    the interior of a restaurant

On the urging of our son and girlfriend to try this place, my wife and I checked it out. Wow we have been missing out on a great restaurant in our backyard. Upon entering we were showered with greetings from the staff. The place is small but is very warm and cozy and friendly. The food was amazing, flavors were on spot and then some. I love Miso soup and honestly this was the best I have ever had, not sure how they made it as it is a simple item, but it was fantastic. The Katsu was perfect with a light crunchy crust, I hate when you get Katsu and the breading tares your month apart. My wife really liked her sushi, the presentations were top of class which matches the quality of the food. It makes you feel you made a great choice. The service could not reach a better point 10's for the attentive service we had it really made our first time there a great experience. And a side note wow ... Kook Soon Dang Banana Rice Wine (Korean) ... Addicting so complementary with the food. Do not drink the whole bottle yourself have a friend or two it packs a punch!

Ah! This place was such a delight! Went on a Sunday evening. Not busy at all. You order everything on a tablet at your tables (they have pictures for every item which I loved) best salmon I've had west of Portland!!! Both the server and chef were so friendly too. Very clean place as well. Everything tasted so good. Miso was perfectly balanced as far as flavors goes. Salmon sashimi/nigiri IS A MUST here. Phenomenal. Will be back for more! Also one of the only sushi spots that does sake bombs (if that pikes your interest)

2nd time here and happy to be back. Everything was fresh and delicious. We are from out of town and coming back to this place for a second time is worth it.

    Sashimi is so fresh

Best sushi in Bethany. Fresh sashimi, friendly waitress. It specializes in fresh sushi rolls, sashimi, bento boxes, teriyaki dishes, tempura, and noodle options, with a strong emphasis on vegetarian selections. The restaurant operates in a compact, cozy space that fosters an intimate dining atmosphere, complete with tablet-based ordering for efficiency and calming background.

Now that is a chirashi bowl! I dare you to find better on the west side

Bethany Sushi as of October '22 is under new ownership (Jay & Min). So all the previous reviews need to be read with a grain of salt. That being said, I came in with previous experience bias (which was a B) and for now, it's a solid A... I mean wow... The wow factor was sashimi slices served as it was designed to be, not "we gotta cut corners because prices are soaring slices." I get it, every establishment has to find their right balance of lease, staff, and profitability, but for now, Bethany Sushi's new owners have given their dishes lush, thick slices of fish with great variety. The chirashi bowl had escolar and ikura! Impressive. The volcano roll had healthy amounts of scallops, the Washington roll super tasty and cleverly presented. The bento box also came with a nice sesame dressing, with toasted sesame seeds... a nice touch. Ambiance hasn't changed much, they shuffled some tables around and I feel like buying jeans in a Gap store with the jazz music but it's totally normal. And some of the servers suspiciously know Japanese but they don't look like they do, a fun factoid. As of Nov'22, come and be surprised.

I thought they were going to be fillers but they tasted great and actually put new fish I've never had before on the map for me! Some of my favorites were - kanpachi - kome buri - ama ebi - salmon (I liked it more than the king salmon, maybe I have peasant taste) - toro The omakase was well thought out as you can see and we even enjoyed the miso soup. I think the price tag of $100/person can initially be steep but you can easily spend this much on these nicer orders. I was also worried they might drop the quality during the AYCE portion but it continued to be delicious and service was consistent throughout (there was another group of 13 people so service was a bit slow having to divide time between the rest of the restaurant and them). I highly recommend this place and will for sure come back. Some delicious quality fish and my new favorite if I'm coming hungry!

If you're not downtown, they also have a smaller location on the east side! To start I got the takoyaki, or fried octopus balls. It was crispy on the outside, light and fluffy on the inside, with a tender and chewy piece of octopus, topped with a sweet sauce and fish flakes. Yum!! For my main, I wanted to try one of their broth-less udons and chose one of the specials, the Mentaiko kama-tama Udon--house-made flat udon noodles tossed in and onion oil, bonito, and soy dashi sauce. The noodles are topped with Men-taiko (spicy Tarako caviar), soft egg, tobiko, tempura puffs, green onions, and nori. I also added ikura (as recommended). I've never had flat udon noodles or broth-less udon but I'm forever changed. The minimal broth allows the toppings to be the stars of the show, and here was no exception. The flavors were complex, but balanced, and the variety of textures kept me coming back for another bite. The soy dashi sauce was full of umami and a subtle spicy kick, the fish eggs added pops of saltiness, and the tempura puffs and green onions added some crunch and offset the richness from the other toppings. The house-made noodles also made a huge difference, they were chewy but tender, and soaked up the soy dashi perfectly. I could not recommend Shigezo Izakaya enough!

Generous meat portion and it's cooked well. The broths were piping hot and flavorful too. We also tried the Fried Squid Legs and Tsukune. Again, both were delicious and made fresh. Im taking 5 PCs of otoro sashimi for $25?! Speechless! We outdid ourselves and ordered like 3 rounds of sushi for the three of us and bill came out to $200 ish with drinks! Really easy to do since they had such an extensive menu with just about everything from appetizers, tapas sashimi, hand rolls, nigiri, fried items, sushi ROLLS, ramen/noodles, and skewers! Highlights were definitely the: -otoro (5 pcs ~$25) -salmon medley (salmon belly and 3 other cuts) -scallop nigiri -karaage (5 pcs for $8.99) *pro tip to add their house negi sauce $1 or spicy mayo $0.50 -agedashi tofu (fried tofu) -wagyu beef skewer $8.50 -citrus YTG roll ($15) so refreshing with hamachi (yellowtail), tempura flakes, and a house jalapeño ponzu sauce ! I might try for the Alaskan roll next time considering it was hard to identify the scallops in the baked roll but still kinda tasty if you're into the warm baked rolls! I was unfortunately really wanting to taste the scallops! Overall we had a great time! Service was nice and attentive! The drinks were really affordable and generous too! But that's not why I'm posting this review. Thanks to my wife flagging down a perfectly delightful replacement waiter to order from, we were spared an evening of enduring what may have been a bottom five waiter for me. Before she did, we were confronted with a so-very-cool waiter who stood next to our polite, engaged party of six throwing aloof 'I can't be bothered' vibes, without so much as making eye contact with ANY of us (no exaggeration). To the owners of Hachi; this hire was a mistake. Some people simply aren't cut out for the service industry, and this guy was exactly wrong for the job. My suggestion is let him go or maybe change the name of the restaurant to 'Sushi and Attitude.' Having him on staff can only tell guests you don't give a damn about them enjoying their experience in your place.

Momoyama definitely delivers in the flavor department. What I was struck by was not just the freshness of the fish, nor the expert cuts...but the diversity of flavors. Perfect example - the King salmon with truffle knocked my socks off. I am not really a fan of salmon. I find its raw texture to often be a little soft to my taste and the funk of the omega 3s in quality salmon is just... not my bag. The truffle completely transformed the experience for me. I was not prepared for how well the earthy notes of the truffle complimented the King salmon. It made the sushi something to be savored without any of the traditional off-putting (to me) fishy funkiness. Highly recommended. Similarly, the octopus Sunomono was perfectly prepared. Often, octopus can be chewy. Not in this case. Additionally, the sauces and the salad greens complimented the dish and elevated it from traditional "sushi tastes." The bracing acidity made me want to eat more and was a delightful preamble for the rest of the meal. Service was prompt, friendly, and accommodating. We had a large group of eight and they were dutiful in informing us they had included gratuity in the bill so as to avoid double tipping. This small courtesy was not wasted on us. Service was always readily accessible without being intrusive. Orders were executed without defect and questions were answered pleasantly and with expertise. The restaurant has a pleasant and serene serving space. The bracing refrain of the "Irashai!" Greeting was a welcome touch that made me smile. Overall highly recommended. The prices were quite excellent given the quality of food and I would not hesitate a second visit. Sushi well, my friends.

Maybe the idea is to help with any language barrier -- the server spoke fluent English, while often the sushi chefs do not -- but we found him way too attentive. We sat at the bar so we could interact with the sushi chefs. We did talk with a chef, but his advice wasn't very specific. So...despite plenty of suggestions from the server, and some advice from the chef, and a long time perusing and discussing the extensive menu, we still weren't sure what to order. We finally went with a combo and were disappointed to see it served in a boat! That just seemed like a gimmicky, touristy thing, we would have preferred a plate. The fish actually was very good, and so were the salads. A shrimp nigiri was the only misstep, as the shrimp was overcooked. I guess I would return to this place -- hopefully on that server's day off! And make sure my order is not coming on a little boat. And skip the shrimp.
