably go back but reluctantly. Such a shame. read more
