When I bit into the squid it was chewy, springy, and meaty. It's amazing to me how they managed to make the pancake crunchy despite filling it with so many ingredients. The kimchi and radish were super flavorful and not too spicy! Kimchi was sooo good. Even though the side dishes were limited, I enjoyed the freshness and taste. I also tried the samgyetang (Korean chicken soup) and bibim naengmyeon (spicy cold noodles) for the first time. The samgyetang was light and hearty. The broth could have been a bit sweeter. The food here is probably some of the best Korean food I've had in the greater Seattle area. I can think of maybe one other place that I would put on the same level as here. While I would argue that this is on the pricier end, I think the food quality really makes up for it. The kimchi made in-house is fantastic, and I've actually purchased some outside of the meal to take home to snack on later. I like the kimchi pancake and my go-to bibimbap is fresh and filling.
