On the urging of our son and girlfriend to try this place, my wife and I checked it out. Wow we have been missing out on a great restaurant in our backyard. Upon entering we were showered with greetings from the staff. The place is small but is very warm and cozy and friendly. The food was amazing, flavors were on spot and then some. I love Miso soup and honestly this was the best I have ever had, not sure how they made it as it is a simple item, but it was fantastic. The Katsu was perfect with a light crunchy crust, I hate when you get Katsu and the breading tares your month apart. My wife really liked her sushi, the presentations were top of class which matches the quality of the food. It makes you feel you made a great choice. The service could not reach a better point 10's for the attentive service we had it really made our first time there a great experience. And a side note wow ... Kook Soon Dang Banana Rice Wine (Korean) ... Addicting so complementary with the food. Do not drink the whole bottle yourself have a friend or two it packs a punch!

2nd time here and happy to be back. Everything was fresh and delicious. We are from out of town and coming back to this place for a second time is worth it.

    Sashimi is so fresh

Best sushi in Bethany. Fresh sashimi, friendly waitress. It specializes in fresh sushi rolls, sashimi, bento boxes, teriyaki dishes, tempura, and noodle options, with a strong emphasis on vegetarian selections. The restaurant operates in a compact, cozy space that fosters an intimate dining atmosphere, complete with tablet-based ordering for efficiency and calming background.

Ah! This place was such a delight! Went on a Sunday evening. Not busy at all. You order everything on a tablet at your tables (they have pictures for every item which I loved) best salmon I've had west of Portland!!! Both the server and chef were so friendly too. Very clean place as well. Everything tasted so good. Miso was perfectly balanced as far as flavors goes. Salmon sashimi/nigiri IS A MUST here. Phenomenal. Will be back for more! Also one of the only sushi spots that does sake bombs (if that pikes your interest)

Now that is a chirashi bowl! I dare you to find better on the west side

Bethany Sushi as of October '22 is under new ownership (Jay & Min). So all the previous reviews need to be read with a grain of salt. That being said, I came in with previous experience bias (which was a B) and for now, it's a solid A... I mean wow... The wow factor was sashimi slices served as it was designed to be, not "we gotta cut corners because prices are soaring slices." I get it, every establishment has to find their right balance of lease, staff, and profitability, but for now, Bethany Sushi's new owners have given their dishes lush, thick slices of fish with great variety. The chirashi bowl had escolar and ikura! Impressive. The volcano roll had healthy amounts of scallops, the Washington roll super tasty and cleverly presented. The bento box also came with a nice sesame dressing, with toasted sesame seeds... a nice touch. Ambiance hasn't changed much, they shuffled some tables around and I feel like buying jeans in a Gap store with the jazz music but it's totally normal. And some of the servers suspiciously know Japanese but they don't look like they do, a fun factoid. As of Nov'22, come and be surprised.

"Philadelphia roll" that contains krab, where on their menu, it does not list krab.

The owner is a (I think) a Japanese fellow and I believe everyone who works here is family. There's often a young girl at the counter who I suppose is his grand daughter. She is very sweet and very bubbly. You walk in and get a big smile and an enthusiastic hello. I only go now an then but she treats me like I am a regular she sees every day. I go up to the counter and she knows what I order... always chicken teriyaki. I don't have to say a thing. She rings me up and a few minutes later I have a hot, tasty meal in front of me. There are a few "rice bowl" type businesses in Cedar Mill and they are all good. But Kokos is the best! I'd encourage my fellow Yelpers to check them out if they haven't already. The prices are very fair especially for what you get. A filling, tasty, healthy meal. I don't know if they do this for everyone but the owner is always there and sometimes works the counter. He gives me the veterans discount which knocks a little off the usual, already low price. Plus I get double the meat so now it's a very inexpensive lunch in a container that is just packed with food. Hence the reason for this review refresh. I don't think they make much of a profit and being in the mall I'm sure their overhead is high. The folks there work very hard and likely don't get paid much. Dunno if they are native Americans or immigrants but they are living the American dream. I'm sure one day all that hard work will pay off and they will be very successful. But given how nice they are to me I'm sure they lose money every time I show up for lunch. So I very much appreciate their kindness and generosity. They don't make much money but they generate a lot of goodwill.... wanted to pay it forward in some small way by posting this glowing and well deserved five star review. I hope Kokos will be here for a long time. It's one of the few restaurants I can still afford to patronize. A nice meal that someone else cooks for me has become a rare treat in my life. So THANKS!

If you visit you will find a very large selection of sweet and savory single-serving rolls-treats, sandwiches, and drinks. And they have thin- or thick-sliced loaves of Japanese white bread. It is very popular with families, eat-in, and takeaway. Families love to allow wide-eyed children to pick among options. They have a hygienic system of clean tongs and trays for your selection. The takeaway goes in nice boxes, honoring the tradition of Japanese packaging. I would have to say, I am still trying to figure out how to use Japanese loaf bread, in contrast to Italian or French bread. I grew up in a family of whole wheat bread. When I toast the thin-sliced Japanese bread, the inside is not done. So I'm experimenting with a short microwave after toasting. I'm also looking at what to put on Japanese bread toast. A Ramen Masterclass in Beaverton! If you are looking for…read morethat perfect, soul-warming bowl of noodles, Koku Ramen & Bites in Beaverton is an absolute gem. It's located in the Timberland Town Center and manages to perfectly balance a modern, trendy vibe with authentic, traditional flavors. Here is why it's a 5-star standout for me: The Broth (The Soul of the Bowl): I ordered the Tonkotsu Ramen, and the broth was incredible--creamy, rich, and clearly simmered for hours. It has that deep, milky consistency that only comes from true craft. If you like heat, the Spicy Miso has a perfect, layered kick that doesn't just overpower your taste buds. The Noodles: They get the texture exactly right. You can choose your firmness, and they have that perfect "chew" that holds onto the broth beautifully. The "Bites": True to their name, the appetizers (bites) are not to be skipped. The Pork Gyoza are perfectly seared, but the Karaage (Japanese Fried Chicken) is the real winner--juicy on the inside and impossibly crunchy on the outside. The Chashu: The braised pork belly is melt-in-your-mouth tender. They give it a quick torch sear before serving, which adds a beautiful smoky aroma to the whole bowl. The Vibe: The restaurant is clean, sleek, and has a great energy. The staff is welcoming and incredibly fast, making it a perfect spot for a quick lunch or a cozy dinner. Pro Tip: Don't forget to add a Marinated Soft-Boiled Egg (Ajitama). They cook them to perfection here with that jammy, custard-like yolk that takes the ramen to the next level. Beaverton has a lot of food options, but Koku is easily at the top of my list for comfort food. I'll be back again and again!
