Fantastic unique cocktail spot in Fresno. This is a relatively small speakeasy-style bar that requires reservations. We went for the live jazz event and it being early on a Thursday night, was not too busy. You can choose reservations for the bar or the lounge area. The bar is fun and seems like it could be lively, plus you get to ask the bartenders about the various experimental drinks they are making. The lounge has a much more laid back and intimate vibe: you're seated on couches/chairs with side tables, candles and reading materials. We sat in the lounge and were quite happy with it. Service was attentive and friendly! They did an excellent job making us feel welcomed and comfortable. You're served an amuse bouche complimentary drink at the beginning; ours was a delicious gin-based bergamot and lily drink that acted as a wonderful palate cleanser. You are encouraged to try the "choose your own adventure" custom drinks; ie you tell the bartender what flavors/spirits/vibes you like and they come up with a custom drink for you. HOWEVER, they also have a physical menu of drinks to choose from if you aren't feeling adventurous. My wife and I both opted for the custom drinks. She requested a gin-fruity drink, and I requested something dark-spirit forward and unique. They arrived with a delicious pink gin martini twist (floral and sweet notes in abundance with a wonderful bitter acidity- amazingly balanced and delicious!) and for me they put together a Japanese-whiskey/aged dark rum with tropical liqueurs and mint leaf/lemon. I wanted something that I've never tried before and they delivered- deliciously! I was impressed that the bartender could come up with such a perfect combination of unique flavors and deliver it flawlessly. 10/10! The drinks take a while to make. I could imagine on a busy night, it would be longer. In my opinion, this is not the place to take shots and get drunk at rapid speed. These drinks are meant to be savored and sipped slowly, and the care and effort that goes into making them more than justifies the cost and time spent waiting. I got no feeling of warmth. There is no menu. Instead, the bartender discusses each person's flavor and spirits likes and dislikes. Interesting idea, but perhaps difficult to practice because that's a lot to remember. This could be why my husband got an old fashioned with scotch in it although he specifically said he didn't care for scotch. I never heard anyone around us going into raptures about their drinks. They may ask a few follow up questions and go from there. For instance. I went with Mezcal as my base, that I also love bourbon and tequila. Bespoke far exceeded my expectations. I really love the menu-less concept, which was a refreshing change from typical bar visits. Often times I would order a cocktail and say "I wish it had more of this, or that", but Bespoke took my preferred tastes into consideration and whipped up combinations just for me, and they really nailed it. The staff here are very talented; I ordered two drinks, each pretty different in flavor profile. For the first order I noted my typical cocktail is a Manhattan, but asked for a peaty Scotch (which I typically drink neat) and with fruity notes. While I missed the full list of ingredients, they included Ardbeg Scotch (an excellent choice), grappa, and apricot. This was an excellent combination that fully encompassed the flavors and notes I requested. The second order I was looking for something lighter, fruity and tropical. It got a bit crowded, so the exchange with the second order was less in-depth but they still nailed it. I received a rum-based cocktail with pineapple and coconut liquors (among other ingredients I missed). If there was any feedback or recommendations I'd like to give to the staff, while they did verbally state what was used, I would love a note of some sort with the ingredients used in my bespoke cocktail. It would certainly help to know what ingredients to look out for in the future and is a nice point of conversation among the group. For those looking to visit, it would definitely help to know what kind of cocktails you already like and what flavors you enjoy. I wouldn't say that's a requirement though; the staff seem to be able and willing to help you out and find the right flavors just for you. I love that downtown Fresno is at the start of a revitalization with high quality establishments such as this one and others nearby. The area has a ways to go, but in terms of location, the northern areas of Fresno feel saturated with investment, and I'm so glad to see downtown getting some much-needed love. As a New York native, I'd say these cocktails are of the caliber one would expect in major world cities. The entrance through the double green doors with the subtle gold Bespoke sign immediately set the tone for an exclusive experience. We sat the by the faux fireplace on a very cozy leather couch. This review is more about the manager (Dawn the manager) and to inform others what to expect when already being in the establishment. By the looks of it and past reviews, I am not the only "complainer". My party of 4 arrived at 3pm for a Holiday Cocktail making class. Once the class was over we moved seats and were informed by the bartender we can order drinks. 2 of us went to the bar area to order but the bartender informed us someone would come to our area to get our order. After waiting several minutes, I then went to the bar and was met by the person who was taking orders. She was aggressive from the start after I informed her we had been waiting. I also highlighted the miscommunication between her and the bartender. She then told me we had to wait 45 minutes because other folks had reservations. Excuse me? I informed her about what the bartender told us yet she dismissed it and followed it by telling me my party of 4 can finish what we have and leave if we don't like it. She made sure to tell me she was the manager so I asked for her name and followed it by spelling out her name for me ... D A W N. At that point my friend tapped my shoulder and requested we just leave. We got our things and headed out the door. As soon as we reached the door (other patrons waiting to get in) Dawn stated to all of them... "Sorry, we had a complainer". At that point I was upset and felt weaponized as she used her interaction with me as a way to "manage" the front door for patrons who were waiting to get in. I let her know I heard her and at that point she said we had too many drinks and we need to leave. Not once did I see this lady during the holiday class yet she assumed we had too many beverages - which then I also informed her she was wrong. The weaponized incompetence and lack of respect as a manager put a bitter taste in my mouth - similar to the drink I could not bear to finish. Although it was a fun experience with my peers, it is an establishment I will not be returning to (realistically not that it would even matter). One and done! read more

Went last night with my husband and two friends on a reservation - it was only their third soft opening night, but it was a wonderful experience. The atmosphere is great - very comfortable, plenty of room to enjoy hanging out with your date or group, cozy/intimate vibes, comfortable seating in the lounge area, and a beautiful bar setup. There is no menu, but instead a "menu" with a wheel that illustrates spirits, infusions, flavors, and flavor profiles to inspire each guest to describe an ideal cocktail, which the skilled bartenders will bring to life. Every drink is custom made (expect it to take a bit more time than at a typical bar, and cost a little more as well - $17-18 per drink). The drinks we ordered were exceptionally tasty, high quality, had fresh inclusions, and were top-notch. The attention to detail throughout the entire place is obvious everywhere from the luxe furniture, to the uniforms of the servers, the well-appointed bathrooms (even the soap smells fantastic - my husband and I both noticed how nice it smelled and commented on it, and there was even a little basket of tampons in the restroom, too, such a kind and thoughtful touch). We loved our experience and look forward to returning soon. My bestie and I decided to catch up for Galentine's at Bespoke and she had already made a reservation beforehand (which you have to do and reservations are for 2 hours per group). Upon entering, you're greeted with a small waiting area and a sign that asks for you to wait to be seated. The greeter was kind and patient as I waited for my bestie after checking in. When she got there, we were taken into the seating areas. My bestie and I took a corner to ourselves. It was perfect! The server gave us waters in a glass, a menu and explained it. She left and brought back some red, palette cleanser drinks which were an interesting taste! After some short time, another girl came and took our drink orders. Not having any particular drinks in mind, we requested in details the type of taste that we wanted in our drinks. For my bestie's first drink, she asked for something sweet and tropical. They came back with a drink that was vodka based and tasted very good! You could barely taste the bitterness of the alcohol. I wanted something citrusy and they gave me an orange margarita with a Tajin rim. My base was tequila and you could definitely taste it more. But it was still delicious! For our second round, my bestie asked for a similar drink to her first but wanted different flavors with a tequila base. Her drink the second time around; you could taste the tequila/alcohol and it was more like a pina colada (with the coconut flavor more apparent). Reservations are required so keep that in mind, however I was able to get a reservation on a Friday night without issue . What truly impressed me was their attention to detail when it comes to cocktails. They go beyond simply providing a menu; instead, they take the time to understand your individual drink preferences, including flavor profiles. I personally expressed my preference for vodka and fruity flavors with a hint of floral, and the bartender skillfully created a sensational gin-based concoction with violet notes that was very yummy. My husband, on the other hand, prefers tequila with citrus and peach flavors. The bartender made a peach margarita that we both loved. Though the drinks are $18 each, the quality and evident care put into each drink makes it worth it, in my opinion. Very limited food options- a few hummus types, nuts, charcuterie.
